A study involving 96 individually-fed growing-finishing pigs was conducted to determine the effects of high fibre, and pelleted and non-pelleted high fibre-high fat rations, on the performance and carcass characteristics of bacon type pigs.Rate of liveweight gain, and gains adjusted to equal feed intakes, decreased when the fibre level was increased by substituting ground mixed timothy-red clover hay for part of the barley in the control rations. Rate of gain increased in the finishing period with the introduction of 5 per cent of stabilized tallow into the high fibre rations.Pelleting the high fibre-high fat rations had little effect on the performance of the pigs in the growing period, while rate of gain increased in the finishing period as a result of the pelleting process. This increase in rate of gain was associated with increased feed intake.High fibre rations resulted in lower dressing percentage and loin fat thickness, and increased Advanced Registry belly and total scores. The addition of 5 per cent of stabilized tallow to the high fibre rations resulted in increased shoulder and loin fat thickness. Pelleting of the high fibre-high fat rations had no significant effect on carcass measurements, although the pigs fed pelleted rations consumed more feed per day and made more rapid gains in the finishing period than those fed the same rations non-pelleted.

Abstract Four hundred and thirty-two beef steers (346.3 ± 63.7 kg BW) were used to determine the effects of Zn source on feedlot cattle fed ractopamine hydrochloride. Cattle were blocked in groups of 54 by BW and housed in 48 pens containing 9 steers per pen. Pens within a weight block were randomly assigned to treatments in a 2 x 3 factorial arrangement, with factors being: 1) 0 or 30.1 mg of ractopamine HCl/kg DM fed during the final 29 days on feed; and 2) Zn source: 90 mg of supplemental Zn/kg DM from ZnSO4; Zn sulfate (67%) + Zn methionine (33%); and Zn from Zn hydroxychloride, fed through the entire feeding period. Cattle were fed a high concentrate finishing diet for 154 d and slaughtered at a commercial abattoir. Average daily gain, DMI, feed efficiency and carcass characteristics were determined after slaughter. Zinc source had no impact on live animal performance. Cattle fed ractopamine HCl had greater (P < 0.01) final BW, greater (P < 0.001) ADG, improved (P < 0.001) G:F, heavier (P < 0.01) HCW, and larger (P < 0.05) longissimus muscle compared to non-ractopamine supplemented steers. There was a Zn source by ractopamine interaction (P < 0.01) for dressing percentage. Cattle receiving ractopamine HCl with Zn hydroxychloride had a greater dressing percentage (P < 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Cattle receiving ractopamine HCl with Zn sulfate had a lesser dressing percentage (P < 0.05) when compared to ractopamine HCl cattle fed other Zn sources. Additional Zn source by ractopamine HCl interactions were not significant. These data indicate that Zn source has minimal impacts on feedlot steer performance and carcass characteristics when supplemented to cattle receiving 0.0 or 30.1 mg of ractopamine HCl/kg DM.

The present study was conducted to evaluate the effects of replacing corn with brown rice on growth performance, nutrient digestibility, carcass characteristics, and gut microbiota of growing and finishing pigs. A total of 100 growing pigs (23.80 ± 2.96 kg BW; 10 weeks of age) were randomly allotted to 4 dietary treatments (5 pigs/pen; 5 replicates/treatment) in a randomized complete block design (block = BW) as follows: corn-soybean meal basal diet (CON) and replacing corn with 50% (GBR50), 75% (GBR75), and 100% (GBR100) of ground brown rice. Each trial phase was for 6 weeks. During the growing period, there were no differences on growth performance and nutrient digestibility among dietary treatments. Similarly, no differences were found on growth performance, nutrient digestibility, and carcass characteristics of pigs during the finishing period among dietary treatments. As a result of the beta diversity analysis, microbial populations were not clustered between CON and GBR100 during the growing phase, but clustered into two distinct groups of CON and GBR100 during the finishing phase. In conclusion, brown rice can be added to the diets of growing-finishing pigs by replacing corn up to 100% without negatively affecting growth performance of the pigs; additionally, this may have an effect on changes in pig intestinal microbiota if continued for a long time.

