Разработаны новые режимы стерилизации компота из груш в стеклотаре СКО 1-82-1000 с использованием высокотемпературных скоростных теплоносителей. Получена математическая модель расчета продолжительности процесса стерилизации в зависимости от параметров теплоносителя. Для получения математической модели использован метод математического планирования эксперимента. Предложен технологический прием ускоренной стерилизации компота из груш в стеклобанке объемом 1 дм3. Разработаны новые режимы тепловой обработки (стерилизации) компота из груш в стеклобанке 1-82-1000 при различных параметрах горячего воздуха и разных начальных температурах продукта, °С: 70, 80, 85 и 90. Наименьшая продолжительность процесса тепловой стерилизации достигнута при скорости теплоносителя 7,5 м/с при начальной температуре продукта 90°С. New modes of sterilization of compote from pears in glass containers of SKO 1-82-1000 using high-temperature high-speed heat carriers have been developed. A mathematical model for calculating the duration of the sterilization process depending on the parameters of the heat carrier is obtained. To obtain a mathematical model, we used the method of mathematical planning of the experiment. A technological method for accelerated sterilization of pear compote in a glass jar with a volume of 1 dm3 is proposed. The research made it possible to develop new modes of heat treatment (sterilization) of compote from pears in a glass jar 1-82-1000 at different parameters of hot air and different initial temperatures of the product, °C: 70, 80, 85 and 90. The shortest duration of the thermal sterilization process is achieved at the heat transfer fluid speed of 7,5 m/s at the initial product temperature of 90°C.

Sterilization process is one of the keys to success in a Palm Oil Mill. In conventional palm oil mills that use horizontal serilization, the fruit is heated in a closed vessel using pressurized steam at a pressure of 40 psi and a temperature of 140oC. The performance parameters that determine the success of the process in intermediate sterilization are pressure, temperature and time as well as steam requirements. This study aims to determine the correlation between the area under sterilization graph represent the measurement of time and pressure from every cycle of sterilization to oil losses in the condensate and empty bunch. The results show that the higher the sterilization graph area which represents pressure and time, the higher the percentage of oil losses in condensate water and the lower the oil losses in empty bunches.

OBJECTIVES: to adapt and validate, by expert consensus, a set of indicators used to assess the sterilization process of dental, medical and hospital supplies to be used in PHC services.METHOD: qualitative methodological study performed in two stages. The first stage included a focal group composed of experts to adapt the indicators to be used in PHC. In the second stage, the indicators were validated using a 4-point Likert scale, which was completed by judges. A Content Validity Index of ≥ 0.75 was considered to show approval of the indicators.RESULTS: the adaptations implemented by the focal group mainly referred to the physical structure, inclusion of dental care professionals, inclusion of chemical disinfection, and replacement of the hot air and moist heat sterilization methods. The validation stage resulted in an index of 0.96, which ranged from 0.90 to 1.00, for the components of the indicators.CONCLUSION: the judges considered the indicators after adaptation to be validated. Even though there may be differences among items processed around the world, there certainly are common characteristics, especially in countries with economic and cultural environments similar to Brazil. The inclusion of these indicators to assess the safety of healthcare supplies used in PHC services should be considered.
