The modifications of histological properties and chemical forces on heated surimi gels with starch addition (0–12 g/100 g surimi) were investigated. Two types of heating processes (direct heating and two-step heating) were carried out on surimi gels in order to reveal the effect of setting on mixed matrices. The results of transverse relaxation time showed less immobile water and free water converted into bound water in a matrix subjected to the setting process. Scanning electron microscope and light microscopy images revealed inefficient starch-swelling in two-step heated gels. Chemical interactions and forces in direct cooking gels were more vulnerable to starch addition, resulting in significant decreases in hydrophobic interaction and sulfhydryl content (p < 0.05). With the increment of starch, the disulfide stretching vibrations of the gauche–gauche–gauche conformation were reduced in both gel matrices. The structural variations of different components collectively resulted in changes in texture profile analysis and water holding capacity. Overall, the results demonstrated that starch addition had a great and positive effect on the weak gel matrix by direct heating.

Abstract This article studies the efficiency of different samples for content analysis of news in media effects studies by comparing the agenda-setting effect of a classic sample with the effect of a sample drawn based on audiences’ self-reported media habits. Contrary to the belief that exposure to sampled media content is necessary for observation of media effects, samples drawn based on overall readership/viewership of the media are more efficient than samples based on audiences’ actual consumption habits. A traditional media sample yields a stronger agenda-setting effect compared to a sample drawn based on self-reported media habits. But correlations between the two media samples are also strong. The findings suggest that a broad intermedia agenda-setting process makes it possible for researchers to draw a traditional sample that is representative of the issues salient to audiences regardless of their level of exposure to the sampled media. In other words, even in a demassified media environment, traditional samples are still the best option for media effects researchers.

Abstract. The feature categories of an orienteering map are prepared to allow the map reader to estimate the travel time between any two points on the map with a good approximation. This requires not only an accurate map, but also a key that adapts to the speed of travel. Such map key is developed and maintained by the IOF (International Orienteering Federation), and technically all the orienteering maps are compiled by using it. Estimated time also plays an important role in planning the courses of orienteering races. The course setter estimates time based on a route he thinks is ideal, but the speed of travel is basically a non-linear function of terrain, road network and land cover. Because of this, the easiest (ideal) route between the two points and its time cost can be calculated using the least-cost path (LCP) GIS method, which can be prepared to take into account these three map feature categories. This method is based on the calculation of a cost surface, then the analysis of the ideal path from a given point to the destination. The automation can be adapted to any orienteering map due to the similarities of the map keys. This study shows that if the weight corresponding to the different feature categories is given properly, the ideal path between two points on orienteering maps can be calculated. The ideal path, however is still a subjective category, which may depend on the capabilities and preferences of the orienteer. In this study the routes calculated with the LCP method were compared with the suggestions of the ideal routes by orienteering runners of different ages. The results show that the routes given by sportsmen can be simulated with the LCP method and even the time cost of the calculated routes can be calculated. This study can lay the groundwork for a GIS tool helping the course setting process on standard orienteering maps.

The paper assesses the legitimacy of the ISO/CEN standard for sustainable and traceable cocoa during the standard-setting process and thereby to establish the degree of legitimacy achieved and to explore new sources of legitimacy in the development of sustainability standards for agricultural commodities. The paper examines the normative and empirical legitimacy concerns involved in the development of the ISO/CEN standard for sustainable and traceable cocoa (ISO 34101 series). The findings suggest that while the standard-setting organisation is establishing normative legitimacy, empirical legitimacy is lacking. Absence of empirical legitimacy is a serious concern for a successful and just implementation.

Abstract. Within the project SealWasteSafe, we advance construction materials and monitoring concepts of sealing structures applied for underground disposal of nuclear or toxic waste. As these engineered barriers have high demands concerning integrity, an innovative alkali-activated material (AAM) is improved and tested on various laboratory scales. This AAM has low reaction kinetics related to a preferential slow release of the heat of reaction in comparison to alternative salt concretes based on Portland cement or magnesium oxychloride cements. Hence, crack formation due to thermally induced strain is reduced. After successful laboratory scale analysis (Sturm et al., 2021), the AAM is characterised on a larger scale by manufacturing test specimens (100–300 L). Conventional salt concrete (DBE, 2004) and the newly developed AAM are compared using two specimen geometries, i.e. cylindrical and cuboid. A comprehensive multisensor monitoring scheme is developed to compare the setting process of AAM and salt concrete for these manufactured specimens. The analysed parameters include temperature and humidity of the material, acoustic emissions, and strain variations. Passive sensor systems based on radiofrequency identification technology (RFID) embedded in the concrete, enable wireless access to temperature and humidity measurements and are compared to conventional cabled systems. Additionally, fibre-optic sensors (FOS) are embedded to record strain, but also have potential to record temperature and moisture conditions. Part of this project aims at demonstrating the high reliability of sensors and also their resistance to highly alkaline environments and to water intrusion along cables or at sensor locations. Further technical improvements were implemented so that first results clearly show the scalability of the setting process from previous small-scale AAM experiments and particularly the high potential of the newly developed approaches. Furthermore, ultrasonic methods are used for quality assurance to detect obstacles, potential cracks and delamination. On the one hand, both active and passive ultrasonic measurements complement the results obtained from the multisensor monitoring scheme for the produced specimens. On the other hand, the unique large aperture ultrasonic system (LAUS) provides great depth penetration (up to nearly 10 m) and can thus be applied at in situ sealing structures built as a test site in Morsleben by the Federal Company for Radioactive Waste Disposal (Bundesgesellschaft für Endlagerung, BGE) as shown by Effner et al. (2021). An optimised field lay-out identified from forward modelling studies and advanced imaging techniques applied to the measured data will further improve the obtained results. To characterise the inside of the test engineered barrier and achieve a proof-of-concept, an ultrasonic borehole probe is developed to enable phased arrays that can further improve the detection of potential cracks. Modelling results and first analysis of semispherical specimens confirmed the reliability of the directional response caused by the phased arrays of the newly constructed ultrasonic borehole probe. Overall, the project SealWasteSafe improves the construction material, multisensor monitoring concepts and ultrasonics for quality assurance. This will help to develop safe sealing structures for nuclear waste disposal. The outcomes are particularly valuable for salt as a host rock but partly also transferrable to alternative conditions.

Though the labour market has always been central to macroeconomics, policy has usually had no instrument for intervening directly in the wage-setting process. But in the mid-twentieth century, economists commonly believed that there should be such an instrument. In 1950s Australia, it seemed that the arbitration system could potentially be used as such. This article uses Trevor Swan’s contemporary model of Australian policy in the 1950s to understand the tensions facing policy and explain why wage control seemed to be a solution. The arbitration judges began to consider macroeconomics in their decisions, and the unions adapted by presenting macroeconomic arguments of their own. In full employment conditions, labour had considerable economic power outside the tribunal, and the limitations of arbitration as an instrument of policy raised the shadow of unemployment as an alternative disciplining device.
