Milk Vending Does Not Improve College Students’ Milk and Calcium Intakes

In the transition from adolescence to young adulthood, overall diet quality decreases, including a reduction in both dairy and calcium consumption. The objective of this pilot study was to determine the impact of milk vending on milk and calcium intakes in college students. Participants were 124 college students living in dorms at a large public university (Fall 2012). Milk vending machines were installed in two campus dorms. Before and 2 months after installation, students were surveyed about milk and calcium intakes, as well as attitudes regarding milk vending. Sales data for the newly installed machines were also collected between the pre- and posttest surveys. Students reported similar milk and calcium consumption before and after the intervention. Mean calcium intakes were lower than the recommended dietary allowance for students in either life stage group (18 years old or 19 years and older). Milk vending sales data showed that during the study period, approximately nine bottles of milk were bought each day from the two dorms combined. Results from this study suggest that milk vending alone may not be an effective strategy for preventing the commonly observed decrease in milk and calcium intakes among college students.

Abstract Objectives Studies have reported poor food choices and unhealthy eating behaviors among college students. The purpose of this study was to assess the diet quality of college freshmen and the impact of the COVID-19 pandemic. Methods Freshman students 18 years or older in all majors in a southeastern university were invited to take the Diet History Questionnaire III (DHQ III) in fall 2019 and in fall 2020. The Healthy Eating Index (HEI) scores from the participants were obtained and compared to the HEI-2015 national averages through one-sample t-tests. Results Thirty students in fall 2019 cohort (86.7% female, 46.7% white) and 55 students in fall 2020 cohort (78.2% female, 63.5% white) completed the survey. Compared to national average data, participants in the current study had higher total HEI scores (60.9 vs. 58.3, P < 0.05), higher total fruits scores (3.8 vs. 2.6, P < 0.001), higher dairy scores (6.4 vs. 5.4, P < 0.001), but lower total protein scores (4.1 vs. 5.0, P < 0.001), lower seafood and plant protein scores (3.6 vs. 5.0, P < 0.001), higher refined grains scores (8.0 vs. 6.7, P < 0.001), and higher sodium scores (4.7 vs. 3.4, P < 0.001). Just examining the 2020 cohort of students, after the onset of the COVID-19 pandemic, the overall HEI scores were lower and not significantly different from the national average (P > 0.05) and HEI fatty acids scores were lower (3.7 vs. 4.5, P < 0.05). Conclusions The diet quality of freshman college students remains inadequate and interventions are needed to prevent or postpone the health problems especially during the COVID-19 pandemic. Writing is a crucial skill for students, particularly for those at tertiary level, yet it is a fact that many find writing challenging to master. A number of methods and strategies, therefore, have been employed in an attempt to develop students’ writing skill, and a student-run school newspaper is one of them. This paper aims at reporting whether the school newspaper The SFLook results in its members’ improved writing and how the students self-evaluate the impact of the project. First, the students’ (n = 20) pre-test and post-test before and after a twelve-week action were examined to assess their writing performance. Besides, a questionnaire was delivered to investigate their attitudes towards different aspects during the time working for the newspaper. The findings indicate that the school newspaper has reinforced its members’ writing skill and their motivations for writing are bound to external factors. The research results would suggest further applications of student – run newspapers in various educational contexts.

