Abstract A novel heteropolysaccharide, named Cress Water Soluble Polysaccharide (CWSP) was purified from Lepidium sativum seeds. Antioxidant activities and functional properties were characterized thermally using thermal gravimetric analysis (TGA), and the differential scanning calorimeter (DSC) of CWSP were evaluated. The total antioxidant capacity and the metal chelating activities of CWSP at 3 mg/ml was equivalent to 116.34 µg acsorbic acid and 62.57%, respectively. CWSP were thermally stable and presented high water (WHC) and oil holding (OHC) capacities and good emulsion properties. CWSP was used for the production of cakes. The formulations samples were prepared with different levels of CWSP (0.1; 0.3 and 0.5%) and analyzed during 15 days of storage at room temperature. The obtained results indicated that the addition of CWSP had a significant effect on the texture profile, leading to the increase in all parameters in terms of hardness, springiness, cohesiveness, adhesiveness and chewiness. Moreover, the reformulation samples presented higher a* and lower L* and b* than control sample. The sensory evaluation showed that the formulation of cake with 0.3% of CWSP was the most acceptable. Therefore, CWSP proved to be a new alternative for improving the quality attributes and showed potent antioxidant activities on the shelf life during the storage of bakery foods.

Cyclocarya paliurus (Batal) Iljinskaja is a multiple function tree species, but its main utilization is for the harvesting of its leaves as materials for tea production and recently as ingredients for the food industry. In this study aqueous extracts of C. paliurus leaves collected from 21 natural populations were evaluated for their phytochemical content and antioxidant activity. The content of water-soluble polysaccharide, total flavonoid and total polyphenol varied from 66.05 to 153.32 mg/g, 9.01 to 19.65 mg/g and 20.80 to 52.69 mg/g, respectively. Quercetin-3-O-glucuronide, aemferol-3-O-glucuronide and 3-O-caffeoylquinic acid were the major phenolic components in aqueous extracts of C. paliurus leaves. Both redundancy analysis and Pearson's correlation analysis indicated that water-soluble polysaccharide, total polyphenol, total flavonoid, quercetin-3-O-glucuronide, 3-O-caffeoylquinic acid and 4-O-caffeoylquinic acid were significantly correlated with antioxidant activity, but total polyphenol showed the greatest contribution to antioxidant capacity. The antioxidant activity of the 21 populations was classified into six distinct groups based on the squared Euclidean distance. These results would provide a theoretical basis for obtaining the greatest yield of targeted antioxidant phytochemicals of C. paliurus leaves for tea and food ingredient production.

Over the past decades, researchers have increasingly turned to natural compounds and preparations created on their basis. Biologically active terpenoids, in particular, natural sesquiterpene lactones, are of great interest. One of the rich sources of these compounds is a plant of the genus Artemisia, whose representative is wormwood Artemisia glabella Kar et Kir., Growing on the territory of Central Kazakhstan. In the study of the chemical composition of wormwood, a new biologically active compound, sesquiterpenic lactone arglabin, with antitumor and radiosensitizing properties has been isolated. The antitumor drug "Arglabin" is used in oncological clinics of the Republic of Kazakhstan, the Russian Federation, Uzbekistan, the Republic of Georgia, Belarus, Kyrgyzstan and Tajikistan in the complex therapy of tumors of the breast, lung, liver, etc. The purpose of this work is to study the physicochemical properties of mechanically treated arglabin and its mixture with a larch water–soluble polysaccharide arabinogalactan, obtained by mechanochemical means. According to IR, UV and NMR 13С spectroscopy, long–term mechanochemical treatment does not lead to a change in the chemical composition of arglabin molecules. All the spectra obtained are identical to the spectra of the initial (not mechanically treated) arglabin. Using X–ray analysis, it was shown that in the mechanocomposites of arglabin with arabinogalactan there is no disordering of the crystal structure of arglabin and its molecular dispersion in the polysaccharide matrix does not occur.
