<p class="1Body">The effect of TPA and biochemical properties of Yellow Tuna during frozen storage at different temperatures(-18°C, -25°C, -35°C, -45°C<em>, </em>-55°C<em>, </em>-65°C) were studied by measuring the textural characteristics (the hardness, Springiness) salt-solubility of myofibrillar proteins, Ca<sup>2+</sup>ATPase activities. The results indicated that the hardness, springiness, actomyosin salt-solubility, Ca<sup>2+</sup>ATPase activities decreased during the process of frozen storage. Meanwhile, the frozen stored temperature showed great effect on the freezing denaturation of protein (P &lt; 0.05). For the same longer of the storage time, the lower frozen temperature, the less extent of freeze denaturation; Stored in -18°C for three months, the content of Salt soluble protein reduced to zero; Stored in -25°C for 120 <em>days</em>, the content of salt soluble protein also reduced to zero; But stored in -55°C and -65°C, the change is very little. Ca<sup>2+</sup>ATPase activities also reduced to zero after stored in -18°C and -25°C for three months. But stored in -55°C and -65°C, there is no obvious change. Moreover, there is a Positive relationship between the change of texture profile and the content of Salt soluble protein, the lower the storage temperature, the less of the change of texture profile. Therefore, when it is stored in -55°C, the quality of Yellow Tuna can be maintained to the maximum extent within six months.</p>

Heat-treated salamis “Vysočina“ were produced with standard way in a meat factory; their diameter was 55 mm. Samples were stored under laboratory conditions at different temperatures: 5, 10, 15, 20, and 25 °C and sensory analysed every week during one month storage. The dry matter (d.m.) was measured, too. Descriptors of general appearance, sausage casing, texture, cut surface, dry edge, smell, taste, and salty were monitored. Biggest changes were in descriptors general appearance and sausage casing (P < 0.001) and also in dry edge (P < 0.010) during the month period. Germs of moulds were found only at 5 and 10 °C. Rapid increase of d.m. in samples was noticeable in the first week of the storage time. It was 3 % d.m. at 5 °C and 11 % d.m. at 25 °C. Increase of d.m. of salamis continues slowly in the next three weeks period; the total difference was about 10 % d.m. in the temperature range measured. Decrease of d.m. at 5 °C was noticed in the last week of the measurement. The difference was 3.5 % d.m. This change means that the equilibrium moisture content of the samples of salamis has been reached at the temperature 5 °C. The best sensorial quality of salamis “Vysočina” was in the storage temperature ranged from 15 to 20 °C.

The postharvest conservation of cut Heliconia flowers is an important factor to the success of commercialization, especially with regard to exportation. In the present study, the maximal storage time of cut inflorescences of Heliconia bihai cv. Lobster Claw at two different temperatures (12 and 19 °C) was evaluated and compared to laboratory conditions (25 °C, control treatment). Changes in visual quality, fresh weight and bract color (L*, a* and b*) were determined. The visual quality of the inflorescences and fresh weight decreased with time in all treatments. Symptoms of chilling injury were observed on the inflorescences stored at 12 °C for six and eight days. Bract color was not affected by temperature, storage time or the senescence process. The results indicate that a temperature of 12 °C is not recommended for a storage time longer than four days, whereas 19 °C can be used for a storage time of up to eight days for cut inflorescences of H. bihai cv. Lobster Claw.

