Contemporary food systems face several paradoxes regarding equity and sustainability. Considering food production—an issue that simultaneously affects both the supply (production) and demand (consumption) sides—several cities have begun to implement new strategies, called Urban Food Policies. These approaches aim to address the various challenges presented by food system failures, while also involving the existing network of grassroot initiatives. For this reason, these have established Food Policy Councils, arenas where institutions can engage with supply chain actors and food activists, deciding through the processes of participatory democracy their Urban Food Strategies. This article investigates the evolution of a new Urban Food Strategy in a middle-sized Italian town, Trento. Despite a growing number of case studies discussing the promises and problematic aspects of UFS, empirical research and analysis tend to overlook the role of the context in which these processes are embedded and how the system of political, economic, cultural, and environmental opportunities weigh upon the success of these policies. The paper draws upon a multi-method qualitative approach combining in-depth interviews, document analysis, and direct observations of the construction process of an Urban Food Strategy for the city of Trento.

This paper utilises the ‘sustainable innovation journeys’ concept to trace how people organise and design urban food initiatives and influence city-region food policy. We evaluate whether designs succeed or fail and monitor the exchange of ideas that takes place between stakeholders. Tracing these interactions reveals the transformative potential of innovative projects, particularly if the food system changes they bring to the fore are aligned with policy interests. Three case studies provide on-the-ground insights to assess how small and medium-sized enterprises at the micro-level induce sustainability shifts. The case studies are businesses in the city-regions of Rotterdam, The Netherlands (urban farm and circular food economy); Vigo, Spain (food, forest and multi-functional land use); and Zurich, Switzerland (organic food and short supply chains). Each initiative was studied in-depth over a two-year period, with follow-up analysis for a further four years to monitor change over time (2013–2018). The cases promote the adoption of micro-level innovation practices: locally designed transition pathways that bring the benefits of change to the city-region (i.e. from the micro-level initiative to meso-level policy). The analysis highlights the importance of ‘soft change’. This can be something as simple as visiting an inspiring urban food initiative and meeting with stakeholders to generate mutual understanding, from where interests align to influence food chain practices and policy. Soft changes act as ‘seeds of transition’ for a shift towards more sustainable urban food systems, but we observe too potentially negative impacts due to lack of alignment at the micro- (initiative) or meso- (city-region) levels.

Abstract Agri-food systems include branching ramifications, which connect in the upstream the input suppliers with farmers, and downstream farmers, processors, retailers and consumers. In the last decades, at the level of the regions, food systems have undergone rapid transformation as a result of technological progress. The paper analyzes the changes made to the structure, behavior and performance of the agri-food system and the impact on farmers and consumers. Also, the role of agricultural research as a determinant factor of transformation of agri-food system is analyzed. The research objective is to develop technologies that cover the entire food chain (from farm to fork) and meet the specific requirements of consumers (from fork to farm) through scientific solutions in line with the principles of sustainable agriculture and ensuring the safety and food safety of the population.

Food policy councils (FPCs) are one form of community coalition that aims to address challenges to local food systems and enhance availability, accessibility, and affordability of healthy foods for local residents. We used data from the 2014 National Survey of Community-Based Policy and Environmental Supports for Healthy Eating and Active Living, a nationally representative survey of US municipalities (n = 2029), to examine the prevalence of FPCs and cross-sectional associations between FPCs and four types of supports for healthy food access (approaches to help food stores, practices to support farmers markets, transportation-related supports, and community planning documents). Overall, 7.7% of municipalities reported having a local or regional FPC. FPCs were more commonly reported among larger municipalities with ≥50,000 people (29.2%, 95% Confidence Interval (CI): 21.6, 36.8) and western region municipalities (13.2%, 95% CI: 9.6, 16.8). After multivariable adjustment, municipalities with FPCs had significantly higher odds of having all four types of supports, compared to those without FPCs (adjusted odds ratio (aOR) range: 2.4–3.4). Among municipalities with FPCs (n = 156), 41% reported having a local government employee or elected official as a member, and 46% had a designated health or public health representative. Although FPCs were uncommon, municipalities that reported having a local or regional FPC were more likely to report having supports for healthy food access for their residents.

Policy plays significant role in defining the food system of any country, and a sustainable food system is necessary for food security. This chapter maps out the causal interactions between food systems, food security and policy, and the challenges in transition to a sustainable food system while respecting the rights of all people to have access to adequate food in Nigeria. Explicit, rigorous, and transparent literature search was undertaken and many articles were assessed and reviewed. Although the results established a mutual relationship between food system and food security, existing literature have widely failed to take interactions between food systems, food security and policy into account. While food production is used as an entry point to improving food system sustainability, the quest for food security are undermining transition towards sustainable food systems. It was found that without right policies in place, it may be difficult to have food systems that are sustainable and ensure food security. This chapter provides a useful contribution to policy, and research on transitions towards sustainable food system. Any policy intervention to address one part of the food systems will impact on other parts and will determine whether a country is food secure or not. Enabling policy environment is therefore essential in ensuring a sustainable food system and for the attainment of food security.