Abstract Objectives To determine how food insecurity is associated with overall diet quality in college students following the implementation of a new food scholarship program. Changes of Healthy Eating Index (HEI) and food security status were compared over a 10-week period. Methods A new food scholarship program at Texas Woman's University in Houston provided students fresh fruits and vegetables, dairy and meat products, as well as non-perishable foods twice monthly. The Houston Food Bank donated all foods. Baseline and 10-week data were collected. Food security was measured with the USDA 6-item short form of the Food Security Survey Module. Total HEI-2015 and component scores were calculated from analysis of 3-day food records and compared by paired t-tests. ANCOVA estimated the impact of food security (high, low, very low) on HEI post scores, controlling for HEI baseline scores, age, gender, and race. Results Participants (n = 49) were primarily female (n = 38, 78%) with an average age of 28 ± 8 years. Ethnic/race distribution was 49% White, 27% Asian, 20% Black, and 4% other. Participants were primarily single (76%). Food security was low (31.9%) or very low (19.1%) at baseline; at post-test, participants reporting very low food secure dropped to 15.6%. Total HEI-2015 scores at baseline (55.9 ± 11.54) did not increase significantly after 10 weeks (57.7 ± 10.63) (P = 0.298). However, after 10 weeks, total vegetable scores significantly increased (2.64 ± 1.39 to 3.19 ± 1.33) (P = 0.023). There was no significant food security group effect (P = 0.49); however, there was a positive association between age and HEI post scores independent of the other model effects (β = 0.59 + 0.17; P = 0.001). Conclusions HEI-2015 total vegetable component scores increased with implementation of a food scholarship program. Nevertheless, many college students remained food insecure and overall diet quality needs improvement. Funding Sources Food donated by the Houston Food Bank.

Abstract Background Altering the availability of healthier or less-healthy products may increase healthier purchases, but evidence is currently limited. The current study aimed to investigate the impact of altering the absolute-and-relative availability of healthier and less-healthy products – i.e. simultaneously altering the number of options available and the proportion of healthier options – in hospital vending machines. Methods An adapted multiple treatment reversal design was used, altering products available in ten vending machines serving snack foods and/or cold drinks in one English hospital. Machines were randomised to one of two sequences for the seven 4-week study periods: ABCADEA or ADEABCA. In Condition A (study periods 1, 4 and 7) the proportions of healthier products were standardised across all machines, so that 25% of all snack slots and 75% of drink slots were healthier. In Condition B, 20% of vending machine slots were emptied by removing less-healthy products. In Condition C, the empty slots created in Condition B were filled with healthier products. Conditions D and E were operationalised in the same way as B and C, except healthier products were removed in D, and then less-healthy products added in E. Sales data were obtained from machine restocking records. Separate linear mixed models were conducted to examine the impact of altering availability on energy purchased (kcal) from (i) snacks or (ii) drinks each week, with random effects for vending machine. Results The energy purchased from drinks was reduced when the number of slots containing less-healthy drinks was decreased, compared to standardised levels (− 52.6%; 95%CI: − 69.3,-26.9). Findings were inconclusive for energy purchased from snacks when less-healthy snack slots were reduced (− 17.2%; 95%CI: − 47.4,30.5). Results for altering the number of slots for healthier drinks or snacks were similarly inconclusive, with no statistically significant impact on energy purchased. Conclusions Reducing the availability of less-healthy drinks could reduce the energy purchased from drinks in vending machines. Further studies are needed to establish whether any effects might be smaller for snacks, or found with higher baseline proportions of healthier options.