The experiment was conducted to find out the effect of salt and storage temperature on the physico-chemical properties of beef nugget. For this purpose nugget samples were divided into two parts; one is called fresh nugget and another is preserved nugget at different temperatures. Then the fresh samples as well as the preserved samples were divided into four subdivisions. Then these are treated with different salt levels (0, 1.5, 3 and 5% salt level). The preserved samples were stored at 4oC and -20oC. Samples preserved at 4oC were stored in the refrigerator for 21 days and were analyzed on 7th day, 14th day and 21th day and samples preserved at -20oC were stored in the refrigerator for 60 days and were analyzed on 15th day, 30th day, 45th day and 60th day of preservation. Dry matter and Ash content of all the samples increased significantly (P<0.01) with the advancement of storage time and salt level. CP% of fresh samples was 22.31, 20.55, 20.13 and 20.55 at 0, 1.5, 3 and 5% salt concentration. CP, DM, Ash and Fat also varied among the samples significantly (P<0.01). Highly significant difference is observed in preserved samples than in fresh samples at different salt levels. Fresh nugget treated with 1.5% salt found to be more acceptable in terms of sensory evaluation. <p>Kerusakan cabai merah segar di daerah tropis terutama disebabkan oleh suhu, kelembaban dan penanganan pascapanen. Meminimalkan kerusakan cabai dapat dilakukan dengan menghambat proses respirasi melalui penyimpanan suhu rendah dan teknik pengemasan. Belum banyak publikasi tentang pengemasan cabai dengan kapasitas besar. Penelitian ini bertujuan untuk mengetahui pengaruh penyimpanan suhu dingin dan jenis kemasan terhadap kualitas fisik cabai dengan kapasitas besar selama penyimpanan 13 hari. Penelitian skala laboratorium ini menggunakan rancangan acak lengkap faktorial yang terdiri dari dua faktor yaitu jenis kemasan (tiga taraf: jala plastik, karung plastik dan kardus karton) dan suhu penyimpanan (dua taraf: 10°C dan 15°C). Hasil penelitian ini menunjukkan kombinasi perlakuan kemasan kardus karton pada suhu 10°C memberi hasil terbaik untuk mempertahankan mutu fisik cabai yang disimpan selama 13 hari dengan laju respirasi paling rendah 17,64 ± 1,8 ml gas CO2/kg.jam, susut bobot terendah (3,35±1,99%), rata-rata kekerasan 3,63 ± 0,33 N dan nilai warna yang tidak berbeda nyata dengan warna awal cabai (l*=35,96±1,26, a*=39,57±1,07 dan h*= 25,57±1,03). Sampai penyimpanan hari ke 5, mutu fisik cabai yang dikemas karung plastik sama dengan cabai dikemas kardus karton, namun setelah hari ke 5, cabai kemasan kardus karton lebih unggul daripada kemasan lain. Penyimpanan pada suhu 10°C menghasilkan kualitas cabai yang lebih baik daripada penyimpanan suhu 15°C, kecuali pada parameter susut bobot (susut bobot suhu 15°C rata-rata 6,76± 4,19 % lebih rendah suhu 10°C rata-rata 8,26 ± 4,71%). Perlakuan tidak mempengaruh nilai warna (l*, a* dan h°) cabai yang disimpan selama 13 hari.</p><p>Kata kunci :cabai, kemasan, penyimpanan dingin, susut bobot</p><p>English Version Abstract</p><p>Damage fresh red chillies in the tropics is mainly caused by temperature, humidity and postharvest handling. Chili can minimize the damage done to hinder the process of respiration by low temperature storage and packaging techniques. Research on red chilies with large capacity pack is slightly smaller than the capacity reported. The purpose of this study is to determine the effect of low temperature storage and packaging type on the physical quality of red chilies in a large capacity for 13 days of storage. The study was conducted on a laboratory scale with a completely randomized factorial design. Factors studied were the type of packaging (three levels i.e. plastic nets, plastic sack and ventilated cardboard box) and storage temperature (two levels i.e. 10 °C and 15°C). The results showed that the combined treatment ventilated cardboard box packaging at a temperature of 10 ° C to give the best effect to maintain the physical quality red chilli stored for 13 days at a rate respiration of 17,64 ± 1,8 ml CO2 / kg.h, lowest weight loss (mean 3.35 ± 1, 99%), hardness (mean 3,63 ± 0,33 N) and color values are not significantly different from the initial color of chilli (l * = 35.96 ± 1.26, a * = 39.57 ± 1.07 and h * = 25.57 ± 1.03). The physical quality of chillies in plastic sack are not significantly different from chili in ventilated cardboard box until 5 days storage, but after 5 day, the physical quality of chilli in ventilated cardboard box better than a plastic sack. The physical quality of chillies in stored at temperature of 10°C has better than chilli in temperature of 15°C, except for the parameters of weight loss (weight loss temperature of 15°C on average 6.76 ± 4.19% lower mean temperature of 10 ° C. average 8.26 ± 4.71%). The objective of this research was to investigate the chemical, physical and sensory properties of goat milk kefir  during storage under different temperatures and storage time. Experimental method, applied completely randomized factorial design. The first factor was temperature (-1 to -5oC; 5 to 10oC and 6 to 10oC) and the second factor was storage time (10; 20 and 30 days) followed by Duncan test. Result showed that temperature, storage time and interaction highly significantly affected (P<0.01) the level of ethanol and FFA, but not affected (P>0.05) on protein content, fat and ash but CO2 level, texture and flavor of kefir were affected by storage time. Kefir viscosity was only affected by storage temperature (P<0.05). Research concluded that storage temperature affected chemical properties such as ethanol, FFA and kefir viscosity,while kefir sensory properties was predominantly affected by storage

