El aprovechamiento de los residuos biodegradables provenientes del procesamiento de frutas y verduras representa una gran oportunidad de disminuir el impacto ambiental generado por estos. Este es el caso de los residuos de la piña que sirven de materia prima para la obtención de diferentes compuestos incluyendo el ácido láctico, insumo de gran importancia en diferentes industrias.  Esta investigación tuvo como objetivo analizar las tendencias de la publicación de artículos relacionados con la obtención de ácido láctico a partir del uso de la piña y sus residuos como sustrato de partida.  Se utilizaron 87 artículos obtenidos mediante una ecuación de búsqueda en la base de datos Scopus (Elsevier, B.V., 2021) publicados entre el 2010 y 2020.  Aunque no se observa una tendencia definida en la distribución de los documentos por año, se percibe un gran interés en el tema, el 2020 fue el año de mayor actividad científica (15 publicaciones); estos trabajos aplican en diferentes campos del conocimiento donde predomina el campo investigativo de inmunología y microbiología, seguido de ciencia de materiales y en una menor proporción agricultura y ciencias biológicas.  Los países con más publicaciones son Malasia y Tailandia con 15 documentos.  En cuanto a los microorganismos más estudiados para la obtención del ácido láctico mediante un proceso biotecnológico se identificaron el Lactobacillus plantarum y Escherichia coli. El aumento en el número de publicaciones muestra un interés en la búsqueda de alternativas ambientales para la valorización de estos residuos agroindustriales para la obtención de compuestos de interés y de aplicación en las áreas farmacéutica, cosmética e industrial, entre otras.

Street vended fruits cause food borne illnesses in developing countries. This study was carried out to determine the microbiological safety of some street vended fruits sold in Yenagoa metropolis of Bayelsa State, Nigeria. Freshly cut ready-to-eat vended pawpaw, watermelon and pineapple were analysed for possible contamination with bacteria and fungi using standard microbiological techniques. A total of (17) samples: (5) Pawpaw, (6) Watermelon and (6) Pineapple were obtained from three (3) different local markets in Yenagoa metropolis, namely; Tombia, Opolo and Swali markets. Bacterial count ranged from 1.3x105 to 2.4x106cfu/ml for pineapple; 1.9x105 to 8.1x106cfu/ml for watermelon and 3.7x106 to 7.6x106cfu/ml for pawpaw samples. The highest bacterial count was obtained in watermelon from Opolo market, while the highest fungal count was recorded in pawpaw retailed at Opolo market. Microbial isolates were Bacillus sp, Escherichia coli, Salmonella sp, Staphylococcus sp, Klebsiella spp, Citrobacter spp, Proteus spp, Enterobacter spp, Mucor spp and Saccharomyces cerevisiae. There were 58.8% occurrence of Escherichia coli and Staphylococcus spp and occurred most. Bacillus spp and Klebsiella spp had 47.1% occurrence and closely followed by Staphylococcus aureus 41.2%, while Proteus spp had the least 5.9% occurrence. The result obtained may be responsible for the prevalence of Escherichia coli and Staphylococcus spp in Yenagoa metropolis. The presence of these organisms in these ready-to-eat retailed fruits analysed is a reflection of unwholesomeness and gross contamination of the fruits and therefore make the fruits unsafe for human consumption; hence the need for proper microbiological safety analysis of fruits for human consumption.

Two new phenylpropanoid glycosides, named β-D-(1- O-acetyl-3,6- O-diferuloyl) fructofuranosyl α-D-6′- O-acetylglucopyranoside (1) and β-D-(1- O-acetyl-3,6- O-diferuloyl) fructofuranosyl α-D-glucopyranoside (2), along with two known analogues (3–4) and four glycerides (5–8), were isolated from the EtOAc extract of the leaves of Ananas comosus. Their structures were elucidated on the basis of 1D- and 2D-NMR analyses, as well as HR-ESI-MS experiments. Compounds 1–4 showed significant antibacterial activities against Staphylococcus aureus and Escherichia coli.

ABSTRACTIn the present study, the efficacy of Cymbopogon citratus D.C. Stapf. essential oil (CCEO) to provoke a 5-log CFU/ml (5-log) inactivation in a mixed composite of Escherichia coli, Listeria monocytogenes, and Salmonella enterica serovar Enteritidis in pineapple (Ananas comosus (L.) Merril) juice (4°C) was assessed. Moreover, the effects of CCEO on the physicochemical and sensory quality parameters of pineapple juice were evaluated. The MIC of CCEO was 5 μl/ml against the composite mix examined. For L. monocytogenes and E. coli inoculated in juice containing CCEO (5, 2.5, and 1.25 μl/ml), a ≥5-log reduction was detected after 15 min of exposure. This same result was obtained for Salmonella Enteritidis incubated alone in pineapple juice containing CCEO at 5 and 2.5 μl/ml. Overall, Salmonella Enteritidis was the most tolerant and L. monocytogenes was the most sensitive to CCEO. The physicochemical properties (pH, titratable acidic [citric acid per 100 g], and soluble solids) of pineapple juice containing CCEO (2.5 and 1.25 μl/ml) were maintained. Juice containing CCEO (2.5 and 1.25 μl/ml) exhibited similar scores for odor, appearance, and viscosity compared with juice without CCEO. However, unsatisfactory changes in taste and aftertaste were observed in juices containing CCEO. These results suggest that CCEO could be used as an alternative antimicrobial compound to ensure the safety of pineapple juice, although CCEO at the tested concentrations negatively impacted its taste. Therefore, further studies are needed to determine the balance between microbial safety and taste acceptability of pineapple juice containing CCEO.
