By separating and extracting algae from the collected water samples, an oil-producing diatom strain was obtained. Microscopic observation of the strain revealed that its morphological characteristics were highly similar to those of the genus Cyclotella. The cloning of 18S rDNA and phylogenetic analysis showed that the algae were clustered with Cyclotella menegheniana with a high support rate, indicating that the alga was C. menegheniana. The fatty acid content of the alga was determined and found to be mainly C14, C16, and C18 fatty acids, which were in accordance with the relevant standards for edible oil. In this study, different gradient levels of salinity and light were set to investigate the culture and bioactive substance production of C. menegheniana. The results showed that the best growth condition was achieved when the salinity was 15 g·L−1, and its biomass and oil content were the highest at 0.27 g·L−1 and 21%, respectively. The final biomass was the highest when the light intensity was 2000 Lux and the oil content was 18.7%. The results of the study provided a basis for the large-scale production of edible oils and biodiesel.

The low saturated fatty acid content of rapeseed oil has resulted in it being classed as one of the most health-benefiting culinary oils. This study determines whether Irish rapeseed oils contain identical fatty acid profiles or whether distinct profiles exist between producers and producers’ successive oil batches. The fatty acid content of Irish rapeseed oils was determined in terms of the desirable MUFA and PUFA and saturated content of these oils. The fatty acid composition demonstrated significant differences in individual unsaturated fatty acid content, while total saturation had insignificant differences. Saturated fatty acid content ranged from 6.10 to 15.8%, while unsaturated fatty acids ranged from 84.20 to 90.10%. Moreover, individual fatty acid content exhibited significant differences ( p < 0.05 ). Oleic acid (C18:1), linoleic acid (C18:2), and stearic acid (C18:0) contents were considered significantly different from other fatty acids detected. The third successive batch from each producer exhibited lower oleic acid content, and the third batch contained higher linoleic acid content, at the same time maintaining a desirable unsaturated fatty acid composition. Studies suggest that differences in the fatty acid composition may be due to cultivation practices such as climate, soil composition, sowing and harvesting, processing techniques, and oxidation reactions.

Vegetable oil is one of the most important components of human nutrition. Soybean (Glycine max) is an important oil crop worldwide and contains rich unsaturated fatty acids. Diacylglycerol acyltransferase (DGAT) is a key rate-limiting enzyme in the Kennedy pathway from diacylglycerol (DAG) to triacylglycerol (TAG). In this study, we conducted further research using T3 AhDGAT3 transgenic soybean. A high-performance gas chromatography flame ionization detector showed that oleic acid (18:1) content and total fatty acid content of transgenic soybean were significantly higher than those of the wild type (WT). However, linoleic acid (18:2) was much lower than that in the WT. For further mechanistic studies, 20 differentially expressed proteins (DEPs) and 119 differentially expressed metabolites (DEMs) were identified between WT (JACK) and AhDGAT3 transgenic soybean mature seeds using proteomic and lipidomics analyses. Combined proteomic and lipidomics analyses showed that the upregulation of the key DEP (lipase GDSL domain-containing protein) in lipid transport and metabolic process induced an increase in the total fatty acid and 18:1 composition, but a decrease in the 18:2 composition of fatty acids. Our study provides new insights into the deep study of molecular mechanism underlying the enhancement of fatty acids in transgenic soybeans, especially oleic acid and total fatty acid, which are enhanced by over-expression of AhDGAT3.

This study aimed to evaluate the effect of the incorporation of untreated grape stalks (UGS) and fungi-treated grape stalks (Lentinula edodes, TGS) in rabbits’ diets. The control group was fed with a control diet without grape stalks (C), two experimental groups were fed on diets with 5% and 10% incorporation of UGS (5UGS and 10UGS), and two with 5% and 10% incorporation of TGS (5TGS and 10TGS). Rabbits fed with TGS diets showed higher daily weight gain (p = 0.034), feed conversion rate (p = 0.002), carcass weight (p = 0.038), and reference carcass weight (p = 0.03) when compared to the control diet. Moreover, animals fed with TGS diets showed an increase in the caecum (p = 0.015) and small intestine (p = 0.021) lengths and in the total volatile fatty acid content (p = 0.005) compared to animals fed UGS diets. Blood triglyceride levels were lower in animals fed with TGS diets compared to UGS (p = 0.005) and C (p ≤ 0.001) diets (12% and 19% lower, respectively), and a trend to lower cholesterol levels was observed (p = 0.071). Meat from rabbits fed with TGS diets had higher levels of linoleic acid, γ-linolenic, ∑ω-6, ∑PUFA, and ∑PUFA/∑SFA ratio compared to rabbits fed with the C diet. Results indicated that grape stalks (UGS and TGS) could be effectively used as an alternative raw material in rabbits’ diets without compromising animal performance.