ABSTRACT The effects of storage temperature on postharvest storability, quality attributes and antioxidant enzyme activities of harvested Ponkan mandarins were investigated. Fresh fruits were randomly divided into four groups and stored at different temperatures [5 ± 1 °C (S5), 10 ± 1 °C (S10), 15 ± 1 °C (S15), and 20 ± 1 °C (S20 or control)] for 120 days. The results indicated that, compared with the control fruit, low-temperature storage at 10 °C significantly delayed the increase in fruit decay rate, weight loss, citrus colour index, respiration intensity, relative electrical conductivity, the accumulation of hydrogen peroxide and malondialdehyde, retarded the decline in L* value, retained high contents of total soluble solid, titratable acid, vitamin C, total phenol and total flavonoid, as well as higher activities of antioxidant enzymes – superoxide dismutase, catalase, peroxidase and ascorbic peroxidase. The principal component analysis results showed that low-temperature storage significantly maintained the postharvest quality of Ponkan mandarins, with fruit stored at 10 °C having no significant difference from the fruit stored at 5 °C, but markedly higher than those fruit stored at 15 °C. The comprehensive result of single-factor analysis and PCA showed that 10 °C could be used as the optimum storage temperature for improving the postharvest storability of Ponkan mandarins.

Edible insects are widely consumed in different parts of the world and can serve as an alternative nutritional source to conventional foods. Nonetheless, little attention has been given to their quality and shelf life in different packages when exposed to different storage environments. In this study, the effect of storage temperature, duration and type of packaging on the storage stability of the adult house cricket meal was examined. The samples were boiled, solar dried, milled and packaged into polypropylene (PP), plastic (PL) and polyethylene (PL) packages. The samples were then stored for six months in refrigerated and ambient conditions where by changes in physical and biochemical attributes were monitored. Iodine values significantly decreased in all the packages while peroxide, p-anisidine and saponification values significantly increased. SFA, MUFA and PUFA contents reduced during storage although a higher tendency for MUFA and PUFA values was observed in the refrigerated samples. Total viable count (TVC) and yeast and molds counts significantly increased in storage. Three types of fungi; Aspergillus spp., Alternaria spp. and Penicillium spp. were isolated in all the packages. Overall color change steadily decreased with increase in storage time. Deterioration was higher in samples stored in ambient conditions than in refrigeration. The degree of deterioration in the two storage environments among the different packages was in the order; PP>PE>PL. Although the PL package outperformed the other packages it is recommended to carry out sensory analysis and avoid post-processing contamination that can adversely affect the product quality and safety during storage.
