SUMMARY The aim of this study was to evaluate the effect of subcutaneous fat thickness (SFT) on slaughter in lambs ½ Dorper + ½ Santa Inês (DSI) on performance, carcass characteristics and commercial cuts. It was used twenty-four lambs, slaughtered with 2mm, 3mm and 4mm SFT. There was an effect of SFT on performance: for days of confinement (2mm = 51.38, 3mm = 66.50, 4mm = 91.63 days), age at slaughter (2mm = 139.38, 3mm = 159.88, 4mm = 171.00 days), final body weight (2mm = 33.50, 3mm = 42.81, 4mm = 46.19 kg), total weight gain (2mm = 18.75, 3mm = 25.08, 4mm = (2mm = 0.44, 3mm = 0.39, 4mm = 0.28kg), slaughter weight (2mm = 32.76, 3mm = 39.79, 4mm = 44.88 kg), body condition score (2mm = 2.97, 3mm = 3.13, 4mm = 3.56); for carcass characteristics: warm carcass weight (2mm = 15.33, 3mm = 19.16, 4mm = 21.90 kg) and cold (2mm = 15.03, 3mm = 18.75, 4mm = 21.47), cooling losses (2mm = 0.00234; 3mm = 0.00333; 4mm = 0.00201 kg), carcass yields: in the refrigerator (2mm=46,79; 3mm=48,30; 4mm=48,79%); commercial (2mm = 45.88, 3mm = 47.25, 4mm = 47.82%) and true (2mm = 52.93, 3mm = 54.51, 4mm = 55.67%); carcass compactness index (2mm= 0,250; 3mm=0,30; 4mm=0,33 kg/cm) for cut weights; neck (2mm=0,44; 3mm=0,55; 4mm=0,56 kg); palette (2mm=1,38; 3mm=1,61; 4mm=2,14 kg), flank steak (2mm=2,16; 3mm=2,73; 4mm=3,19 kg), loin (2mm=0,93; 3mm=1,14; 4mm=1,25 kg), and leg (2mm=2,68; 3mm=3,20, 4mm=3,76 kg). For the tissue composition of only the muscular cuts of the neck (2mm = 50.24, 3mm = 51.44, 4mm = 55.34%), bone of the neck (2mm = 30.24, 3mm = 29.63, 4mm = 25.91%), of the loin (2mm=15,05; 3mm=24,63; 4mm=24,71%) and the leg (2mm=11,38; 3mm=13,33; 4mm=13,13%), they presented differences between the SFT (p> 0.05). It is recommended to slaughter lambs ½ Dorper + ½ Santa Inês with 3mm of SFT.

Five pre-slaughter measurement values and four post-slaughter measurement values were used to estimate the weight of fat in the omental (OM), mesenteric (MES), perirenal (PR), subcutaneous (SC), and intermuscular (IM) fat depots in goats. The pre-slaughter measurements were: live weight (LW), sternal body condition score (BCSs), lumbar body condition score (BCSl), sternal fat thickness (FTs) and lumbar fat thickness (FTl) measured by ultrasound. The post-slaughter measurements were empty live weight (ELW), hot carcass weight (HCW), adipocyte diameter in the sternal subcutaneous fat (ADSCs) and adipocyte diameter in the lumbar subcutaneous fat (ADSCl). Linear and multiple regressions were fit to data collected from 22 adult, non-pregnant and non-lactating Blanca Celtibérica does. The results obtained showed BCSs, ranging from 1.5 to 4.5 (scale: 0-5) to be the best pre-slaughter estimator of an animal's total fat (R2 = 0.90, RSD = 2.252 kg) and HCW to be the best post-slaughter estimator (R2 = 0.92, RSD = 1.972 kg). Additionally, multiple regression using HCW and ADSCl together yielded estimates of the total amount of fat in all five of the depots considered here with an R2 = 0.95 and an RSD = 1.542 kg. Therefore, the use in vivo of BCSs is the best method for predicting nutritional status in does in extensive production systems in the Mediterranean region.Key words: Fat reserve, body weight, carcass weight, body condition score, ultrasound, adipocyte, goat