AbstractIntroductionUnderstanding health behaviors, such as sleep and dietary patterns, is important for health promotion and disease prevention. College period is a complicated, difficult time to maintain healthy behaviors. In this regard, little is known about the impact of sleep and diet quality on well-being among college young adults. Hence, we aimed to study the impact of sleep and diet quality on well-being in college students.Materials and MethodsThree hundred-twelve Mexican college students (82% females; 20.6 ± 3.4years) were included in a cross-sectional study. Participants completed the following validated questionnaires: Well-being Index to assess well-being (high scores indicate high well-being), Pittsburg Sleep Quality Index for sleep quality (scores > 5 indicate poor sleep quality), and a validate version of the Health Eating Index for Mexican population to assess diet quality (scores > 80 indicate good diet quality). BMI and physical activity were also assessed. Scores were treated as continuous variables, and statistical analysis were performed using SPSS v24 and adjusted for confounding variables.ResultsSixty-seven percent of our population showed a poor sleep quality and eighty-four percent needs to make changes in their diet in order to improve its quality. On the other hand, fifty-one percent of the studied population had a low well-being perception. Poor sleep quality (p < 0.001) and low diet quality (p < 0.001) associated with a lower well-being perception. In addition, poor sleep quality is associated with low diet quality (p < 0.05). Regarding food consumption, higher sweets (p < 0.001) and soft-drink (p < 0.001) intake was inversely associated with well-being scores. Likewise, high consumption of sweets (p < 0.05) and soft-drink (p < 0.05), and low fruit (p < 0.05) and cereal (p < 0.05) consumption are linked to poor sleep quality.DiscussionOur results show that half of the studied population had a low well-being, and also that poor sleep and diet quality are frequent among college students. Interestingly, the fact that poor sleep and diet quality were associated to a lower perception of well-being highlights the importance of promoting sleep hygiene and diet quality among college students as an important strategy to improve well-being and health, even in young adults. In addition, we found that higher sweets and soft-drink consumption were associated to both low well-being perception and poor sleep quality. Hence, it is important to promote healthy habits regarding eating and sleeping well, in order to improve well-being perception among college students.

Vending machines are a common source of low-nutrient, energy-dense snacks, and beverages. Many cities are beginning to adopt healthy vending policies in public areas, but evidence regarding best practices for developing, implementing, and evaluating these healthy vending polices is limited. This study used a mixed-methods, multiple case study design to examine healthy vending policies and initiatives in four cities. Data were collected between August 2017 and December 2017. Research staff worked with a designated contact person to coordinate site visits to each city where observations of the vending machines were conducted. Semistructured interviews were conducted with multiple stakeholders from each site and documents, including policies, vendor contracts, and nutrition standards, were reviewed. The following elements were identified as being essential to a healthy vending policy or initiative: having a champion and support from leadership, internal and external partnerships, and clear communication. Conducting regular compliance checks of the vending machines and the ability to obtain sales data, especially pre– and post–healthy vending policy sales data, continues to be a challenge. Stakeholders across all cities reported that concerns about profit–loss from the vendor and city revenue and procurement departments are barriers to adopting healthy vending policies. More research and evaluation are needed, as results are mixed regarding the impact on overall revenue/profits. This study yielded a variety of resources and “lessons learned” from those who have developed and implemented healthy vending policies and initiatives. This information should be used by others looking to influence healthier snacking behaviors through vending machines.

To better understand the impact of coronavirus disease 2019 (COVID-19) on today's college students and tomorrow's workforce, a survey was administered to 992 U.S. college students (Meanage=22.36 years, SDage=5.24; %female=53.3) between February and June 2021 on academic assessment practices they experienced before and after COVID-19. Females reported greater test anxiety and lower computer self-efficacy; neither varied based on race/ethnicity nor parental education. Most reported a transition to an online modality during the COVID-19 outbreak with a decrease in classroom assessments. Though classroom assessment formats appeared to change minimally, assessment administration changed markedly during the pandemic-affected period. Untimed and open-book assessments became more common. Assessments administered in-class and in-person proctored became less frequent. Interestingly, during spring 2021, as many colleges returned to in-person instruction, open-book, outside of class, and exams proctored online or unproctored remained common, suggesting a persistent shift in assessment administration practices. Students generally did not feel that exams covered any less content, however cheating was a concern. Most indicated it was difficult to concentrate and reported the idea of taking an exam was stressful during the pandemic, though many still believed that it is important to have assessments to demonstrate learning. Some noted they no longer planned to take certain standardized exams (e.g., GRE) given changes in admission requirements of post-baccalaureate academic programs. Some felt deterred from pursuing further education, yet others felt more inclined given perceptions of a highly competitive job market. Implications of these findings are discussed.

