AbstractOrganic meat products are gaining consumer interest worldwide. The aim of this study was to investigate the effect of organic and conventional meat origin on nutritional determinants of the following pork meat cuts: loin, ham, and shoulder. Nutritional value of meat was based on selected indicators such as proximate composition, the concentration of cholesterol, vitamin E content and minerals and trace elements such as calcium, magnesium, potassium, copper, iron, and zinc, and the composition of fatty acids. The results of this study demonstrated that higher contents of protein and selected mineral compounds, as well as lower vitamin E concentration and different fatty acids (i.e., C12:0, C17:0, C17:1 n-7, C18:3 n-6, C24:0 and total n-3 polyunsaturated fatty acids (PUFA)) distinguish organic pork meat cuts from the conventional counterparts. The organically meat parts, especially the shoulder, were identified as a better source of copper, calcium, iron and zinc, while organic ham and loin had more potassium. On the other hand, organic hams were shown to have lower content of vitamin E in comparison to their conventional equivalents present. Also, in organic shoulders showed a higher n-6/n-3 ratio compared to meat of conventional origin.

The diet of the majority of the population of Russia is characterized by an insufficient content of a number of micronutrients, including macro- and micronutrients. The aim of the study is to characterize in a rat model experiment the effect of combined nutritional deficiency of calcium, magnesium and iodine on the availability of other mineral substances, vitamin metabolism and biochemical parameters blood plasma. The lack of minerals in growing Wistar male rats with an initial body weight (51.4 ± 0.5) g was created for 23 days by halving of a calcium, magnesium and iodine in the salt mixture. Alimentary deficiency of calcium, magnesium and iodine in growing rats significantly and multidirectionally affected the metabolism of other minerals and vitamins, as well as a number of diagnostically significant indicators of blood and urine. In rats of the experimental group, the liver concentration of α-tocopherol, vitamin B1 and retinol palmitate decreased, the concentration of iron and zinc increased, the copper content in the whole brain decreased significantly. The molar ratio of γ- and α-tocopherols in blood plasma was increased, the concentration of the circulating form of vitamin D decreased. The ratio of AlAT / AsAT (de Ritis coefficient) markedly decreased due to increased activity of AlAT. Phosphate reabsorption decreased slightly. Increased urinary excretion of riboflavin was accompanied by a decrease in its concentration in blood plasma. The conclusion that insufficient intake of calcium, magnesium and iodine may disturb vitamin-mineral status of organism has been made.

The influence of the consumption of natural carob fiber (NCF), an insoluble hypocholesterolemic fiber, as the unique dietary fiber or combined with cellulose (CEL) or pectin (PEC), on mineral bioavailability was studied. Six groups of rats were fed for 10 days diets containing 10% CEL, NCF, PEC or CEL+NCF, CEL+PEC and NCF+PEC mixtures at 50%. Food intake was lower with PEC than NCF and CEL+NCF, but final body weight was unaffected. Fecal weight showed significant differ ences in the following order: CEL, NCF, CEL+NCF > CEL+PEC, NCF+PEC > PEC. Percentage of calcium absorption was higher with CEL+PEC and NCF+PEC compared with the rest of fibers. Mag nesium absorption was also significantly enhanced in these two groups compared to NCF (p < 0.0004). Iron absorption did not show variations. Zinc apparent absorption was reduced by PEC, but the NCF+PEC mixture counterbalanced this effect. Liver iron was significantly lower with NCF+PEC than CEL, and liver iron concentration was significantly lower with NCF+PEC compared to CEL+PEC. Liver zinc was significantly higher with CEL+NCF than PEC while liver zinc concentrations were slightly higher with the former (p = 0.05 compared to NCF). The results indicate that NCF, compared to CEL and PEC, did not decrease the efficiency of calcium, magnesium and iron absorption in rats, while compared to PEC it increased zinc apparent absorption. Moreover, by combining NCF with PEC calcium and magnesium, absorptions enhanced in comparison with NCF alone, which was prob ably a result of the combination of soluble and insoluble fibers.

Investigations were carried out on the territory of the Chuvash Republic. The following hashish-free monoecious hemp varieties were used as the object of investigation: Diana, Rigs, Ingreda, Margo, Diman, Yuliana, Antonio, Igorkin, which are characterized by high uniformity of monoecious, absence of cannab. The experiments laid in 2005-2013, respectively. To conduct field and laboratory investigations seed crops placed on spatially isolated gray forest medium loamy soils, which are contained in the plow layer: humus - 4.69%; P2O5 - 100, K2O - 260 mg per kilogram of soil; pH - 5.9. The observations and analyzes were performed in accordance with the guidelines of bast crops of Russian Research Institute of Flow. The studies have shown that such chemical elements dominate in the hemp seeds: calcium, magnesium, phosphorus, potassium, sulfur, and a small amount of iron and zinc; rare earth elements - thorium, selenium, molybdenum, zirconium, beryllium. The uniqueness of oil from hemp seeds is due to a high (up to 80%) content of polyunsaturated essential fatty acids (linoleonic - 50-70% and linolic - 15-25%), which are necessary for normal functioning of human. Press cake contains 30-35% of protein, more 10% of fat and up to 25% of fibre; 100 g of this press cake corresponds to 73 fodder units. Phytin (calcium-magnesium salt of izon phosphoric acid) is an important component, which are widely used in medicine to stimulate hematopoiesis, promoting growth and development of bone tissue, as well as in certain diseases of the nervous system. The hemp stalks varieties of our selection contains up to 25.5-26.8% of fiber; 45.0-58.0 – cellulose, 24.0-26.0% lignin, that is in wood deficit conditions does not exclude the additional use of culture.

A latin square design was used with four sheep, each equipped with a rumen fistula and re-entrant cannula in the proximal duodenum. The four treatments were intraruminal dosings with different amounts (0, 450, 900 and 1800 mg/day) of nitrilotriacetic acid (NTA). The sheep were fed a pelleted diet with excessive concentrations of manganese, iron, zinc and copper. Fecal excretion of iron and zinc increased, and apparent absorption decreased, with increasing dose of NTA. However, only the differences between means for zinc were statistically significant. Fecal excretion and apparent absorption of manganese and copper were not affected by NTA. Flow of soluble iron through the duodenum increased with increasing dose of NTA. There was no effect of NTA on concentrations of manganese, iron, zinc and copper in the rumen bacteria or on microbial activity in the rumen as measured by the concentration of volatile fatty acids in the rumen and by flow of nitrogen into the small intestine.
