Bakso merupakan makanan yang digemari . Bakso yang sudah banyak diproduksi dan dijual bebas di pasar memiliki banyak alternatif kombinasi diantaranya tepung dan daging (sapi, ayam, dan ikan). Sumber pangan lokal di wilayah NTT dapat dijadikan sebgai alternatif dalam membuat bakso berbahan jantung pisang, kacang merah, dan ubi jalar. Bakso dapat dibuat dengan mengkombinasikan ketiga jenis pangan lokal (jantung pisang, kacang merah dan ubi jalar) sehingga dapat menjadi alternatif makanan tambahan bergizi dan bebas BTP yang dapat diterima oleh semua kalangan dari balita sampai orang dewasa. Jenis penelitian ini merupakan rancangan penelitian eksperimen di bidang teknologi pangan. Rancangan penelitian adalah rancangan acak lengkap (RAL). Data uji organoleptic (daya terima dan masa simpan) diolah secara statistic menggunakan Analisis of Varians (ANOVA) dengan menggunakan software SPSS17. Apabila di antara perlakuan terdapat pengaruh maka dilanjutkan dengan uji Tukey Honestly Significance Difference (HSD). Rata-rata uji daya terima bakso jantung pisang diperoleh hasil rata-rata kesukaan (warna, aroma, tekstur dan rasa) berkisar 3.35 sampai 3.97 yang berarti masuk dalam kategori suka. Dari hasil rata-rata diketahui bahwa perlakuan P32 adalah perlakuan yang paling tinggi nilainya yaitu 3,97 yang artinya P32 adalah produk pentolan bakso jantung pisang yang paling disukai oleh panelis.

O objetivo desse trabalho é avaliar as características nutricionais dos solos de ambientes agrícolas da Serra do Espinho, Pilões/PB. Analisamos somente a camada arável dos solos de 4 comunidades agrícolas, subdividindo-as em áreas de plantio (roçado), totalizando 15 amostras, que foram organizadas segundo Santos et al (2013) e encaminhadas para análise nos laboratórios de Física e Fertilidade do solo da Universidade Federal da Paraíba (UFPB). Os principais cultivos agrícolas da Serra do Espinho são: banana (Musa sp), milho (Zea mays), feijão (Phaseolus vulgaris L.), mandioca (Manihot esculenta Crantze); fava (Vicia faba), batata doce (Ipomea batatas) e algumas culturas permanentes como urucum (Bixa orellana L.) e coco (Cocos nucifera L.). Das 15 amostras de solo coletadas na Serra do Espinho, 7 possuem pH ideal para as culturas comuns da região, a maioria pertencente às comunidades de Veneza e Ouricuri. Somente 2 solos são ácidos e necessitam de calagem; 12 solos possuem CTC e V% baixa, que compromete qualquer tipo de cultivo nessas terras; Apenas 3 solos são eutróficos e possuem condições ideais para culturas diversas, com estoques suficientes de P, Mg²+ e Ca²+, o que se traduz em CTC, SB e V% muito boa.Palavras-chave: Análise de solos, agricultura, preservação ambiental. ABSTRACTThe aim of this research is to evaluate the nutritional characteristics of soil in agricultural environments of Serra do Espinho, Pilões / PB. It was analyzed the arable layer of the soils of 4 agricultural communities, subdividing them into areas of planting (the land), totaling 15 samples, which were organized according to Santos et al (2013) and sent to the Physics laboratories and soil fertility of the Federal University of Paraíba (UFPB). The main agricultural cultivation of Serra do Espinho are: banana (Musa sp), corn (Zea mays), beans (Phaseolus vulgaris L.), manioc (Manihot esculenta Crantze); broad bean (Vicia faba), sweet potato (Ipomea batatas) and some permanent crops such as achiote (Bixa orellana L.) and coconut (Cocos nucifera L.). Of the 15 soil samples collected in Serra do Espinho, 7 have an ideal pH for common crops in the region, most of them belonging to the communities of Veneza and Ouricuri. Only 2 soils are acid and require liming; 12 soils have a low CTC and V%, which compromises any type of cultivation in these lands; Only 3 soils are eutrophic and have ideal conditions for diverse crops with sufficient stocks of P, Mg² + and Ca² +, which is a very good CTC, SB and V%..Keywords: Soil analyze; agriculture; environmental preservation.

White sweet potato starch (Ipomea batatas L.) and avocado seed starch (Parsea americana Mill) derived from local plants have the potential to be developed as agricultural products. Starch is a hydrocolloid compound as a potential local resource to be utilized. Glycerol function as an anti-freezing which is hygroscopic. This study aims to determine the ratio of white sweet potato starch with avocado seed starch and the concentration of glycerol for making edible film. This study was an experiment using a completely randimized factorial design with 2 (two) main factor consisting of a comparison of white sweet potato starch and avocado seed with 3 levels: P1 = 35%:65%., P2=50%:50%., P3=65%:35% and glycerol concentration with 3 levels: G1=1%., G2=2%., G3=3%. The best result reasearch were content of 23.03% (tratment P1G1), solubility of 55.57% (treatment P3G2)., swelling test of 9.83% (treatment P2g3)., elongation of 8.18% (treatment P3G2)
