This study was conducted to determine the optimal blooming time in beef muscles based on ΔE, and to analyze the effects of muscle type and ageing time on beef color and blooming. Beef color was determined on freshly cut longissimus lumborum (LL, n = 8) and semimembranosus (SM, n = 8) muscles on days 1, 9, and 14 of ageing during 60 min blooming at 5 min intervals. It was found that ΔE0, representing the difference in color between freshly cut muscles and subsequently analyzed samples, supported the determination of the optimal blooming time, which varied across ageing times (15, 20, 25 min for the LL muscle, and 10, 15, 20 min for the SM muscle on days 1, 9, and 14 of ageing, respectively). Beef color was affected by both muscle type and ageing. The values of color parameters increased between days 1 and 9 of ageing. The results may have practical applications because beef should be presented to consumers and restaurant owners approximately 25 min after cutting, when its color has fully developed.

AbstractThe study was undertaken to investigate the effect of muscle, thermal treatment, and ageing on the beef quality. The longissimus lumborum (LL) and semimembranosus (SM) muscles were taken from Holstein–Friesian young bull carcasses then subjected to steam-cooking and sous-vide after 9 and 14-d wet ageing. It was shown that characteristics of cooked beef were the most significantly affected by thermal treatment method. Using sous-vide provided beef with lower shear force and cooking loss values, darker, and more red colour and more beneficial sensory quality. LL and SM muscles showed a similar quality when subjected to the same thermal treatment method after the same ageing time. It is possible to obtain juicy and tender beef from Holstein–Friesian bulls after 9-d ageing and sous-vide treatment.

Objective: This study was aimed to investigate the muscle-specific beef color stability at normal and high ultimate pHs.Methods: The impact of muscle (Longissimus lumborum [LL] vs psoas major [PM]) and pH (normal ultimate pH [Np] vs high pH dark cutting beef [Hp]) on color stability, indicated by basic color traits, metmyoglobin reducing activity (MRA) and oxygen consumption (OC), as well as the lipid oxidation, were determined over 7 days of display at 4°C.Results: Hp-LL had the highest pH (6.92), followed by Hp-PM (6.01), Np-PM (5.76), and Np-LL (5.52). Hp-LL had increased (p<0.05) a<sup>*</sup>, chroma and % oxymyoglobin during display. Hp-LL also had the highest metmyoglobin (MMb) reducing activity and OC among all the samples, thus, the greatest color stability, although very dark throughout storage, with lowest values for lightness (L<sup>*</sup>) and yellowness (b<sup>*</sup>). Np-LL also exhibited relatively high color stability, as a result of its lower % MMb and OC and higher MRA than psoas muscle samples. The 0.2 unit difference of the pH between Hp and Np psoas muscle, resulted in the difference of the color intensity, not the color stability. Interestingly, high pH psoas muscle (Hp-PM) did not have better color stability than Np-PM, and in fact had lower color stability than even Np-LL. The similar level of OC and lipid oxidation cannot explain the difference in color stability between Hp-PM and Np-LL.Conclusion: The Hp does not always show better color stability compared with Np beef, which depends on the muscle type. The balance of MRA and OC is important to keep the color in great intensity and stability in the meantime.

Picture fuzzy sets, which are the extension of intuitionistic fuzzy sets, can deal with inconsistent information better in practical applications. A distance measure is an important mathematical tool to calculate the difference degree between picture fuzzy sets. Although some distance measures of picture fuzzy sets have been constructed, there are some unreasonable and counterintuitive cases. The main reason is that the existing distance measures do not or seldom consider the refusal degree of picture fuzzy sets. In order to solve these unreasonable and counterintuitive cases, in this paper, we propose a dynamic distance measure of picture fuzzy sets based on a picture fuzzy point operator. Through a numerical comparison and multi-criteria decision-making problems, we show that the proposed distance measure is reasonable and effective.

