This study evaluated the effect of upgrading the quality of maize stover (MS) on milk nutritive value. The study involved feeding MS improved using urea (U), chopped groundnut stover (cGS), chopped soybean stover (cSS), mineralized groundnut stover solution (mGS) and mineralized soybean stover solution (mSS) to lactating dairy cows. The feeding trial involved twelve (12) dairy cows in their second parity. Effect of supplementation with MS improved with U, cGS, cSS, mGS and mSS on milk quality was evaluated following on-station feeding trials. The study involved 22 factorial experiments within a Completely Randomised Design (CRD). Milk samples were analysed for protein, lactose, fat and solid not fat (SNF). Mean milk protein levels ranged from 3.52mg/ml to 3,73mg/ml (s.e=0.03) for milk from cows fed on MS improved using cGS and mGS respectively. Protein and Lactose were observed to be the least variable (3.64g/ml ±0.12, and 5.24g ±0.24 respectively). Average milk fat content was highest (4.78%, se=0.52) in milk from cows fed on UET treated MS and lowest (3.43%, se=0.52) in milk from cows fed on gGS protein based MS. Within legume type milk fat was higher(4.75%±1.99) in milk from cows fed on MS blended with mGS than that in milk from cows fed on MS improved with cGS (3.43%±1.99). Similar result was observed in milk fat from cows fed on MS improved with the use of soybean. Lactose in milk from cows fed on UET treated MS was highest (5.51g, se=0.061) and lowest (5.10g, se=0.061) in milk from cows fed on MS blended with cGS. Milk from cows fed on MS improved with mGS was higher (9.61p/cwt, se=0.14) in SNF and lowest (8.88p/cwt, se=0.14) in milk from cows fed on MS with cGS. The milk density values ranged from 32.65sg, se=0.53 for milk from cows fed on UET treated MS to 30.42sg, se=0.053 for milk from cows fed on MS blended with cGS. Milk components were higher when cows were fed on MS improved using mineralized legume stover solutions.

Milk fat depression (MFD) syndrome, a consistent decrease in milk fat content, is related to important changes in fatty acid composition due to feed imbalances and the consequent ruminal metabolism alteration. Milk produced in two different farming systems was compared: Holstein Friesian fed with unified in intensive production and Podolica raised on a pasture in an extensive system. Milk chemical characteristics and fatty acid composition were determined comparing milk with a normal fat level (>3.8%) to milk with a low fat level (<3.2%) in each breeding system. Holstein Friesian milk showed the decrease in trans-11 and increase in trans-10 C18:1 (shift from trans-11 to trans-10 C18:1) in low fat with respect to normal fat milk with a consequent decrease in the trans-11/trans-10 C18:1 ratio. Even conjugated linoleic acid (CLA), C18:2 cis-9, trans-11, was lower while CLA trans-10, cis-12 was higher in low fat milk than in normal fat milk from Holstein Friesian. These changes, that are indicators of MFD syndrome, were not found in Podolica milk between fat levels. Holstein Friesian milk showed less short-chain fatty acids (9.48 % vs. 11.05%, p < 0.001), trans vaccenic acid (C18:1 trans-11, 0.51% vs. 3.39%, p < 0.001), rumenic acid (CLA C18:2 cis-9, trans-11, 0.32% vs. 1.45%, p < 0.001) and total CLA (0.53% vs. 1.91%, p < 0.001) contents than Podolica milk. Further losses of these human healthy nutrients in low fat Friesian milk reduced the nutritional quality of the milk, while the milk from animals raised on the pasture was of better quality even when the level of fat was low.

Excessive endoplasmic reticulum (ER) stress contributes significantly to the pathogenesis of exocrine acinar damage in acute pancreatitis. Our previous study found that milk fat globule EGF factor 8 (MFG-E8), a lipophilic glycoprotein, alleviates acinar cell damage during AP via binding to αvβ3/5 integrins. Ligand-dependent integrin-FAK activation of STAT3 was reported to be of great importance for maintaining cellular homeostasis. However, MFG-E8’s role in ER stress in pancreatic exocrine acinar cells has not been evaluated. To study this, thapsigargin, brefeldin A, tunicamycin and cerulein + LPS were used to induce ER stress in rat pancreatic acinar cells in vitro. L-arginine- and cerulein + LPS-induced acute pancreatitis in mice were used to study ER stress in vivo. The results showed that MFG-E8 dose-dependently inhibited ER stress under both in vitro and in vivo conditions. MFG-E8 knockout mice suffered more severe ER stress and greater inflammatory response after L-arginine administration. Mechanistically, MFG-E8 increased phosphorylation of FAK and STAT3 in cerulein + LPS-treated pancreatic acinar cells. The presence of specific inhibitors of αvβ3/5 integrin, FAK or STAT3 abolished MFG-E8’s effect on cerulein + LPS-induced ER stress in pancreatic acinar cells. In conclusion, MFG-E8 maintains cellular homeostasis by alleviating ER stress in pancreatic exocrine acinar cells.

