Incidence of Salmonella on Beef Carcasses Relating to the U.S. Meat and Poultry Inspection Regulations

This article is part of a major study designed to collect baseline contamination data by sampling beef carcasses in seven slaughtering plants (four steer–heifer and three cow–bull plants) during both a dry season (November to January) and a wet season (May to June). Samples (n = 30) were excised from each of three carcass anatomical sites (brisket, flank, and rump) at each of three points in the slaughtering chain (pre-evisceration, following final carcass washing, after 24-h carcass chilling). A total of 3,780 samples (100 cm2 each) were analyzed for presence of Salmonella; aerobic plate counts, total coliform counts, and Escherichia coli counts were also made. After 24-h chilling, average incidence (expressed as a percentage) of Salmonella in the brisket, flank, and rump samples, respectively, for steer–heifer carcasses was 0.8 ± 1.7, 0, and 2.5 ± 5.0 for the wet season and 0.8 ± 1.7, 0, and 0 for the dry season; the corresponding percentages for cow–bull carcasses were 4.4 ± 2.0, 2.2 ± 3.9, and 1.1 ± 1.9 for the wet season and 2.2 ± 3.9, 1.1 ± 1.9, and 0 for the dry season. Depending on plant and season, ranges of probabilities of chilled steer–heifer carcasses passing the U.S. regulatory requirements for Salmonella contamination were 0.24 to 1.0 for the brisket, 1.0 for the flank, and 0.002 to 1.0 for the rump; the corresponding ranges for the chilled cow–bull carcasses were 0.25 to 1.0, 0.25 to 1.0, and 0.70 to 1.0. When the number of positive brisket, flank, and rump samples were combined, the probabilities of passing the regulatory requirements were 0.242 to 1.0 and 0.772 to 1.0 for the wet and dry seasons, respectively, in steer–heifer plants and 0.368 to 0.974 and 0.865 to 1.0 in cow–bull plants. Correlation coefficients of aerobic plate counts, total coliform counts, and E. coli counts with Salmonella incidence were higher (P ≤ 0.05) for cow–bull samples that had increased incidence of the pathogen when compared to steer–heifer samples.

This study determined microbiological loads of beef carcasses at different stages during the slaughtering to chilling process in seven (four steer/heifer and three cow/bull) plants. Potential sources of contamination (feces, air, lymph nodes) were also tested. Each facility was visited twice, once in November through January (wet season) and again in May through June (dry season). Carcasses were sampled by aseptic excision of surface tissue (100 cm2) from the brisket, flank, and rump (30 samples each) after hide removal (pre-evisceration), after final carcass washing, and after 24-h carcass chilling. The samples were analyzed individually by standard procedures for aerobic plate counts (APC), total coliform counts (TCC), Escherichia coli biotype I counts (ECC), and presence of Salmonella. Incidence of Salmonella was higher on dry feces of older compared to younger animals, fresh feces of younger compared to older animals, and on cow/bull carcasses compared to steer/heifer carcasses. Most factors and their interactions had significant (P ≤ 0.05) effects on the bacterial counts obtained. Depending on plant and season, APC, TCC, and ECC were ≤104, ≤102, and ≤101 CFU/cm2 in 46.7 to 93.3, 50.0 to 100.0, and 74.7 to 100.0% of the samples, respectively. TCC exceeded 103 CFU/cm2 in 2.5% (wet season) and 1.5% (dry season) of the samples. ECC exceeded 102 CFU/cm2 in 8.7%, 0.3%, and 1.5% of the pre-evisceration, final carcass-washing, and 24-h carcass-chilling samples, respectively, during the wet season; the corresponding numbers during the dry season were 3.5%, 2.2%, and 3.0%, respectively. These data should serve as a baseline for future comparisons in measuring the microbiological status of beef carcasses, as the new inspection requirements are implemented.