Health measures instantiated to reduce the spread of COVID-19 have imposed significant constraints for the population and impacted on drinking habits and mental health. This study longitudinally compared changes in alcohol consumption before and after the COVID-19 outbreak and the impact of sociodemographic and mental health variables on such changes among a community sample of young adults. Data were collected in the context of a larger, ongoing longitudinal study. The sample consisted of 305 young adults from Spain aged between 18 and 26 years (mean age = 21.27, (SD = 2.21), female = 53.4%; college students = 61.6%) who completed first (November-2019 and February-2020; i.e., before the outbreak of COVID-19) and second follow-up questionnaires (March 2021, a year after the COVID-19 outbreak). Alcohol use (quantity and drinking frequency), depression and anxiety symptoms were measured. Quantity and frequency of alcohol use decreased from the pre- to post-COVID-19 period. A decrease in drinking frequency was observed among college students, but not in noncollege peers. Although we found no effect of pre-COVID-19 anxiety on alcohol use changes, those with more depressive symptoms at the pre-COVID assessment were more resistant to decreasing their drinking quantity and frequency after the COVID-19 outbreak. This information will be of value when designing interventions aimed at reducing harmful alcohol use and highlights the role of mental health status when identifying high risk populations of young-adults during this, and future, public health crises.

This paper describes a workshop led by female Engineering Technology students, with support from female faculty, to provide an introduction to Engineering Technology to 4th – 7th grade girls through a series of interactive laboratory experiments. This outreach program was developed to improve attitudes towards science and engineering in middle school-aged girls by making science tangible and fun. The workshop takes place on a college campus and makes use of four different Engineering Technology laboratories. Each lab activity includes a hands-on experiment, beginning with an overview of the engineering technology discipline and a brief description of the theories related to the experiment. The day culminates with a panel session between the participants and the college students. An ancillary outcome of the program is that it serves as a community building event for female Engineering Technology college students. Connections are developed between the students and between students and faculty in the college. The college students gain the satisfaction of influencing the attitudes of participants and develop critical communication skills. An attitude survey given to participants before and after the workshop shows that participation in these workshops results in a more positive attitude towards science and technology. College student volunteers were also surveyed after the workshop to determine the impact of their participation. A full workshop description is given in this paper as well as analysis of the assessment results for the participants and the college students.

Objectives: During the pandemic, quarantine has led to the lockdown of many physical educational institutions. Thus, massive open online courses (MOOCs) have become a more common choice for participants. MOOCs are often flagged as supplemental methods to educational disparities caused by regional socioeconomic distribution. However, dissenters argue that MOOCs can exacerbate the digital divide. This study aimed to compare the participants' performance before and after the outbreak of COVID-19, analyze the impact of the epidemic on online education of cosmetic dermatology from the view of the regional socioeconomic distribution, and investigate whether MOOCs exacerbate the digital divide in the COVID-19 epidemic.Methods: The study was conducted in participants of the MOOC course Appreciation and Analysis of Cosmetics from January 2018 to December 2020. Based on the platform data and official socioeconomic statistics, correlation of multivariate analysis was used to determine the factors related to the number of total participants. A panel regression model and stepwise least squares regression analysis (STEPLS) were employed to further analyze the relationship between GDP, population, number of college students and number of total participants in different years in the eastern, central and western regions of China.Results: The number of total participants in 2020 surged 82.02% compared with that in 2019. Completion rates were generally stable in 2018 and 2019 before the COVID-19 pandemic and significantly decreased in 2020 after the outbreak of the pandemic. GDP was the most important socioeconomic factor that determined the total number of participants and it was positively related to the total number of participants before and after the outbreak of the pandemic. The number of college students was unrelated to the total number of participants before the epidemic, and after the outbreak of COVID-19 in 2020, the number became positively related in all regions of China.Conclusions: This study shows that the epidemic pushes more people to choose MOOCs to study cosmetic dermatology, and online education could exacerbate rather than reduce disparities that are related to regional and socioeconomic status in the cosmetic field in the COVID-19 pandemic.