Introduction. The quality profile and nutritional values of cookies depend on the raw material. The research objective was to study the effect of oils and fats on the quality characteristics and storage capacity of cookies. Study objects and methods. The study involved such types of oils and fats as margarine, confectionery fat, milk fat substitute, palm oil, sunflower oil, and high oleic sunflower oil. It was based on standard methods of sensory, physicochemical, structural, and rheological analyses. Results and discussion. The experimental formulations relied on contemporary dilatory recommendations, consumer acceptability, and traditionality of sensory indicators. The mass fraction of fat was limited to ≤ 18%; added sugars – to ≤ 22%; salt – to ≤ 0.3%. For each type of oil and fat, as set of experiments was performed to define the optimal technological emulsion and dough parameters. Other aspects involved the patterns of moisture transfer, indicators of oxidative spoilage, fatty acid composition, sensory properties, physicochemical and microbiological indicators, storage capacity, etc. The samples with vegetable oils instead of fat had a lower content of saturated fatty acids, which fell from 8–9 to 2–3 g/100 g. However, the risk of oxidative spoilage increased significantly. On storage day 104, the content of linoleic acid in the samples with sunflower oil decreased from 62.0 to 60.4%, while the samples with high oleic sunflower oil maintained the same level of linoleic acid. The samples with confectionery fat and palm oil demonstrated the lowest rate of oxidative processes, while those with margarine and milk fat substitute had the best sensory profile after storage. Conclusion. The cookies with sunflower oil and high oleic sunflower oil appeared to have a shelf life of two months, while for those with milk fat substitute, margarine, palm oil, and confectionery fat it was six months. Further research should focus on various emulsifiers and antioxidants capable of forming bonds with proteins and starch fractions of flour, which could increase the resistance of liquid vegetable oils to oxidation.

To investigate the lipid digestive behaviors of human and infant formulas and analyze the differences between them, we investigated the fat globule particle size distribution, lipolysis rate, and fatty acid release of infant formulas with different fat sources and human milk using an in vitro infant digestion model. The results suggested that the particle size in infant formula increased rapidly during gastric digestion and decreased significantly after intestinal digestion, whereas the particle size in human milk increased slowly during gastric digestion but increased rapidly during intestinal digestion (p < 0.05). Despite having a larger droplet size, human milk demonstrated a very high lipolysis rate due to the presence of MFGM. In terms of the distribution of fatty acids in digestion products, the proportion of saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs), and polyunsaturated fatty acids (PUFAs) in vegetable oil-based infant formulas was close to that of human milk. The amount of SFAs in milk fat-based infant formulas was significantly higher than that in human milk, and the content of MUFAs in all infant formulas was significantly lower than that in human milk (p < 0.05). After digestion, the most abundant fatty acid released by human milk was C18:2n6c, while the fatty acids released by infant formulas were SFAs, such as C14:0, C16:0, and C18:0.

Purpose: Assessment of the quality of the well-producing groups, the productivity of candidates for the first lactation, the possibility of using genomically estimated cows to increase the parameters of mothers of future bulls, to analyze the quality of the offspring of bulls of various origins.Materials and methods. Research was performed on the basis of breeding plants Karelia Megrega (1455 cows) and Ilinskoe (1200 cows). Analyzed the productivity of bob-producing groups isolated on trivials. 66 Genomically estimated flaws were delivered from Finland after calving for milk productivity for the first lactation with local peers. In assessing the quality of the offspring of producers of different origin, the productivity of 1441 of the daughter of imported bulls and 620 daughters of domestic bulls took place. The degree of differences was assessed by the results of biometric processing of indicators.Results. At the Ilyinskoye dairy farm, the milk yield for lactation of cows of the bull-producing group is 11977 kg of milk with a fat content of 4.33%, protein content of 3.22%. There are 11119 kg of milk at the Megrega farm, 4.42% and 3.23%, respectively. A significant number of individuals (14.7-19.8%) with a milk yield above 9,000 kg of milk, which are a source of replenishment of bull-producing groups, were identified at breeding farms among the first heifers. The possibility of forming and improving the quality of bull-producing groups of cows at the expense of their own livestock is noted, provided that the factors of feeding and keeping animals, increasing the fat content and protein content of milk are optimized.Comparison of productivity indicators of imported "genomic" cows with local peers gave mixed results. At the Ilyinskoye farm, "genomic" cows significantly outperformed subjects of conventional breeding in all indicators: milk yield by 796-903 kg of milk, fat content by 0.27%, protein content by 0.09-0.06%, fat production by 59.4-63.8 kg, protein production by 33.9-34.8 kg, live weight by more thanAt the Megrega farm, in terms of fat content and production, "genomic" individuals also significantly outperformed local peers, and in milk yield and protein content, the differences were unreliable. Genomic evaluation of animals and the involvement of "genomic" cows can contribute to the formation of better groups of mothers of future bulls, especially to solve the most urgent problem of increasing fat and protein milk.Conclusion. In the conditions of large dairy breeding complexes with the technology of loose maintenance, it is advisable to use a system for placing groups of bull mothers in comfortable conditions in special rooms, including individual service.
