Orange Fleshed Sweet Potatoes (OFSPs) is an excellent nutrition sensitive function food. It contains dense amount of carotene and is also rich in proximate nutrients. A wide number of cultivars of OFSPs has been developed worldwide, particularly in sub-Saharan Africa and Asia. In Bangladesh, sixteen cultivars have been developed. Carotene content in the OFSPs surpasses all of the plant food carotene. OFSPs also contains good content of energy yielding nutrients. The Orange Fleshed Sweet Potatoes could, therefore, be a potential dietary approach to address the vitamin A deficiency for undernourished indigent people.

Ipomoea batatas (L.) Lam., Convolvulaceae is widely distributed in Asian areas from tropical to warm-temperature regions. Their tubers are known for their antioxidant, anti-bacterial, anti-diabetic, wound healing, anti-inflammatory, and anti-ulcer activities. The preventive and therapeutic effects of orange-fleshed sweet potato on gastric ulcers have not been investigated. In this study, the carotenoid extract (CE) of orange-fleshed sweet potato was found to protect against gastric ulcers induced by HCl/ethanol in mice. The anti-inflammatory and antioxidant activities of the carotenoid pigment extract were also evaluated as possible evidence of their protective effects. Administration of CE reduced gastric ulcers. Oral administration of CE (100 mg/kg) protected against gastric ulcers by 78.1%, similar to the positive control, sucralfate (77.5%). CE showed potent reducing power and decreased nitric oxide production in a mouse macrophage cell line, RAW 264.7, in a concentration-dependent manner. The production of the inflammatory cytokine interleukin-6 and prostaglandin E2 was also reduced by CE in a dose-dependent manner. The high carotenoid content of orange-fleshed sweet potato could play a role in its protective effect against gastric ulcers. This result suggests the possibility of developing functional products using this nutrient-fortified material.

Abstract Promotion of orange-fleshed sweet potato with high beta-carotene content would enhance the consumption of sweet potato as well as support the local-based food diversification. Deep-fried chips, jam, juice, and noodle are the products that commonly make from cereals and fruits other than tubers. Producing those products from sweet potato was aiming to study the suitability and acceptance concerning promoting their utilization and adoption once they are released as new varieties. Five orange-fleshed sweet potato genotypes, namely MSU 06071-82, MSU 06039-07, MSU 06042-18, MIS 0651-09, and Beta-2 were studied their suitability for making food products, such as deep-fried chips, jam, juice, and noodle-based on their physical, chemical and sensorial attributes. The results showed that MSU 06042-18 genotype with a relatively high beta-carotene content (5.425 μg/100 g wb) was suitable for the ingredient of deep-fried chips jam, juice, and noodle products, followed by MSU 05036-11 and Beta 2. In particular, MSU 06071-82 and MIS 0651-09 genotypes were suitable for juice ingredients based on the parameter evaluated. This information is essential in terms of enhancing the adoption of orange-fleshed sweet potato genotypes by farmers and their utilization by food processors.

Vitamin A deficiency is a major public health problem in Nigeria. Staple crops are targeted by biofortification efforts because they possess low micronutrient density and are consumed in large quantities by a large proportion of poor households. This study was designed to assess the knowledge, perception and utilization of biofortified cassava and orange-fleshed sweet potato in selected Local government Areas in Abia and Imo States. The study was descriptive and cross-sectional in design. A total of 710 respondents were selected using a multi-stage sampling technique. A structured interviewer-administered questionnaire was used to elicit the required information. Statistical analysis was performed using descriptive statistics(frequency, percentage, mean and standard deviation)and inferential(correlation)analysis. Socio-demographic data revealed a preponderance of females, married, well-educated and working-class respondents. Monthly income above ₦29,000(US$ 70.54) and household size of 4-6 members were reported in 53.5% and 48.6% of the respondents. Study results further revealed that some (34.9%)of the respondents had good knowledge, while 46.1% and 19.0% had an average and poor knowledge of biofortified staples, respectively. Orange fleshed sweet potatoes and biofortified cassava were purchased at least once monthly by 73.7% of the respondents, however 16.5% and 27.5% of the respondents consumed these biofortified staples on a daily and weekly basis. Low positive perception towards the consumption (27.5%), benefits (39.6%) and barriers (16.9%) of utilizing studied biofortified staples was reported. A positive correlation was observed between respondents’ knowledge of biofortified staples and their benefits perception (p = 0.003), purchase (p =0.001) and consumption (p= 0.001) frequency.Therefore, while a good number of the respondents were fairly knowledgeable about the studied biofortified staples, it significantly influenced the perception and utilization of these staples, despite being reportedly low. Therefore, increased sensitization, price subsidy and availability of these biofortified staples will help improvetheir acceptance and utilization among rural households.