Bio-inspired functional surfaces attract many research interests due to the promising applications. In this paper, tunable adhesion of a bio-inspired micropillar arrayed surface actuated by a magnetic field is investigated theoretically in order to disclose the mechanical mechanism of changeable adhesion and the influencing factors. Each polydimethylsiloxane (PDMS) micropillar reinforced by uniformly distributed magnetic particles is assumed to be a cantilever beam. The beam's large elastic deformation is obtained under an externally magnetic field. Specially, the rotation angle of the pillar's end is predicted, which shows an essential effect on the changeable adhesion of the micropillar arrayed surface. The larger the strength of the applied magnetic field, the larger the rotation angle of the pillar's end will be, yielding a decreasing adhesion force of the micropillar arrayed surface. The difference of adhesion force tuned by the applied magnetic field can be a few orders of magnitude, which leads to controllable adhesion of such a micropillar arrayed surface. Influences of each pillar's cross section shape, size, intervals between neighboring pillars, and the distribution pattern on the adhesion force are further analyzed. The theoretical predictions are qualitatively well consistent with the experimental measurements. The present theoretical results should be helpful not only for the understanding of mechanical mechanism of tunable adhesion of micropillar arrayed surface under a magnetic field but also for further precise and optimal design of such an adhesion-controllable bio-inspired surface in future practical applications.

This research paper describes the effect of partially replacing wheat with maize grain and canola meal on milk production and body condition changes in early lactation Holstein-Friesian dairy cows consuming a grass silage-based diet over an 83-d period. Two groups of 39 cows were stratified for age, parity, historical milk yield and days in milk (DIM), and offered one of two treatment diets. The first treatment (CON) reflected a typical diet used by Western Australian dairy producers in summer and comprised (kg DM/cow per d); 8 kg of annual ryegrass silage, 6 kg of crushed wheat (provided once daily in a mixed ration), 3·6 kg of crushed lupins (provided in the milking parlour in two daily portions) and ad libitum lucerne haylage. The second treatment diet (COMP) was identical except the 6 kg of crushed wheat was replaced by 6 kg of a more complex concentrate mix (27% crushed wheat, 34% maize grain and 37% canola meal). Lucerne haylage was provided independently in the paddock to all cows, and no pasture was available throughout the experiment. The COMP group had a greater mean overall daily intake (22·5vs20·4 kg DM/cow) and a higher energy corrected milk (ECM) yield (29·2vs27·1 kg/cow;P= 0·047) than the CON cows. The difference in overall intake was caused by a higher daily intake of lucerne haylage in COMP cows (4·5vs2·3 kg DM/cow). The CON group had a higher concentration of milk fat (42·1vs39·3 g/kg;P= 0·029) than COMP cows. Milk protein yield was greater in COMP cows (P< 0·021); however, milk fat yield was unaffected by treatment. It is concluded that partially replacing wheat with canola meal and maize grain in a grass silage-based diet increases voluntary DMI of conserved forage and consequently yields of ECM and milk protein.

ObjectivesTo compare lipid (malondialdehyde [MDA], 4-hydroxy-2-nonenal [HNE]) and protein (carbonyl content [CAR]) oxidation products and determine their influence on color stability in two bison muscles (longissimus lumborum [LL; color stable] and psoas major [PM; color labile]).Materials and MethodsA total of 10 longissimus lumborun (LL) and 10 psoas major (PM) from five A1 grade bison carcasses were obtained from a commercial slaughter plant within 48 h post-mortem. From each muscle, a 10-cm thick piece was removed and subsampled for evaluation of pH, MDA (by thiobarbituric acid assay), HNE (by ELISA) and CAR (by 2,4-dinitrophenylhydrazine). These measurements allowed the establishment of a baseline for the different oxidation products. The remainder of the muscles were cut into two equal portions, and each portion was vacuum-packaged and assigned to an ageing period of 7 and 14 d at 2°C. At the end of each ageing period, each muscle portion was removed from their packages, pH measured, and steaks obtained for sensory (muscle and discoloration scores) and instrumental color measurements (L*, a* and b*) over 5 d of retail display, and for estimation of MDA, HNE and CAR. After 5 d in retail display and following color and pH measurements the steaks were removed and collected for MDA, HNE and CAR determination. Data were analyzed as a completely randomized design with a split-split plot arrangement. Additionally, correlation and regression analysis were performed to identify the influence of the measured attributes on color.ResultsRegardless of the ageing time, LL showed greater redness and lower surface discoloration by instrumental (a* value; P = 0.04) and sensory (P < 0.01) color evaluation than PM at the end of the retail display. Furthermore, LL exhibited lower MDA, HNE and CAR content compared to PM (P < 0.05). A three-way interaction (muscle × ageing time × retail day display) was detected on MDA content, where PM presented a higher level of MDA with increasing ageing time and retail display than LL (P = 0.02). The pH was not different between LL and PM (P > 0.05) steaks.In both muscles, Pearson (r) and Spearman (rs) correlation coefficients indicated that MDA was the oxidation compound showing the highest correlation to a* (r = –0.78; P < 0.01) and discoloration (rs = 0.81; P < 0.01) scores, followed by a moderate correlation with HNE and CAR (r or rs < 0.7; P < 0.01). The pH did not exhibit correlation with color traits, except for lightness, in both muscles. For the stepwise regression analysis, the main variable entered into the equation for predicting a*, color and discoloration score in PM muscle was MDA with an R2 of 0.72, 0.75 and 0.78, respectively, while for LL muscle, MDA presented an R2 of 0.62, 0.68 and 0.66;, respectively. The pH, HNE and CAR only explained an additional 2% of the variation in those attributes.ConclusionThe results of color attributes corroborated that bison LL is a color-stable muscle due to the lower level of protein and lipid oxidation products developed during storage and retail display compared to PM muscle, which is considered color-labile muscle. The MDA seemed to have remarkable importance in the color deterioration than HNE and CAR, particularly in bison PM muscle.

