Differences in cooked rice and starch and protein physicochemical properties of three japonica rice were compared systematically. Cultivars of japonica rice, Daohuaxiang2, from Northeast China (NR) and two semiglutinous japonica rice (SGJR), Nangeng46 and Nangeng2728, from the Yangtze River Delta (YRD) were investigated. Both Daohuaxiang2 and Nangeng46 achieved high taste values, but there were great differences in starch and protein physicochemical properties. Daohuaxiang2 showed higher apparent amylose content (AAC), lower protein content (PC), and longer amylopectin (especially fb2 and fb3) and amylose chain lengths, resulting in thicker starch lamellae and larger starch granule size. Its cooked rice absorbed more water and expanded to larger sizes. All of these differences created a more compact gel network and harder but more elastic cooked rice for Daohuaxiang2. Nangeng46 produced a lower AAC, a higher PC, shorter amylopectin and amylose chain lengths, thinner starch lamellae, and smaller starch granule sizes, creating a looser gel network and softer cooked rice. The two SGJR, Nangeng46 and Nangeng2728, had similar low AACs but great differences in taste values. The better-tasting Nangeng46 had a lower PC (especially glutelin content) and higher proportion of amylopectin fa chains, which likely reduced the hardness, improved the appearance, and increased the adhesiveness of its cooked rice. Overall, both types of japonica rice from the NR and YRD could potentially have good eating qualities where Nangeng46’s cooked rice was comparable to that of Daohuaxiang2 because of its lower AC. Moreover, its lower PC and higher proportion of amylopectin fa chains likely improved its eating quality over the inferior-tasting SGJR, Nangeng2728. This research lays a foundation for the improvement of the taste of japonica rice in rice breeding.

Potentially toxic elements (PTEs) pollution in the agricultural soil of China, especially in developed regions such as the Yangtze River Delta (YRD) in eastern China, has received increasing attention. However, there are few studies on the long-term assessment of soil pollution by PTEs over large regions. Therefore, in this study, a meta-analysis was conducted to evaluate the current state and temporal trend of PTEs pollution in the agricultural land of the Yangtze River Delta. Based on a review of 118 studies published between 1993 and 2020, the average concentrations of Cd, Hg, As, Pb, Cr, Cu, Zn, and Ni were found to be 0.25 mg kg−1, 0.14 mg kg−1, 8.14 mg kg−1, 32.32 mg kg−1, 68.84 mg kg−1, 32.58 mg kg−1, 92.35 mg kg−1, and 29.30 mg kg−1, respectively. Among these elements, only Cd and Hg showed significant accumulation compared with their background values. The eastern Yangtze River Delta showed a relatively high ecological risk due to intensive industrial activities. The contents of Cd, Pb, and Zn in soil showed an increasing trend from 1993 to 2000 and then showed a decreasing trend. The results obtained from this study will provide guidance for the prevention and control of soil pollution in the Yangtze River Delta.

In recent years, the impact of land-use systems on global climate change has become increasingly significant, and land-use change has become a hot issue of concern to academics, both within China and abroad. Urbanization, as an important socioeconomic factor, plays a vital role in promoting land-use transition, which also shows a significant spatial dependence on urbanization. This paper constructs a theoretical framework for the interaction relationship between urbanization and land-use transition, taking the Yangtze River Delta as an example, and measures the level of urbanization from the perspective of population urbanization, economic urbanization and social urbanization, while also evaluating the level of land-use morphologies from the perspective of dominant and recessive morphologies of land-use. We construct a PVAR model and coupled coordination model based on the calculated indexes for empirical analysis. The results show that the relationship between urbanization and land-use transition is not a simple linear relationship, but tends to be complex with the process of urbanization, and reasonable urbanization and land-use morphologies will promote further benign coupling in the system. By analyzing the interaction relationship between urbanization and land-use transition, this study enriches the study of land-use change and provides new pathways for thinking about how to promote high-quality urbanization.

The extensive exposure to multiple mycotoxins has been demonstrated in many countries; however, realistic assessments of the risks related to cumulative exposure are limited. This biomonitoring study was conducted to investigate exposure to 23 mycotoxins/metabolites and their determinants in 227 adults (aged 20–88 years) in the Yangtze River Delta, China. Eight mycotoxins were detected in 110 urine samples, and multiple mycotoxins co-occurred in 51/227 (22.47%) of urine samples, with deoxynivalenol (DON), fumonisin B1 (FB1), and zearalenone (ZEN) being the most frequently occurring. For single mycotoxin risk assessment, FB1, ZEN, aflatoxin B1 (AFB1), and ochratoxin A (OTA) all showed potential adverse effects. However, for the 12 samples containing DON and ZEN, in which none had a hazard risk, the combination of both mycotoxins in two samples was considered to pose potential endocrine disrupting risks to humans by hazard index (HI) method. The combined margin of exposure (MOET) for AFB1 and FB1 could constitute a potential health concern, and AFB1 was the main contributor. Our approach provides a blueprint for evaluating the cumulative risks related to different types of mycotoxins and opens a new horizon for the accurate interpretation of epidemiological health outcomes related to multi-mycotoxin exposure.
