The research was conducted to study the effect of heat stress on carcass characteristics and meat quality in indigenous sheep. Nine sheep were divided into three groups which were almost similar in age, sex and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure to direct sunlight. During experimental period temperature–humidity index (THI) value was calculated as 27.09 which indicated T4 and T8 groups were subjected to heat stress condition for at least four hours and eight hours respectively every day. Slaughter weight, body length and heart girth had no significant difference among the treatment groups. Dry matter, ash and ether extract had no significant difference (p>0.05) among the treatment groups but crude protein were increased with the increase of heat stress from T0 to T8 group (p<0.05). Drip loss was increased (p<0.05) in non-exposure group than treated groups but there is no significant result (p>0.05) found in pH and cooking loss. Carcass weight and eye muscle area had no significant difference (p>0.05) among the treatment groups but dressing percentage was decreased with the increase of time in heat treated groups (p<0.01). Significant difference (p<0.05) were found in weight of heart, kidney, lung + trachea and pluck between control and heat treated groups. The significant difference (p>0.05) in empty gut was found in gut with content and gut fill in heat treated groups. The present study was aimed to compare growth performance, gonadal development, carcass characteristic and meat quality among SuHuai entire, immunocastrated and surgically castrated female pigs. Eighty 12-week-old SuHuai gilts were randomly assigned to the following four treatment groups with four pigs per pen and five replicate pens per treatment: control (PBS injection), two-dose Improvac regimen (V2), three-dose Improvac regimen (V3) and surgical castration (S). All pigs had ad libitum access to standard diets and water. The performance and occurrence of oestrus were recorded in the trial. Backfat thickness and loin eye muscle area were recorded ultrasonically. The pigs were slaughtered to measure the weight and size of the uterus, and the weight and activity of the ovaries, to determine the serum concentrations of progesterone, and to evaluate the quality of carcass and meat. There were no significant differences in growth performance among the four groups, except for the V2, which had a better average daily feed intake (P &lt; 0.05). Carcass and meat quality were comparable among the four groups; however, the intramuscular fat in control was higher than the V2 and V3 (P &lt; 0.01). Mean ovary and uterus weights and oestrus of female pigs in V2 and V3 were significantly (P &lt; 0.01) lower than in control, but the difference between the V2 and V3 was not significant. The concentration of progesterone in the control was significantly higher than that in the V2, V3 and S (P &lt; 0.05). These results indicated that immunocastration successfully suppressed gonadal development and had no adverse effects on growth performance, or carcass or meat-quality traits in Chinese SuHuai female pigs.

ObjectivesThe objective was to evaluate the effect of supplementing α- and γ-tocopherol vitamin E isoforms with corn oil and tallow on carcass characteristics and meat quality of pigs grown to heavier weights (>150 kg).Materials and MethodsIndividually fed pigs (n = 72; 36 barrows, 36 gilts; 28.55 ± 1.16 kg) were randomly assigned to 12 dietary treatments in a 2 × 6 factorial arrangement. Fat treatments were tallow and corn oil (5?). The vitamin E treatments included four levels of α-tocopheryl-acetate (ATA; 11, 40, 100, and 200 ppm) and two levels of mixed tocopherols (primarily γ-tocopherol; 40 and 100 ppm). Pigs were humanely slaughtered at approximately 150 kg. 45 min pH was taken at the 10th rib. After 24 h chill (4°C), carcass measurements were taken (carcass length, backfat depth at first rib, last rib, 10th rib and last lumbar, loin muscle area, and 24 h pH at the 10th rib). In addition, wholesale weights from the Boston butt (IMPS #406), shoulder picnic (IMPS #405), loin (IMPS #412), and belly (IMPS #408) and spareribs were recorded. Furthermore, bellies were divided into eight sections and the average depth was taken at each section and the vertical and lateral belly flex was measured. Drip loss was determined by suspending a 1.3cm chop at 4°C for 48 h and purge loss was determined from approximately 2kg vacuum packaged loin muscle sections at 0, 7, 14, and 30d. Objective (Hunter Lab Colorimeter XE Plus) and subjective (NPPC color, marbling and firmness scores) measurements were taken at the 10th rib. Data analysis were performed in SAS by least squares analysis of variance using the generalized linear model as a randomized complete block design. The individual pig served as the experimental unit and results were reported as least square means.ResultsThere were no differences in dressing percentage, 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, and drip loss between the two vitamin E isoforms. Fat treatments did not affect dressing percentage, 45 min and 24 h pH, backfat depth, loin muscle area, primal cuts, purge loss, drip loss as well as objective and subjective color. Although not significant (P = 0.07), pork from the γ-tocopherol pigs had a lower pH than the ATA treatment. The γ-tocopherol supplementation tended to have a lighter subjective color (P = 0.06) as well as increased L*, decreased a*, and increased the hue angle calculations at 7d shelf-life. The belly depth was greater (P = 0.01) along with higher lateral (P < 0.01) and a lower vertical (P < 0.01) flex for pigs fed tallow.ConclusionIn conclusion, feeding tallow to heavy weight pigs (150 kg) could improve belly firmness. Also, α-tocopherol did not improve shelf-life stability and γ-tocopherol could negatively affect subject and objective pork loin color.

