A substantial source of food waste occurs when consumers and sellers dispose of expired food despite it being safe to eat. We conduct an incentive-compatible, non-hypothetical laboratory choice experiment in which 150 participants choose between food products of varying perishability level at various dates before or after their best-before dates. In one treatment, participants received information about the interpretation of food date labels. In another they received this information plus additional information on food waste due to date label confusion and its environmental impacts. We find that clarifying the meaning of date labels is insufficient to change preferences for food past its best-before date, but when a link between date labels, food waste, and its environmental impacts is made, participants’ willingness-to-pay for expired food increases, particularly for expired frozen or recently expired semi-perishable products. Our findings have implications for food waste reduction efforts because increasing the value of expired food increases the opportunity cost of wasting expired but consumable food.

In Taiwan, municipal solid waste (MSW) is separated into general, recyclable, and food waste categories. General waste must be packaged into pre-paid trash bags before final disposal. Recyclable items and food waste are collected separately to reduce the costs of using pre-paid trash bags. This study applied a choice experiment approach to evaluate marginal willingness-to-pay (WTP) in different MSW disposal system scenarios. Variables include cleanliness, location for purchasing pre-paid trash bags, frequency of waste collection, and distance to waste disposal. The results indicate that cleanliness, location, and distance influence public behavior, acceptance, and participation. Higher collection frequency decreases public acceptance. Some of the socio-economic variables of the respondents, including age, education, and marriage status, affect MSW management alternatives. The marginal WTP of the scenarios in this study ranged from US$0.04-0.07 per trash bag. Online purchasing of pre-paid trash bags is more cost-effective and should be encouraged. The results of this study provide useful information for the development of policies related to waste management systems.

Background: As the reduction of food wastage remains one of our most critical challenges, we quantified the environmental impacts of food losses in the food-service sector in Germany, with a particular focus on the subsectors of business, healthcare and hospitality. Methods: Using the food-waste data of 7 catering companies, 1545 measurement days and 489,185 served meals during two 4–6 week monitoring periods, a life-cycle assessment (LCA) according to ISO standard 14040/44 was conducted. Within the LCA, the carbon, water (blue) and land footprints, and the ecological scarcity in terms of eco-points, were calculated. Results: We show that the waste generated in the food-service sector in Germany is responsible for greenhouse gas emissions of 4.9 million tons CO2-equivalents (CO2e), a water use of 103,057 m3 and a land demand of 322,838 ha, equating to a total of 278 billion eco-points per year. Subsector-specifically, in hospitality catering: 1 kg of food waste accounts for 3.4 kg CO2e, 61.1 L water and 2.6 m2 land (208 eco-points); in healthcare: 2.9 kg CO2e, 48.4 L and 1.9 m2 land (150 eco-points); and in business: 2.3 kg CO2e, 72 L water and 1.0–1.4 m2 land (109–141 eco-points). Meal-specifically, the environmental footprints vary between 1.5 and 8.0 kg CO2e, 23.2–226.1 L water and 0.3–7.1 m2 per kg food waste. Conclusions: If robust food waste management schemes are implemented in the near future and take the waste-reduction potential in the food-service sector into account, Target 12.3 of the United Nation’s Sustainable Development Goals—which calls for halving food waste by 2030—is within reach.

China uses a multilevel agricultural certification system; however, its implications are not well understood. In this study, we used tomatoes as an example in a series of Becker-DeGroot-Marschak auction experiments to determine consumers’ willingness to pay (WTP) toward three safety certification labels and two kinds of brands. Then, based on the auction experiment results, we designed a menu-based choice experiment to assess the interaction relationships between the safety certification labels and brands. The results showed that consumers were generally willing to pay a premium for tomatoes with safety-certified labels (especially for organic labels) and brands (especially for the enterprise brand). Providing consumers with additional information regarding the certification remarkably improved their WTP for tomatoes with organic and green labels. The menu-based choice experiment suggested that the organic and green labels were found to be substitutes. In addition, organic and green labels could not substitute the enterprise brand, whereas the converse of this relationship was true. Finally, a mutual substitution relationship was observed between hazard-free label and enterprise brand. Our research enables producers to consider the interaction between certification strategies and brand strategies. Therefore, marketers and policymakers should take steps to promote and expand consumers’ knowledge on certification, as it could benefit the development of certified food.

In 2019, Sri Lanka introduced two policies that referred to food waste and the need to reduce it. To understand key stakeholders’ readiness in this context, this study analyzed the food waste perceptions of private and public sectors in Colombo (open markets, supermarkets, hotels, restaurants, canteens, food caterers and key authorities). Interviews were carried out with operational managers and public officials, as well as other stakeholders who have roles in food waste redistribution and reuse, such as NGOs and the livestock sector. So far, the food-waste-related policy recommendations lack an operational inter-institutional home which can build on measures, like standards, regulations and incentives. Thus, most food waste reduction initiatives are initiated by NGOs or by the private sector, e.g., by larger hotels and supermarket chains. These entities were ready to lead by example, based on the understanding that urban food waste is an internal (financial) management challenge. Among smaller local entities, food waste was perceived more as an external issue to be handled by the city’s waste collection services. Although perceptions varied between entities generating smaller or larger quantities of food waste, there was general agreement that suboptimal capacities and mechanisms to quantify, monitor and cost food waste generation appeared to be obstacles for in-depth awareness creation and action. There was significant interest in communication platforms for cross-sectoral learning, win/win collaborations with reliable collection (reuse) services that are currently operational, such as those provided by piggeries, as well as surplus redistribution initiatives if food safety and related liabilities can be addressed effectively.

In this paper, we investigate homeowner preferences and willingness to pay for wildfire protection programs using a choice experiment with three attributes: risk, loss and cost. Preference heterogeneity among survey respondents was examined using three econometric models and risk preferences were evaluated by comparing willingness to pay for wildfire protection programs against expected monetary losses. The results showed that while nearly all respondents had risk seeking preferences, a small segment of respondents were risk neutral or risk averse. Only respondents who had personal experience with the effects of wildfire consistently made trade-offs among risk, loss and cost and these respondents were willing to pay more for wildfire protection programs than were respondents without prior experience of the effects of wildfire. The degree to which people with prior experience with the effects of wildfire can effectively articulate an economic rationale for investing in wildfire protection to other members of their own or other communities facing the threat of wildfires may influence the overall success of wildfire protection programs.

Community-supported agriculture (CSA) operators are becoming more innovative in their efforts to attract consumers to become CSA shareholders. Therefore, CSA operators must understand which attributes consumers value. Using an online survey of Connecticut consumers in conjunction with a choice experiment, we evaluate consumer preference and willingness to pay for various attributes, including risk mitigation. We find younger consumers are more likely to prefer CSAs with organic products, while a greater diversity of products in the CSA share will increase preference for a CSA for some consumers. Further, we find that consumers with and without CSA experience value the risk-mitigation attribute.
