No real improvement in the technological quality of beet has been recorded over the last 15 years in Northern Italy. Among the possible explanations for the quality stagnation is that the traditional formulae cannot correctly differentiate between sugarbeet varieties which produce thick juice of very high purity. This seems to be connected with the role of potassium. The use of a standard purification procedure gives reliable and accurate data which is immediately comparable with the factory data. Research projects on medium/long term storage are currently being performed by Co.Pro.B., Italy, in cooperation with Syngenta and Beta. Up to now the results have shown that storage of sugarbeet in autumn time in northern Italy is possible provided that suitable varieties and proper handling of the roots are employed. Results obtained in the storage trials are reported. Correlations have been found between quality parameters (purity, color and lime salts) of the purified juice with the glucose content of the raw juice. An interesting correlation is reported between purified juice purity and raw juice purity.

The main role of milk and milk products in the technology of confectionery products (chocolates, caramele-candy products, dairy products, spreads, etc.) is to increase the nutritional value of the final product and to influence some sensory characteristics of quality (appearance, consistence/texture, flavor). In this study, mixtures of milk and cocoa spreads of a new composition with increased content of milk components were produced, and then assessed for sensory quality traits, peroxide value, free fatty acid content and the content of heavy metals (lead, cadmium and copper) during storage from 0-30 to 180 days at room temperature (18 - 20?C). The samples were evaluated using the analytical-descriptive sensory analysis (point system) with description of the dominant properties (appearance-color, surface gloss, consistence-spreadability, dynamic property of melting, the consistence in the oral cavity-oiliness and flavor-odor and taste). The results of sensory analysis were statistically analyzed using two-way analysis of variance MANOVA, LSD and Levene's test. Based on the obtained results it can be concluded that the composition of mixtures of milk and cocoa spreads significantly affects all characteristics, whereas the storage time significantly affects the appearance, consistence, i.e. spreadability and taste of the product.

Loose structure and PSE like zones on the lateral surface of porcine semimembranosus muscle have beenobserved by other researchers. However the role of connective tissue in this abnormally loose structure insemimembranosus muscle has not yet been clarified. We collected about 100g samples from 7 loosestructured and 7 normal structured Irish commercial porcine semimembranosus muscles in order tocompare the onset and peak of thermal transition temperature of intramuscular connective tissue betweenthe samples from the two groups. Meat quality parameters, ultimate pH, rough estimate for drip loss,lightness (L), redness (a) yellowness (b) and as well as electrical conductivity and reflectance were alsomeasured on the samples. Four of the samples characterized as normal by visual assessment showed DFDcharacteristic so the statistical analysis was carried out both including and excluding those samples. Inboth cases the onset (p<0.001; 56.94ºC vs. 59.82ºC) and peak (p<0.001; 62.59ºC vs. 64.06ºC) of thermaltransition temperature were significantly lower in loose structured meat than in normal structured meat.Also reflectance% was lower (p<0.01; 45.18% vs. 69.17%) and the colour lighter (higher L value; p<0.01;55.05 vs. 45.52) and more yellow (higher b value; p<0.001; 18.27 vs. 14.78) in loose structured meat thanin normal structured meat when the DFD like samples were excluded. These results indicate that loosestructure in porcine semimembranosus muscle could be attributed in part to connective tissue propertiespossibly in conjunction with PSE effects.

Abstract Italy was the first, among all the European countries, to be strongly hit by the COVID-19 pandemic outbreak caused by the severe acute respiratory syndrome coronavirus 2 (Sars-CoV-2). The virus, proven to be very contagious, infected more than 9 million people worldwide (in June 2020). Nevertheless, it is not clear the role of air pollution and meteorological conditions on virus transmission. In this study, we quantitatively assessed how the meteorological and air quality parameters are correlated to the COVID-19 transmission in two large metropolitan areas in Northern Italy as Milan and Florence and in the autonomous province of Trento. Milan, capital of Lombardy region, it is considered the epicenter of the virus outbreak in Italy. Our main findings highlight that temperature and humidity related variables are negatively correlated to the virus transmission, whereas air pollution (PM2.5) shows a positive correlation (at lesser degree). In other words, COVID-19 pandemic transmission prefers dry and cool environmental conditions, as well as polluted air. For those reasons, the virus might easier spread in unfiltered air-conditioned indoor environments. Those results will be supporting decision makers to contain new possible outbreaks.

A six month’s experiment was carried out in earthen ponds to evaluate the effect of micro and macro nutrients on the growth performance of Prawn (Macrobrachium rosenbergii), Rohu (Labeo rohita) and Mola (Amblypharyngodon mola) in a polyculture system during July to December 2017. The trial was conducted into two different treatments and one control each with three replications. In treatment-1, macronutrients enrich fertilizers like urea, TSP and molasses-yeast mixture were applied at the rate of 2.45, 2.45, and 3.09 (g m-2 week-1), whereas in treatment-2 micronutrients composition mixer applied at the rate of 4.50 g m-2 week-1 while no micro and macronutrients were applied in control. The mean value of all water quality parameters showed no significant differences among control and two treatments when One-way ANOVA was performed except hardness. The average final mean individual weights of prawn, rohu and mola in control, treatment-1 and treatment-2 were 22.10, 24.35, and 24.70 g; 141.10, 190.60 and 182.20 g; 3.36, 3.67 and 3.73 g, respectively. The survival rates of various species namely prawn, rohu and mola in control, treatment-1 and treatment-2 were 73.33, 89.58 and 86.25%; 78.00, 74.00 and 74.00%; 10.67, 15.33 and 15.33%, respectively. There was no significant difference in the survival rates of prawn, rohu and mola among control and treatments. Production after six months of culture was 351.8, 461.5 and 445.3 kg ha-1 in control, treatment-1 and treatment-2, respectively which were significantly different at 5% level of significance. Int. J. <p>A detailed study of the mechanisms generated through the turbidity plume and its variability at the Guadalquivir estuary has been carried out with remote sensing and in situ data. Several sensors with different characteristics have been required (spatial, temporal and spectral resolution), thereby providing information for a multi-sensor analysis. The main objective was to determine the water quality parameters (suspended solids and chlorophyll) and implement the methodology to define the empirical and semi-analytical algorithms from satellite data (MODIS, METIS, Deimos-1). The processes occurred in the estuary and adjacent region have been examined identifying those involved in the different variability scales. The forcings associated with rainfall and discharge from Alcalá del Río dam in addition to the climatic NAO index control seasonal and inter-annual fluctuations, while tide effects (semi-daily and fortnightly cycles) modulate the plume at the mouth throughout the year with significant variability. Special emphasis is focused on diagnosing the role of these mechanisms on the continental shelf ecosystems, constituting a powerful tool for the water quality management and coastal resources.</p>