SUMMARYThe carcass characteristics of young adult female pigs (gilts) slaughtered after weaning their first litters have been investigated using three groups of 19 Landrace × (Landrace×Large White) gilts. In two treatment groups gilts were mated at their pubertal oestrus and suckled their piglets for 5 to 11 and 35 to 42 days respectively. These gilts were slaughtered on average 10 days after weaning. A third control group consisted of unmated gilts slaughtered at 118 kg live weight.There was no significant difference in the killing-out percentage for the three groups. The carcasses of the gilts which farrowed contained significantly less fat (P<0·001) than those of the unmated controls. The carcasses of the farrowed gilts had significantly lighter middle sections (P<0·001) and significantly heavier shoulders (P<0·001) than the controls.Despite the variations in tissue yield and distribution, the yield of prime joints for the gilts which had farrowed was only 0·62 percentage units less than that of the controls.No commercially significant variations between groups in meat quality were observed.

The research was conducted to study the effect of heat stress on behavior, some physiological and blood parameters with nine goats of almost similar in age, sex and weight into three groups. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure. Temperature–humidity index (THI) value was calculated as 28.17 which indicate the experimental animals were in extreme severe heat stress. Skin and rectal temperature had no significant differences among the treatment groups but respiration/panting and pulse rate were increased with the increased of heat stress from T0 to T8 group (P<0.01).  Significant difference was found in standing time and lying time (P<0.01) in experimental groups. There were significant changes (P<0.01) in number of urination and defecation per hour but no significant changes was found in duration per urination in heat treated groups. The amount of RBC, PCV%, Hb%, WBC were increased with the increased of heat stress (P<0.01). Neutrophil, eosinophil, lymphocyte and monocyte numbers increased significantly (P<0.01) in heat treated groups.  It can be concluded that heat stress had significant changes on some behavioral, physiological and blood parameters of goat.DOI: http://dx.doi.org/10.3329/pa.v22i1-2.16465 Progress. The research was conducted to study the effect of heat stress on blood parameters in indigenous sheep. Nine sheep were divided into three groups which were almost similar in age, sex and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure to direct sunlight. During experimental period temperature–humidity index (THI) value was calculated as 27.09 which indicate T4 and T8 groups were subjected to heat stress condition for at least four hours and eight hours respectively every day. The amount of red blood cell (RBC), hemoglobin (Hb%) and packed cell volume (PCV%) were increased significantly (p<0.05) with the increase of heat stress but the amount of white blood cell (WBC) had no significant difference (P>0.05) among the treatment groups. Diet and breed directly affect ruminant carcass traits and meat quality. Therefore, this research aimed to evaluate the effect of silage diet and breed on growth performance, carcass traits, and meat quality of lambs. A total of 28, 3–4 months old female lambs consisting of 14 Dorper lambs (DP) and 14 Thin-tailed Han lambs (TH) were allocated in a 2 × 2 factorial design and offered two experimental diets (sweet sorghum silage: SS; whole-crop corn silage: WS) for 90 days. Lambs fed the WS diet had a higher growth performance (p < 0.01), intramuscular fat content (p < 0.05), and bright meat color (p < 0.01) than lambs fed the SS diet. The lambs fed the SS diet showed a higher polyunsaturated fatty acid (PUFA) content than the lambs fed the WS diet (p < 0.01); there was no significant difference in growth performance and carcass characteristics between DP and TH lambs (p > 0.05). The meat of the DP lambs showed lower values of initial pH, shear force, lightness (L*), redness (a*), and saturated fatty acid (SFA) content (p < 0.05). The lamb breed influenced fewer variables of growth performance and carcass characteristics compared to the diet. The lambs fed the SS diet had higher nutritional quality meat than lambs fed the WS diet.