Healthy riverine systems provide ecological services that can be translated into human use and consumption. However, human activities cause environmental degradation limiting available pristine water supply and raising public health concerns. In the present study, four tributaries surrounding Mt. Matutum Protected Landscape (MMPL) were selected (Glandang, Linan, Kawit, and Amlok) for evaluation of their physicochemical and microbial characteristics between wet and dry season. The pH and total dissolved solids (TDS) of the river waters ranged from 6.75-8.68 and 55.96-221.89 ppm, respectively, with a pronounced pH fluctuation and TDS increase in Glandang and Linan tributaries from upstream to downstream stations. All tributaries showed varying dissolved oxygen (DO) levels upstream but become relatively stable downstream. All DO values, however, are below the standard limit set for freshwater quality. In terms of microbial load, total coliform ranged from 51-275 cfu/ml while E. coli showed absence (0 cfu/ml) to as high as 77 cfu/ml. Higher total coliform counts were observed on Kawit and Amlok tributaries which are situated in areas that are relatively more forested than the other two rivers. Presence of E. coli was also detected in the water samples from all tributaries. Temporal variation is significant indicating increased pH, TDS and microbial load during the wet season and DO during the dry season. Lamb carcasses (n = 5,042) were sampled from six major lamb packing facilities in the United States over 3 days during each of two visits (fall or winter, October through February; spring, March through June) in order to develop a microbiological baseline for the incidence (presence or absence) of Salmonella spp. and for populations of Escherichia coli after 24 h of chilling following slaughter. Samples also were analyzed for aerobic plate counts (APC) and total coliform counts (TCC). Additionally, incidence (presence or absence) of Campylobacter jejuni/coli on lamb carcasses (n = 2,226) was determined during the slaughtering process and in the cooler. All samples were obtained by sponge-sampling the muscle-adipose tissue surface of the flank, breast, and leg of lamb carcasses (100 cm2 per site; 300 cm2 total). Incidence of Salmonella spp. in samples collected from chilled carcasses was 1.5% for both seasons combined, with 1.9% and 1.2% of fall or winter and spring samples being positive, respectively. Mean (log CFU/cm2) APC, TCC, and E. coli counts (ECC) on chilled lamb carcasses across both seasons were 4.42, 1.18, and 0.70, respectively. APC were lower (P < 0.05) in samples collected in the spring versus fall or winter, while TCC were higher in samples collected in the spring. There was no difference (P > 0.05) between ECC from samples collected in the spring versus winter. Only 7 out of 2,226 total samples (0.3%) tested positive for C. jejuni/coli, across all sampling sites. These results should be useful to the lamb industry and regulatory authorities as new regulatory requirements for meat inspection become effective.

Abstract This study assessed the bacteriological quality of dug well waters from Jashore district – an arsenic affected area of Bangladesh. A total of 58 dug wells (42 installed by a government organization (GO) and 16 installed by a non-government organization (NGO)) were sampled in the dry and wet seasons. The samples were evaluated for total coliform (TC), faecal coliform (FC) and Escherichia coli (E. coli). Sanitary inspections of the surroundings of the GO-installed dug wells identified the sources of faecal contamination. Both the GO-installed and NGO-installed dug wells had bacterial contamination. The median concentrations of E. coli among the GO-installed and NGO-installed dug wells were, respectively, 41 and 21 cfu/100 ml in the wet season, and respectively 2 and <1 cfu/100 ml in the dry season. In the wet season, 24 and 31%, respectively, of the GO-installed and NGO-installed dug wells were in the high-risk category. All of the dug wells had higher disease burden in the wet season compared to the dry season. The findings suggest that drinking water from the dug wells is likely to pose health risks to the rural communities.

Beef carcass sides (n = 48) were selected randomly on three different days in a commercial processing facility and microbiologically analyzed before being moved to the cooler. Four types of samples were obtained per side from the inside round area: no trim and no wash (NTNW); trim, but no wash (TNW); trim and wash (TW), and no trim but wash (NTW). A flame-sterilized knife, forceps, and scalpel were used for each trimming treatment and sampling. Significant differences (P < 0.05) were observed in mean aerobic plate counts (APCs) between treatments. The greatest reduction in APC (log10 colony forming units [CFU] per cm2) was observed in TNW samples followed by TW and NTW, with the corresponding mean APC reductions relative to NTNW being 3.0, 0.9, and 0.3, respectively, indicating that trimming can be an effective control point in reducing bacterial contamination in the slaughter process. Although TNW samples, had the lowest counts, samples from the same location after wash (TW) had counts 2 log cycles higher than TNW samples. These results indicate that washing spreads contamination to adjacent carcass sites. However, washing of carcasses was effective in lowering microbial populations relative to the NTNW treatment. Escherichia coli and coliform counts in all samples were low (0.03 to 0.4 log10 CFU/cm2); however, the mean E. coli or coliform count in NTNW samples was higher (P < 0.05) than those in the rest of the treatments.

Figs are a remarkable food resource to frugivores, mainly in periods of general fruit scarcity. Ficus calyptroceras Miq. (Moraceae) is the only fig species in a type of dry forest in western Brazil. In this study I examined the fruiting pattern as well as fig consumption by birds in F. calyptroceras. Although rainfall was highly seasonal, fruiting was aseasonal, since the monthly proportion of fruiting trees ranged from 4% to 14% (N = 50 trees). I recorded 22 bird species feeding on figs. In the wet season 20 bird species ate figs, while in the dry season 13 did. Parrots were the most important consumers. This group removed 72% and 40% of the figs consumed in the wet and dry seasons, respectively. No bird species increases fig consumption from dry to wet season. However, a group of bird species assumed as seed dispersers largely increases fig consumption from wet to dry season, suggesting the importance of this resource in the period of fruit scarcity. The results of this study points out the remarkable role that F. calyptroceras plays to frugivorous birds, in such a dry forest, since its fruits were widely consumed and were available all year round.

