In this study, the inclusion complexes of lycopene with β-cyclodextrin (β-CD) were prepared by the precipitation method. Then the inclusion complexes were characterized by the scanning electron microscopy (SEM), ultraviolet-visible spectroscopy (UV), microscopic observation, liquid chromatography, differential scanning calorimetry (DSC) and phase-solubility study. Moreover, the stability and antioxidant activity were tested. The results showed that lycopene was embedded into the cavity of β-CD with a 1:1 stoichiometry. Moreover, the thermal and irradiant stabilities of lycopene were all significantly increased by the formation of lycopene/β-CD inclusion complexes. Antioxidant properties of lycopene and its inclusion complexes were evaluated on the basis of measuring the scavenging activity for 1,1-diphenyl-2-picrylhydrazyl (DPPH), hydroxyl and superoxide anion radicals. The results showed that the scavenging activity of DPPH radicals was obviously increased by the formation of the inclusion complex with β-cyclodextrin at concentrations of 5–30 μg/mL, however, some significant positive effects on the scavenging activity of hydroxyl and superoxide anion radicals were not observed and the reasons are worth further study.

To address the problem of limited application of natural SOD, the development of SOD mimic enzymes is of great importance for bioantioxidation. Herein, we report on a new type of biopolymer antioxidant with excellent scavenging activity for O2•-, keratin-glycine metal complexes (FK-GlyM, M = Zn, Cu, Mn, Ni). They are prepared by feather keratin firstly combined with glycine and then metal ions. Using FT-IR, TG, CD, and SEM, the performance of the obtained complexes (FK-GlyM) for scavenging O2•- is analysed and investigated. Importantly, the scavenging activity of FK-GlyCu is excellent in all FK-GlyM, and FK-GlyCu60 has the most excellent anti-O2•- activity in all FK-GlyCux, of which EC50 and degree of simulation were, respectively, up to 4.5×10-3±0.0012 μmol/L and 911.1% compared with nature Cu, Zn-SOD. Finally, its mechanism was also discussed. In summary, this method about the simulation strategies will provide a novel idea for exploiting new-type biocompatible and highly reactive antioxidants.

The involvement of free radicals appears to be the feature of most human diseases. The general mechanism of cell damage involves the excessive uncontrolled production of reactive oxygen species resulting in the intensification of lipid peroxidation processes and damaging of macromolecules. These processes are generally accompanied by a decrease in the concentration and/or activity of natural antioxidants. Moreover, the exhaustion of the antioxidant capacity of the organism is among the key reasons leading to the development of pathological states. The maintenance of the prooxidant-antioxidant balance by the systematic use of products or dietary supplements, the components of which exhibit antioxidant activity, can be considered as a part of a strategy for the prevention and control of diseases associated with oxidative stress. The current work aims to study the free radical scavenging activity of two experimental poly-component complexes. Antioxidant properties of complexes were determined in experiments in vitro. The estimation of total antioxidant activity, nitric oxide, hydrogen peroxide radical, and superoxide anion scavenging activity was performed. The results revealed that both complexes have the potentials to prevent the formation of free radicals and can be used as agents with antioxidant properties. It was established that the effect of complex 1 and 2 is complex and first of all aimed at the prevention of the formation of dangerous free radicals by reducing the level of hydrogen peroxide. The additional mechanism involves the chelating of metal ions, in particular ferrous iron. The antioxidant ability exhibited by complex 1 was found to be higher than the total antioxidant activity of complex 2. Complex 1 was more effective in the ability to neutralize superoxide anion-radicals while complex 2 showed a high percentage inhibition of Fe2+-induced lipid peroxidation.

Antioxidant and free radical scavenging activity of methanol, ethanol, ethyl acetate and chloroform extracts of aerial parts of Lamium purpureum L. was determined by DPPH, ABTS, FRAP and TRP assays. Contents of flavonoids and phenols were also investigated. The total phenolic content in the extracts, determined using Folin?Ciocalteu assay, ranged between 8.57 to 128.00 mg GAE/g d.e. while concentrations of flavonoids in the extracts varied from 24.20 to 39.80 mg QuE/g d.e. The highest phenolic content was found in methanol extract (128.00 mg GAE/g d.e.). The highest content of total flavonoids was identified in the methanol extract (39.80 mg QuE/g d.e.) and the lowest was in the chloroform (24.30 mg QuE/g d.e.). DPPH scavenging of the extracts was determined and obtained IC50 values ranged from 0.12 to 3.12 mg/mL of solution. The values of ABTS radical scavenging activity ranged from 0.35 to 1.80 mg AA/g. The highest ABTS antiradical activity was registered for methanol extract. The FRAP value was found within the range 0.08 to 1.04 ?mol Fe/mg. The best radical scavenger was methanol (1.04 ?mol Fe/mg). In reducing power assay different extracts of L. purpureum showed increasing of activity with increased concentration, and all extracts possessed substantial dose dependent antioxidant activity. The best reducing capacity was obtained with methanol extract of L. purpureum (0.0132 mg AA/mL). The results in this study confirmed that L. purpureum possesses moderate antioxidant properties.