Parks and green spaces have been allocated for city residents to offer them healthier natural environments. However, people living in cities may have less opportunity to engage with the natural environment since parks seem to be passive locations of activity. We investigated how to proactively enhance the attraction of green space to improve people's health. First, we surveyed how 683 city residents were engaged in physical activities. From them, 30 people were recruited for depth interviews. Results showed that the park environment and the health activities that feature ‘inner-attraction' could enhance the frequency and persistence of the city residents to engage in healthy activities. We also evaluated the service experience and attraction of 40 users in a 3-month program in the Daan Forest Park of Taipei City in Taiwan. Using the culture probes method, we found that the experience cycle and the use of social media enhanced the park's inner and inter attraction, and that the role of the park was transformed from a passive green space provider to an active service operator.

This special issue aims to develop how Diversified Farming Systems (DFS) may contribute to adaptive capacity in order to confer resilience to agricultural systems. In this perspective article, I argue that a framework for DFS and adaptive capacity must adequately contend with the role of farmland tenure on the shape of food systems to be both internally coherent and socially redistributive. Yet, both DFS and adaptive capacity scholarship deemphasize or mischaracterize the role of farmland tenure in favor of ecosystem dynamics. In this paper, I bring together lessons from the agrarian change literature and established critiques of resilience thinking to demonstrate core problems with a framework aimed at linking DFS to adaptive capacity without adequately addressing the role of farmland tenure. Namely, applying resilience thinking as a framework to understand food systems change prioritizes concern over final “states” or processes of farming systems and may ignore who has the power to adapt or who derives benefits from adaptation. The critiques of resilience thinking inform that the result of this apolitical elision is (1) entrenchment of neoliberal logics that place responsibility to cultivate adaptation on individual farmers and (2) provisioning of legitimacy for land tenure systems that can most readily adopt DFS, without understanding how well these systems distribute public benefits. Resilience reformers call for ways to include more power aware analysis when applying resilience thinking to complex socio-technical systems. I suggest that centering the role of land tenure into the frameworks of DFS and adaptive capacity provides a lens to observe the power relations that mediate any benefits of agricultural diversification. Integrating analysis of the social and legal structures of the food system into the DFS for adaptive capacity formulation is a crucial step to transforming resilience thinking from an apolitical tool to transformative and power-aware applied science.

Urban and peri-urban forestry has emerged as a complementary measure to contribute towards eliminating urban hunger and improved nutritional security. However, there is scanty knowledge about the composition, diversity, and socioeconomic contributions of urban food trees in African cities. This paper examines the diversity and composition of the urban forest and food trees of Accra and sheds light on perceptions of urbanites regarding food tree cultivation and availability in the city. Using a mixed methods approach, 105 respondents in six neighborhoods of Accra were interviewed while over 200 plots (100-m2 each) were surveyed across five land use types. Twenty-two out of the 70 woody species in Accra have edible parts (leaves, fruits, flowers, etc.). The food-tree abundance in the city is about half of the total number of trees enumerated. The species richness and abundance of the food trees and all trees in the city were significantly different among land use types (p < 0.0001) and neighborhood types (p < 0.0001). The diversity of food-bearing tree species was much higher in the poorer neighborhoods than in the wealthier neighborhoods. Respondents in wealthier neighborhoods indicated that tree and food-tree cover of the city was generally low and showed greater interest in cultivating food (fruit) trees and expanding urban forest cover than poorer neighborhoods. These findings demonstrate the need for urban food policy reforms that integrate urban-grown tree foods in the urban food system/culture.

Abstract More and more cities develop urban food strategies (UFSs) to guide their efforts and practices towards more sustainable food systems. An emerging theme shaping these food policy endeavours, especially prominent in North and South America, concerns the enhancement of social justice within food systems. To operationalise this theme in a European urban food governance context we adopt Nancy Fraser’s three-dimensional theory of justice: economic redistribution, cultural recognition and political representation. In this paper, we discuss the findings of an exploratory document analysis of the social justice-oriented ambitions, motivations, current practices and policy trajectories articulated in sixteen European UFSs. We reflect on the food-related resource allocations, value patterns and decision rules these cities propose to alter and the target groups they propose to support, empower or include. Overall, we find that UFSs make little explicit reference to social justice and justice-oriented food concepts, such as food security, food justice, food democracy and food sovereignty. Nevertheless, the identified resources, services and target groups indicate that the three dimensions of Fraser are at the heart of many of the measures described. We argue that implicit, fragmentary and unspecified adoption of social justice in European UFSs is problematic, as it may hold back public consciousness, debate and collective action regarding food system inequalities and may be easily disregarded in policy budgeting, implementation and evaluation trajectories. As a path forward, we present our plans for the RE-ADJUSTool that would enable UFS stakeholders to reflect on how their UFS can incorporate social justice and who to involve in this pursuit.

The purpose of this research is to understand the role of leisure in shaping the reality of hospitalized patients in Brazil. The methodology combines both bibliography and field research techniques performed in internment units of three hospitals in the city of Belo Horizonte. The field research consisted of direct observations and semistructured interviews with 30 volunteers, among hospitalized subjects, companions, and health professionals. The data were analyzed qualitatively through iterative analysis. Results show that leisure activities can improve the health status of hospitalized subjects. Its role in the hospital is mainly related to compensatory and utilitarian functions, with contributions to rest, pain, and suffering reduction, expansion of friendship network, creativity, ability of doing critics, of educating sensitivity, through the dissemination of content and cultural practices among the subjects.