The foraging, territoriality and displacement of the Snail Kite were studied over 232 hours of observations in an urban lake during the dry and wet seasons. The temperature and rainfall variations were used to correlate with predation rates and the correlation coefficients were 0,39 and 0,34, respectively. Snail Kites spent more time foraging during the wet than the dry season when perching is more frequently recorded. The higher predation in the wet season can be explained by the higher abundance of apple snails and the energy demand for reproduction. In the wet season, the territories were smaller and the conspecific conflicts decreased as prey were more available. However, due to the lack of food in the dry season, intra-specific conflicts and expansion of male territories were observed and the female and immatures were expelled from their foraging area to another location. In this way, site tenacity of Snail Kites should be interpreted in relation to the variations on food and dominance gradients according to the temporal changes (time) and foraging sites (space).

SUMMARYThe effects of phosphorus fertilizer and the insecticide carbofuran on the growth and N2-fixation of Azolla pinnata and on the growth, grain yield and nitrogen uptake of intercropped rice were examined in a wet and a dry season. Treatment with phosphorus or carbofuran increased the biomass of Azolla and the amount of nitrogen fixed (nitrogen yield) in both seasons, but the response was much better in the dry season. Azolla inoculation at 1.0 t ha−1 resulted in a greater bio mass and nitrogen yield than inoculation at 0.5 t ha−1. In the dry season, a combination of phosphorus and carbofuran enhanced the growth and N2-fixation of Azolla more than either treatment alone. Carbofuran treatment slowed the rate of decomposition of Azolla, particularly in the dry season. The plant height, leaf area index and dry matter production of rice at flowering time were increased in the plots treated with phosphorus or carbofuran in the wet season and these treatments increased rice grain yield and nitrogen uptake in both the wet and dry seasons.

Microbes act as geochemical agents for the degradation of environmental contaminants hence their abundance and distribution influences ecological response to pollution stress in soils, sediments, and rivers systems and in environmental protection. In this paper seasonal variation in geomicrologicl abundance in the river water, sediments and adjoining soils have been assessed. The results indicate a higher microorganism count during the wet season. The presence of E. coli in 100ml of water implies that water is unsuitable for any domestic use without disinfection. The Faecal and Total Coliform counts also indicate that undesirable sources are contaminating the river and posing environmental health risk. However environmental self-remediation and possible absence of sources of the microorganisms was promoted during the wet season than the dry season.

Context Phosphorus (P) deficiency occurs in beef cattle grazing many rangeland regions with low-P soils, including in northern Australia, and may severely reduce cattle productivity in terms of growth, reproductive efficiency and mortality. However, adoption of effective P supplementation by cattle producers in northern Australia is low. This is likely to be due to lack of information and understanding of the profitability of P supplementation where cattle are P-deficient. Aims The profitability of P supplementation was evaluated for two dissimilar regions of northern Australia, namely (1) the Katherine region of the Northern Territory, and (2) the Fitzroy Natural Resource Management (NRM) region of central Queensland. Methods Property-level, regionally relevant herd models were used to determine whole-of-business productivity and profitability over 30 years. The estimated costs and benefits of P supplementation were obtained from collation of experimental data and expert opinion of persons with extensive experience of the industry. The economic consequences of P supplementation at the property level were assessed by comparison of base production without P supplementation with the expected production of P-supplemented herds, and included the implementation phase and changes over time in herd structure. In the Katherine region, it was assumed that the entire cattle herd (breeders and growing cattle) grazed acutely P-deficient land types and the consequences of (1) no P supplementation, or P supplementation during (2) the dry season, or (3) both the wet and dry seasons (i.e. 3 scenarios) were evaluated. In the Fitzroy NRM region, it was assumed that only the breeders grazed P-deficient land types with three categories of P deficiency (marginal, deficient and acutely deficient), each with either (1) no P supplementation, or P supplementation during (2) the wet season, (3) the dry season, or (4) both the wet and dry seasons (i.e. 12 scenarios). Key results In the Katherine region, year-round P supplementation of the entire cattle herd (7400 adult equivalents) grazing acutely P-deficient pasture resulted in a large increase in annual business profit (+AU$500000). Supplementing with P (and N) only in the dry season increased annual business profit by +AU$200000. In the Fitzroy NRM region, P supplementation during any season of the breeder herd grazing deficient or acutely P-deficient pastures increased profit by +AU$2400–AU$45000/annum (total cattle herd 1500 adult equivalents). Importantly, P supplementation during the wet season-only resulted in the greatest increases in profit within each category of P deficiency, comprising +AU$5600, AU$6300 and AU$45000 additional profit per annum for marginal, deficient and acutely P-deficient herds respectively. Conclusions The large economic benefits of P supplementation for northern beef enterprises estimated in the present study substantiate the current industry recommendation that effective P supplementation is highly profitable when cattle are grazing P-deficient land types. Implications The contradiction of large economic benefits of P supplementation and the generally low adoption rates by the cattle industry in northern Australia suggests a need for targeted research and extension to identify the specific constraints to adoption, including potential high initial capital costs.
