The sensorial evaluation of Chenin blanc wine produced with different types of oak wood treatments over time has not been investigated before. The main aim of this study was to assess the sensory profile, using a trained panel, of a South African Chenin blanc wine fermented and matured in old barrels, three types of new oak barrels, two types of oak staves as well as a stainless steel tank over time, which has not been done before. Results indicate mainly separation between the stainless-steel tank/old barrel treatments from the stave and new barrel treatments, with separation between the latter two treatments also being found. More fruity descriptors were used in the stainless-steel tank and old barrel treatments, with oak-related descriptors being used in the stave and new barrel treatments. Separation between among the new barrel and stave treatments were also noted, which was still reflected during bottle maturation. These results indicate that winemakers need to take cognizance of the sensorial differences induced by barrel and stave maturation in white wines and how these evolve over time.

Water tank is an important element in water distribution system. The project is studied the characteristics of water tanks and the main objective of it to identify the selection criteria for the water tank. Furthermore, Selection of water tank is a challenge for many individuals and companies. The study is gathers information from many sources such as literature reviews, companies, questionnaire and experts in order to reach to the main important characteristic of water tanks. The selection of water tank depends heavily on the applications. As a result, it found that the best type of storage tanks for sweet water used for human consumption are two types, one of which is polyvinyl chloride to store a quantity of less than five cubic meters and the other is stainless steel tank to store more than five cubic meters. The study found that the best reservoir for irrigation and sewage uses is the carbon steel tank. On the other hand, the study found that the stainless-steel tank is best suited for storage of seawater, which requires a material that can withstand corrosion.

Aim: To compare the evolution of mannoproteins in a white wine submitted to two different stirring of lees processes: in French oak barrels (BA) and in a stainless steel tank equipped with French oak staves (IN).

Methods and results: Total colloids were obtained by ultrafiltration and ethanol precipitation. Mannoproteins were isolated by adsorption on concanavalin-A and molecular weight separation. Sugar residues were characterized by GC analysis of their alditol acetates and protein content was determined according to Lowry method. Wines were submitted to sensory analysis.

Conclusion: Three polysaccharide fractions were isolated from both BA and IN wines. Regarding sensory attributes, the only significant difference between BA and IN wines was the round mouth-feel. The BA wine showed a higher final polysaccharide concentration, which can be related to the rounder mouth-feel.

Significance and impact of the study: This study is a technological approach of a process largely used by white wine producers who want to market a fresh wine produced with stirring of lees with a woody character. It reports the evolution of mannoproteins through four months of ageing on lees with two different stirring processes that can have a direct impact on the cost of the final product.

Penetrating cracks were found in the head straight section of a stainless steel tank before it was put into use. Penetrant testing, chemical analysis, metallographic analysis, X-ray residual stress test, crack surface scanning electron microscopy analysis and energy spectrum analysis was applied to study the cause of the cracks. The results showed that, chloride ion stress corrosion cracking was the reason of the failure. Metal magnetic memory detection and hardness testing were also used to evaluate the stress distribution of the head. The extreme points of the magnetic field gradient, hardness and tensile stress showed high coherence to the positions of the cracks. These results indicated that the metal magnetic memory method has good application prospects for the assessment of stainless steel deformation and stress state.
