Selenium and iodine are essential micronutrients for humans. They are often deficient in food supply due to low phytoavailable concentrations in soil. Agronomic biofortification of food crops is one approach to overcome micronutrient malnutrition. This study focused on a pre-launch exploration of German consumers’ willingness to purchase selenium- and/or iodine-biofortified apples. For this purpose, an online survey was carried out. In this context, consumers were asked to choose their most preferred apple product from a set card of product alternatives in a discrete choice experiment (DCE). The multinomial logit model results demonstrated that German consumers’ have a particular preference for iodine-biofortified apples. Furthermore, apple choice was mainly influenced by price, health claims, and plastic-free packaging material. Viewed individually, selenium did not exert an effect on product choice whereas positive interactions between both micronutrients exist.

This article focuses on discrete choice analysis (DCA), which offers an effective approach for incorporating customer preferences into operating decisions in hospitality businesses. First the theoretical background of DCA is presented, including a discussion of how DCA compares to conjoint analysis. The authors then present a guide to designing and conducting a DCA study. Conducting a discrete choice study involves identifying the attributes relevant to customers'choices and the appropriate levels of these attributes, designing an experiment, collecting data and estimating parameters using a multinomial logit model. Finally, the strategic implications of DCA in hospitality management research are discussed.

Discrete choice methodologies are increasingly being used to estimate multiple-sites recreational demands and evaluate the welfare effects of alternative environmental policies aimed at water quality improvements. In this study the authors use 1985 data on Indiana anglers to estimate a multinomial logit model of destination choice and compute the benefits of alternative water quality improvements. In general, the results indicate that anglers are reasonably sensitive to changes in water quality. The per-trip welfare gains from a 1% reduction in various pollutants range from 4.9 to 25.3 cents and a similar reduction in all pollutants increases per-trip welfare by 64.5 cents.

Hostels have become a very popular form of accommodation and their varieties have grown steadily in recent years. To ensure the sustainability of this business model, it is necessary to understand the main drivers influencing travelers to choose a hostel accommodation. For this purpose, we conducted an online survey using convenience sampling and purposive sampling techniques. Respondents' preferences to six hostel attributes (cleanliness, location, staff, atmosphere, facilities, and cancellation policy) were determined using discrete choice analysis. Sample results showed that the most important attributes are cleanliness and location, while the atmosphere is the least important one. However, widespread heterogeneity in preferences was observed, and cluster analyzes identified three distinct groups of travelers: “cleanliness sticklers”, “location demanders” and “party seekers”. Facilities and atmosphere were found to be very important attributes for particular clusters. These findings can help design a marketing strategy for each of the identified segments to ensure sustainable business. Finally, we have proposed a new approach to calculating the hostel overall rating based on attribute importance, which shows much better discriminatory power compared to the traditional average-based approach.

The increasing request for food sustainability is affecting the pasta sector in Italy. This phenomenon introduces different sources of uncertainties that, in turn, put pressure on all the stages of the supply chain, with a consequent emerging need for a higher level of coordination. Based on the Transaction Costs Theory approach, the paper is aimed at verifying whether contract design—revolving around the negotiation of contractual attributes with different functions in terms of safeguard, adaptability, and coordination—plays a crucial role in aligning sources of uncertainty surrounding transactions with the allocation of property and decision rights. To this aim, a sample of durum wheat producers is interviewed for expressing their preferences about some contractual features, such as price, production and quality rules, sustainable environmental techniques, and advisory services. Using a discrete choice analysis through a multinomial logit model, results reveal that, thanks to the presence of attributes able to ensure coordination and adaptability, contracts are able to steer towards elements of sustainability related to food quality and safety, whereas further efforts are needed to share environmental goals with farmers.

<p>Previous studies examined additional willingness to pay for socially responsible primary goods. However, technical products have not been considered. Therefore, the purpose of this study is to estimate additional willingness to pay for socially responsible technical products. Within an overview of given methods for measuring willingness to pay, the discrete choice analysis was applied to this study. As technical products, computer mice were chosen exemplary, since there is a partially fair mouse available. It was found that two of three fair labeled mice have a negative willingness to pay. Only consumers of the fair produced and labeled mouse has a positive willingness to pay. The consumers pay perhaps more attention to the aspect of social responsibility, if presented brands are comparatively unknown. In this connection, consumers allocate a higher value to social responsibility.</p>
