Pressure points in global food supply where resilience in supply chains can be limited or controlled are the equivalent of Critical Control Points in food safety systems. The approach of using critical control in supply chains can provide insights for nutritional improvement, sustainable food trade and food waste reduction. The pressure points determine the provision of a secure and sustainable food system where the outcomes of reducing their criticality are identified in the UN Sustainable Development Goals and other international programmes. These seek to reduce climate change impact and improve public health provision. While policy makers are rightly focussed on these targets, the data analysis methods required to rank and associate resource flow pressure points with commercial food supply chains and nutritional goals remain untested. Here, we show how methodologies can identify where opportunities to tackle future criticality exist, and where they are currently being overlooked for food categories that have the greatest consumer and dietary protein demand. The analysis provides insights that identify where latent restrictions in resilience can occur, so that the future risk of food insecurity is reduced.

This paper reviews the opportunities available for food businesses to encourage consumers to eat healthier and more nutritious diets, to invest in more sustainable manufacturing and distribution systems and to develop procurement systems based on more sustainable forms of agriculture. The important factors in developing more sustainable supply chains are identified as the type of supply chain involved and the individual business attitude to extending responsibility for product quality into social and environmental performance within their own supply chains. Interpersonal trust and working to standards are both important to build more sustainable local and many conserved food supply chains, but inadequate to transform mainstream agriculture and raw material supplies to the manufactured and commodity food markets. Cooperation among food manufacturers, retailers, NGOs, governmental and farmers’ organizations is vital in order to raise standards for some supply chains and to enable farmers to adopt more sustainable agricultural practices.

The scientific examination of short food supply chains is justified by consumer interest and their role in the European Unions’ subsidy policy and rural development. In our current article, we present the results of a consumer survey of more than a thousand people from Hungary. It was conducted in the North Hungarian (rural) region. Our research goals were: (1) To access consumer demand for short food supply chains and to determine the characteristics of consumers who prefer local foods; and (2) to examine the role of short food supply chains in rural development by a territorial comparison. The results showed that consumers’ willingness to pay a theoretical premium for local products was high (averagely +20.7%). Compared to that, we considered their monthly purchased quantity low. We found a statistically valid, yet weak, correlation that on a monthly basis, the purchase of local products was more significant for consumers from smaller settlements and villages than those from (greater) cities. Furthermore, there were factors in some consumers’ preferences that indicated a greater interest for small producers’ goods. Although it was not possible to assess the absolute demand of the studied rural area, these results (at a certain level) confirm the potential of short food chains in rural development.

Short food supply chains (SFSCs) are increasingly garnering attention in food systems research, owing to their rising popularity among consumers, producers and policy-makers in the last few decades. Written with the aim to identify research gaps for the Horizon Europe research and innovation programme, this literature review provides a state of play of the definition and characterisation of SFSCs, and of their sustainability. Drawing on hypotheses about SFSC sustainability elaborated in an expert network in France, this review summarises a wide range of papers from various disciplines in the SFSC literature, written in English or French, while specifically highlighting the empirical results derived from European projects. Though the literature tends to generally agree on the social benefits of SFSCs, their economic and environmental impacts typically elicit more heterogeneous outcomes, while their health/nutrition and governance dimensions remain under-explored. Based on this review, recommendations for a future research and innovation programme are outlined, addressing the contribution of SFSCs to agrifood system transition and resilience in the current context of the Covid-19 crisis and of the Green New Deal objectives.

Purpose – The purpose of this paper is to assess the sustainable food procurement (SFP) of members of the British and Irish Association of Zoos and Aquariums (BIAZA). It also considered the inconsistencies between their animal and human food supply chains, as well as between their procurement priorities and practices. Design/methodology/approach – A quantitative, cross-sectional approach was employed, involving the use of a web-based questionnaire to gather data from 41 BIAZA members across 21 indicators of food sustainability. The results were considered within a sustainable supply chain management (SSCM) framework. Findings – There was considerable variation amongst the issues considered by zoos during the SFP process for their animal and human food operations. For both, local expenditure, nutritional content and packaging reduction were some of the highest scoring indicators in practice and as priorities. The overall levels of SFP were found to be equal between the human and animal food supply chains. Significantly low levels of inconsistency were found between the two, practically and in terms of procurement aspirations. Within both supply chains, there was also very few significant gaps between procurement priorities and actions. Originality/value – The originality of this study lies in its comparison of procurement practices and priorities for two contemporaneous but distinct food supply chains. It demonstrates that it is possible to have a high overall degree of consistency between two parallel, but contrasting, supply chains, as well as between procurement priorities and priorities. It will be of use in SSCM, particularly within values-led organisations.

Alongside the development of the circular economy and sustainable food supply chains (FSCs), research on food loss and waste (FLW) reduction and prevention has drawn much attention from academia, practitioners, and governments. The significance of FLW has been highlighted in the literature due to its impact on society, economy, and the environment. We propose a conceptual framework to systematically examine FLW issues within FSCs in the field of operations management (OM). We discuss various types and distribution modes of FSCs where FLW occurs, definitions of FLW, the impacts of FLW, and measures to reduce FLW in the OM field. We further introduce the methodologies that have been applied in existing FLW studies. The contribution of this paper is threefold. First, it proposes a conceptual framework to identify FLW problems within FSCs. Second, it helps to comprehensively understand FLW occurrence and thus stimulate research focusing on FLW from different perspectives. Third, it motivates researchers to discuss FLW issues by applying different methodologies.