Abstract The use of fresh water in the textile wash-off process is becoming more expensive day by day due to declining water levels in the region. In this study, the potential of using Fenton oxidation in wash-off cotton reactive dyeing was investigated. The spent wash-off wastewater from one dyeing was first treated with Fenton oxidation, and then reused in several washing-offs employing widely used reactive dyes, C.I. Reactive Yellow 145, C.I. Reactive Blue 21, and C.I. Reactive Red 195. Experimental results showed that at acidic pH (3) using optimized quantities of FeSO4 and H2O2, Fenton process yielded a significant reduction (90–95%) of color in 30 minutes of treatment time. New washing-offs were then carried out in Fenton decolorized wash-off wastewater, and dyed cotton fabric samples were subjected to quality evaluations in terms of color difference properties (ΔL*, Δc*,Δb*, Δa*, ΔE*cmc) and wash fastness properties. This study concluded that after Fenton oxidation, treated liquor can be effectively reused subsequent washing-offs without compromising fabric quality parameters as ΔE*cmc was less than 1, and washing and crocking was also in the range of 4.5–5 which is commercially acceptable. Moreover, the difference in color strength in terms of k/s was also negligible.

 Background: Color accuracy plays a major role in creating an esthetic prosthesis. Photos taken with DSLR cameras have been the most frequent means of recording and transferring the color of teeth. Mobile phone cameras are emerging as a popular alternative to DSLR cameras due to its convenience. Our aim was to compare the color difference (ΔE) between the pictures taken with DSLR cameras and mobile cameras with and with­out using flash. Methods: Photos of right maxillary central incisors of patients (n=60) were taken with DSLR camera and mobile camera with and without using flash. The pictures were standardized with gray card and processed in Adobe Photoshop Lightroom CC software and the L*a*b* values of the pictures were compared to find the difference in color. Results: The percentage of agreement (ΔE≤2.7) for the difference of color between DSLR camera and mobile phone cameras without using flash (ΔE1) was 3.3% and with using flash (ΔE2) was 1.7%. The coefficient of agreement (using Kappa coefficient) between (ΔE1) and (ΔE2) showed total disagreement (kappa value =-.02). The mean values of ΔE1 was (8.3±3.3) and ΔE2 was (7.23±2.4). Conclusions: It was concluded that the color of mobile camera with or without using flash could not be considered as an acceptable method of recording color of teeth.

AbstractElectrode materials consisting of Cu, Ti and Ni were formed on Bi-doped n-type Mg2Si by means of a monobloc plasma-activated sintering (PAS) technique. Due to the difference in thermal expansion coefficients between Ti and Mg2Si, rather high residual thermal stresses gave rise to the introduction of cracks, which were mainly located in the Mg2Si layer, when Ti was used as the electrode material. In the case of the Cu electrodes, monobloc sintering could not be performed in a reproducible manner because Cu melts abruptly and effuses at around 973K, which is 100 K lower than the sintering temperature that is required for Mg2Si of good crystalline quality. When compared with the results for Cu and Ti, the monobloc PAS process for Ni was both stable and reproducible. The room-temperature I-V characteristics of Ni electrodes were considered to be adequate for practical applications, with durable Mg2Si-electrode junction properties being realized at a practical operating temperature of 600 K with ΔT = 500 K. The highest open circuit voltage (VOC) observed was 41 mV at ΔT = 500 K (between 873 K and 373 K) for Ni electrodes fabricated using the monobloc PAS process. The voltage (V) and current (I) values with a 10 Ohm load were ∼ 48 mV and ∼ 2 mA at ΔT = 500 K.