The aim of this study was to evaluate the effects of native grass on growth performance, carcass characteristics, and meat quality of Mongolian lambs fed Inner Mongolia native grass in three forms: grass, hay, and hay with concentrate (HC). Sixty Mongolian noncastrated male lambs, in good health and with the same age (6 mo) and similar body weights (mean, 28.63 ± 0.19 kg), were randomly divided into three treatments. There were four replicates in each treatment, with five lambs in one pen as a replicate. Compared with the HC group, the intake of the grass group was higher (P < 0.05) and that of the hay group was lower (P < 0.05). The hay group had a gain of −58.67 g d−1, compared with 42.33 g d−1 for the HC group and 80.00 g d−1 for the grass group. The carcass weight, net meat mass, loin muscle area, and fat thickness (a measure of fat tissue thickness) were greater in the grass and HC groups than in the hay group (P < 0.05). Compared with the hay group, the protein and calcium contents, marbling score, and water loss rate were greater in the grass and HC groups (P < 0.05), whereas the fat, phosphorus, cholesterol contents, and b* score were lower for the latter groups (P < 0.05). These results suggest that feeding of native grass hay with concentrate could improve the growth performance and meat quality of Mongolian lambs and achieve results similar to those observed in grass-fed lambs.

Background and Aim: Black cumin meal (BCM) is the principal by-product that can be obtained from black cumin seed (Nigella sativa L) after the oil is removed from the fruit and represents 70-75% of the fruit weight. The aim of this experiment was to assess the influence of feeding BCM on the carcass characteristics and meat quality of growing lambs. Materials and Methods: Twenty-four Awassi lambs were randomly divided into two dietary treatments. The lambs were penned individually in single pens and provided access to ad libitum feed and water. The dietary treatments were no BCM (control [CON]; n=12) or 150 g BCM/kg (BCM 150; n=12) of dietary dry matter. Results: Lambs fed BCM had greater (p≤0.01) fasting live BW, and hot and cold carcass weights. Leg fat and eye muscle depth were lower (p≤0.05) in CON versus BCM lambs. Meat whiteness (L*), redness (a*), and yellowness did not differ between lambs fed the two diets. Conclusion: The inclusion of BCM improves lamb carcass characteristics, but does not affect lamb meat quality.

The research was conducted to study the effect of heat stress on blood parameter, carcass characteristics and meat quality of the Black Bengal goat. Nine goats were randomly and equally divided into three groups having almost same age and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) of heat exposure. The T0 group were not exposed to heat stress, the T4 and T8 group were exposed to heat by keeping them at outside for 4 (four) hours and 8 (eight) hours from 9.00 AM to 1.00 PM and from 9.00 AM to 5.00 PM, respectively. Temperature–humidity index (THI) was calculated as 26.88 indicating all the experimental animals were in extreme severe heat stress. The blood parameter such as RBC, PCV%, Hb%, WBC was significantly (p<0.01) higher in T8 group than those of T4 and T0 groups. There was also significant (p<0.05) effect of heat stress on pH of the meat from different groups of the Black Bengal goats. By-products e.g., blood, pluck, spleen and kidney, and cooking loss were significantly (p<0.01) increased with the increase of the heat, but no significant differences were observed for pre-slaughter parameters, carcass weight, drip loss, dressing percentage, and proximate composition of the goat meat for DM, CP and Ash, while the EE significantly (p<0.05) differed among the heat treated groups. Heat stress significantly affected the blood parameter, cooking loss, pH, by-product of goats rather than non heat stressed group.
