Cultural Heritage of American Food Habits and Implications for the Hospitality Industry

With a series of detective novels set in 17th century Dai-Viet that showcase the traditions, beliefs and customs of an exotic culture, in which the food and food habits of the Vietnamese people play a prominent role, Thanh-Van Tran-Nhut, an engineer-turned-novelist of Vietnamese origins, has carved a niche for herself in the popular crime fiction market in France. This paper focuses on the novel Les Travers du Docteur Porc, in which Doctor Porc, forensic investigator and gourmand extraordinaire, adopts the mantle of chief detective from Tran-Nhut’s usual protagonist, the loyal mandarin Tan. In this movement, we argue, the author has shaped two different but complementary approaches to her birth-country’s turbulent past that coalesce in the gargantuan figure of the (politically unencumbered) doctor and connoisseur of Vietnamese cuisine. Whereas the process of ‘solving the crime’ can be read as an attempt to seek answers and restore order in the wake of senseless bloodshed, it is food, we contend, that emerges, not only as a source of pleasure, succour and stability, but as a cultural heritage that war and upheaval failed to destroy.

The article is devoted to improving the methods of state support for the tourism and hospitality industry in the context of digitalization. It is proved that the policy in the field of tourism and hospitality industry should take into account the goals of socio-economic policy that determines the line of reforms. The authors state that the tourism and hospitality industry has become a special system that combines both the historical and cultural heritage of the state and the most recent information technologies in the field of territorial development and communications, as well as note that tourist and hotel companies are digitalizing their activities rigorously and effectively, receiving significant revenues.

Aim. The article considers the potential of the natural, cultural and historical features of the territory of the Dido (Shaurinsky District) basin with its dramatic mountainous setting for the further development of tourism and recreation in regions of  the highlands of the East Caucasus.   Materials and Methods. In carrying out our study data obtained from field research,  including a comprehensive environmental survey of the territory, were used. Field  research  included  on‐site  expeditions,  profiling,  descriptive,  identification  of  key  areas, mapping, photography. Historical sources, as well as stock imagery and existing cartographic material, were consulted.   Results. The territory’s natural features and historical and cultural heritage were  examined in terms of their attractiveness for tourist visits and an option of creating a  recreational zone with tourist centres was articulated among other proposals for  tourism and recreational development.   Conclusion. The Dido basin with its high biological and landscape diversity and distinctive cultural and historical heritage presents significant potential for the development of various types of tourism and an associated local hospitality industry.

A study was conducted on the influence of maternal education level on food consumption, energy and nutrient intake, and dietary adequacy in 110 pre-school children from Madrid, Spain. With increasing maternal education, children consumed more sugar (p < 0.05), fruit (p < 0.05), and fish (p < 0.05). Snacking was more frequent with decreasing maternal education (p < 0.05). Though statistical significance was not reached, the consumption of pre-cooked foods was greater among children of mothers educated to a higher level, a phenomenon probably related to the work situation of these women. With respect to dietary composition, no significant differences were found between groups for macronutrient, fiber and energy intakes, except for energy supplied by polyunsaturated fatty acids (PUFA), which was greater in the children of less educated women (p < 0.01). This is probably due to their greater consumption of sunflower seed oil. The diets of children belonging to well-educated mothers came closer to meeting the recommended intakes for folate, vitamin C, and iodine. It would seem that maternal educational level influences the food habits of children. Mothers with less education may require special advice in this area.

Abstract. Emotion-related impulsivity, defined as the tendency to say or do things that one later regret during periods of heightened emotion, has been tied to a broad range of psychopathologies. Previous work has suggested that emotion-related impulsivity is tied to an impaired function of the serotonergic system. Central serotonin synthesis relies on the intake of the essential amino acid, tryptophan and its ability to pass through the blood brain barrier. Objective: The aim of this study was to determine the association between emotion-related impulsivity and tryptophan intake. Methods: Undergraduate participants (N = 25, 16 women, 9 men) completed a self-rated measure of impulsivity (Three Factor Impulsivity Index, TFI) and daily logs of their food intake and exercise. These data were coded using the software NutriNote to evaluate intakes of tryptophan, large neutral amino acids, vitamins B6/B12, and exercise. Results: Correlational analyses indicated that higher tryptophan intake was associated with significantly lower scores on two out of three subscales of the TFI, Pervasive Influence of Feelings scores r =  –.502, p < . 010, and (lack-of) Follow-Through scores, r =  –.407, p < . 050. Conclusion: Findings provide further evidence that emotion-related impulsivity is correlated to serotonergic indices, even when considering only food habits. It also suggests the need for more research on whether tryptophan supplements might be beneficial for impulsive persons suffering from a psychological disorder.