One hundred and twenty-four feeder pigs, representing two breed groups (Hampshire × Yorkshire and Yorkshire) were used in three experiments to compare the live performance and carcass characteristics of boars, barrows and gilts fed, from 25 to 92 kg, a 16% protein, barley–soybean meal diet or diets based on a utility grade, soft wheat (Triticum aestivum cv. Pitic 62) with 0, 7½ and 15% field peas (Pisum sativum cv. Century) to provide total protein levels of 13, 14 or 15%. Under conditions of adequate nutrition, boars were superior to barrows in efficiency of feed conversion and estimates of carcass leanness, while gilts were intermediate in feed conversion and equivalent to boars in carcass indices. The amount and composition of the diet consumed had a greater effect upon the relative performance of boars and, to a lesser extent, of gilts than was observed with barrows. In addition, the dressing percentage was consistently lower with boars than with barrows or gilts. Sexual odor or taint was not noticeably present in the carcasses at the packing plant, although there was a tendency for meat from boars on restricted feeding to have a higher moisture and darker lean than that present in carcasses from barrows and gilts. The results also suggested that satisfactory performance of growing–finishing pigs could be achieved with diets based on Pitic 62 wheat using field peas as the sole source of supplementary protein.

ObjectivesThe objective was to evaluate the effect of supplementing α- and γ-tocopherol vitamin E isoforms with corn oil and tallow on carcass characteristics and meat quality of pigs grown to heavier weights (>150 kg).Materials and MethodsIndividually fed pigs (n = 72; 36 barrows, 36 gilts; 28.55 ± 1.16 kg) were randomly assigned to 12 dietary treatments in a 2 × 6 factorial arrangement. Fat treatments were tallow and corn oil (5?). The vitamin E treatments included four levels of α-tocopheryl-acetate (ATA; 11, 40, 100, and 200 ppm) and two levels of mixed tocopherols (primarily γ-tocopherol; 40 and 100 ppm). Pigs were humanely slaughtered at approximately 150 kg. 45 min pH was taken at the 10th rib. After 24 h chill (4°C), carcass measurements were taken (carcass length, backfat depth at first rib, last rib, 10th rib and last lumbar, loin muscle area, and 24 h pH at the 10th rib). In addition, wholesale weights from the Boston butt (IMPS #406), shoulder picnic (IMPS #405), loin (IMPS #412), and belly (IMPS #408) and spareribs were recorded. Furthermore, bellies were divided into eight sections and the average depth was taken at each section and the vertical and lateral belly flex was measured. Drip loss was determined by suspending a 1.3cm chop at 4°C for 48 h and purge loss was determined from approximately 2kg vacuum packaged loin muscle sections at 0, 7, 14, and 30d. Objective (Hunter Lab Colorimeter XE Plus) and subjective (NPPC color, marbling and firmness scores) measurements were taken at the 10th rib. Data analysis were performed in SAS by least squares analysis of variance using the generalized linear model as a randomized complete block design. The individual pig served as the experimental unit and results were reported as least square means.ResultsThere were no differences in dressing percentage, 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, and drip loss between the two vitamin E isoforms. Fat treatments did not affect dressing percentage, 45 min and 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, drip loss as well as objective and subjective color. Although not significant (P = 0.07), pork from the γ-tocopherol pigs had a lower pH than the ATA treatment. The γ-tocopherol supplementation tended to have a lighter subjective color (P = 0.06) as well as increased L*, decreased a*, and increased the hue angle calculations at 7d shelf-life. The belly depth was greater (P = 0.01) along with higher lateral (P < 0.01) and a lower vertical (P < 0.01) flex for pigs fed tallow.ConclusionIn conclusion, feeding tallow to heavy weight pigs (150 kg) could improve belly firmness. Also, α-tocopherol did not improve shelf-life stability and γ-tocopherol could negatively affect subject and objective pork loin color.

The aim of our study was to assess the dynamics of the characteristics in pig carcasses as affected by the season and year of slaughter. A total of 106 027 carcasses of growing-finishing pigs of commercial production, slaughtered in the same abattoir in 2014 and 2015 were included in the study. The carcasses were classified using UltraFOM 200 device, as the characteristics controlled were back-fat thickness at two locations and the depth of m. Longissimus dorsi. These measurements were used to further determine the lean meat percentage. The results of the study showed significant differences in the dynamics of changes of carcass characteristics during the seasons and the years. The highest lean meat percentage was found in summer (56.48%), followed by spring (56.34%), autumn (56.29%) and winter (56.10%). On the other hand, the pigs slaughtered in winter displayed highest carcass weight and back-fat thickness at both locations.