AbstractObesity is a growing problem in dogs. Therefore, there is an increasing need of foods for obese dogs with high-fibre content to dilute energies and to reduce energy absorption. Soya hulls are cheap and are widely available as a fibre source. We aimed at evaluating the body condition of dogs fed diets containing 0 % soya hulls (0SH) or 16 % soya hulls (16SH) in replacement of maize. Twelve adult dogs, with 11·3 (se1·6) kg average body weight (BW), 4·1 (se0·1) years old and body condition score (BCS) between 4 and 7, were completely randomised assigned (six per treatment) and were fed the 0SH diet according to their maintenance energy requirements or the same amount in grams (g/kg BW0·75) of the 16SH diet once daily for 56 d. The animals were evaluated on days 0 and 57 for BW, BCS (1, very thin to 9, obese), subcutaneous fat thickness in the L7 vertebra using ultrasound (L7), canine BMI (CBMI) and body fat (BF). Data were analysed by the Student'sttest and Kruskal–Wallis test (P < 0·05). The change (final – initial) in BW (−0·58v.−0·49 kg), BCS (−1v.−1), L7 (−2v.0·35 mm), CBMI (−0·85v.−0·63 kg/m2) and BF (−5·0v.−5·4 %) of dogs fed the 0SH and 16SH diets, respectively, were not different (P > 0·05). The 16SH diet, with 11·4 % restriction in metabolisable energy, did not change the BCS of adult dogs. Further studies evaluating the supply of soya hulls only to overweight/obese dogs should to be carried out, because these dogs may respond differently than the group evaluated, which had a BCS between 4 and 7 (ideal to overweight).

ABSTRACTA number of possible indices of body composition (live weight, skeletal size, total body water as estimated by deuterium oxide dilution, blood and red cell volumes as estimated by Evans Blue dilution, ultrasonic measurements of subcutaneous fat depth and eye-muscle area, and body condition scoring) was examined using 73 non-pregnant, non-lactating, mature cows of Hereford × Friesian, Blue-Grey, British Friesian, Galloway and Luing genotypes, ranging in body condition score from 0·75 to 4·5. Direct measurements of body composition in terms of water, fat, protein and ash were made following slaughter.Live weight, deuterium oxide dilution, ultrasonic measurements of subcutaneous fat depth and eyemuscle area, and body condition score were all considered to be potentially useful predictors of body composition. Combinations of techniques offered better predictions than did any single index. Using a combination of measurements it was possible to predict body fat and protein with a residual s.d. of 13·1 kg and 3·15 kg respectively. Breed differences in the partition of fat among the main adipose tissue depots necessitated the development of specific prediction equations for body fat based on condition score and subcutaneous fat depth for different breeds. Equations remain to be developed for predicting body composition in cows in different physiological states.

Abstract This study was conducted with the objective of evaluating the performance, carcass and meat characteristics of castrated and intact Dorper male lambs slaughtered at three different body condition scores. Thirty-five lambs, approximately 3 months old, 21.6 ± 4.0 kg of body weight and 3.1 ± 0.5 of body condition score (BCS), were used. The BCS scale used varied from 1.0 (very thin) to 5.0 (very fat). Four weeks prior to the experiment, 17 lambs were castrated. Lambs were further divided into three groups, according to the criteria for slaughter: BCS of 3.5, 4.0 and 4.5. All animals received the same diet. BCS were achieved after 27, 84 and 130 days in feedlot, respectively. There were no interactions (P > 0.05) between sexual conditions and slaughter criteria. Average daily gain of weight (ADG) was different (P < 0.05) for the three BCS (average of 0.263). However, final body weight (28.6 ± 1.7; 42.7 ± 1.8 and 56.8 ± 1.7 kg) and back fat thickness (0.5 ± 0.5; 4.2 ± 0.5 and 7.3 ± 0.5 mm) were different (P < 0.05) among BCS criteria, panelists found that meats from lambs slaughtered with greater fat content were less (P < 0.05) desirable. We can conclude by the performance and meat results that it is better to slaughter Dorper lambs with BCS with no more than 4.0, or 4.2 mm of back fat cover, and for the best acceptability of the meat the lambs should be castrated.