The utilization of an appropriate catalyst in biodiesel production depends on the free fatty acid content of vegetable oil as a feedstock. Recently, heterogeneous acid catalysts are widely chosen for biodiesel production. However, these catalysts are non-renewable, highly expensive and low stability. Due to the aforementioned drawbacks of commercial heterogeneous acid catalyst, a number of efforts have been made to develop renewable green solid acid catalysts derived from biomass. Published literature revealed that the application of the biomass derived solid acid catalysts can achieve up to 98% yield of biodiesel. This article focused on corncob as raw material in solid acid catalyst preparation for biodiesel production. The efficient preparation method and performance comparation are discussed here. The corncob derived heterogeneous acid catalysts provides an environmentally friendly and green synthesis for biodiesel production.

Purpose: In this study, the optimal mixing ratio of total branched-chain amino acid (BCAA) content, total unsaturated fatty acid content, antioxidant activities, and enzyme activities of silkworm, mealworm, and white grub, which are alternative protein sources, was derived using response surface analysis.Method: Silkworm, mealworm, and white grub were the independent variables, and total BCAA content, total unsaturated fatty acid content, total polyphenol content, total flavonoid content, ABTS radical scavenging activity, α-glucosidase inhibitory activity, and ACE inhibitory activity were used as the dependent variables to determine the optimal mixing ratio.Result: The optimal mixing ratio for total BCAA content, total unsaturated fatty acid content, antioxidant activities, and enzyme activities derived from the response surface analysis was silkworm (X1) 2.998 : mealworm (X2) 0.623 : white grub (X3) 1.983. At this ratio, the total BCAA content was 0.52 g, the total unsaturated fatty acid content was 0.44 g, the total polyphenol content was 67.02 mg TAE/g, the total flavonoid content was 35.58 mg QE/g, the ABTS radical scavenging activity was 95.61%, the α-glucosidase inhibitory activity was 37.79%, and the ACE inhibitory activity was 95.25%.Conclusion: It is expected that the optimal mixing ratio of silkworm, mealworms, and white grub derived in this study can be used to develop products for the management of various chronic diseases.

Coffee in North Sumatra have an important meaning in the socio-economic aspects of people's lives. One of the problems with developing coffee in Simalungun is the low quality of products. Determinants of coffee quality are influenced by geographical indications of the origin of coffee and how the coffee is processed. The purpose of this study was to determine the chemical characteristics of coffee beans produced from several locations in Simalungun Regency, North Sumatra with various coffee processing methods. The material used is red cherry Arabica coffee fruit taken from several locations, namely Raya District, Purba District and Dolok Pardamean District, with a variety of processing methods (dry method, semi-wash method, full-wash method, and honey method). The observed parameters where the chemical characteristics of coffee bean, including water content, caffeine content, ash content, and free fatty acid content. The results showed that the characteristics of the chemical properties of coffee beans produced by various processing methods were not different. Caffeine levels of coffee beans ranged from 7808.71 mg / kg the lowest to the highest 10422.11 mg / kg. Ash content ranged from 3.71%, the lowest to the highest 4.4%. Free fatty acid content from three district an average was 0.06%.

PurposeThe purpose of this paper is the physico-chemical, microbiological, colorimetric, sensorial characterization of choris, a traditional smoked pork sausage produced in the state of Goa (India), including its storage stability (0–180 days) at room temperature, aiming at the geographical indication certification and entrepreneurship prospects.Design/methodology/approachA total of 48 samples of “choris” were collected from 24 villages of Goa and were analyzed at different intervals (0–180 days) for physico-chemical, proximate, microbiological, colorimetric and sensory attributes during the storage at room temperature.FindingsThe mean pH of 4.45 and water activity (aw) of 0.78 were recorded. The pH, tyrosine value, fat percentage and free fatty acid content registered a significant increase, whereas moisture content, aw and moisture–protein ratio reduced as storage progresses. The colorimetric values lightness (L*), hue angle (H*) and redness index values reduced significantly during storage. The mean total viable count, yeast and mold, and lactic acid bacteria count were found to proliferate significantly as storage advanced. Nevertheless, the hedonic scores not reaching an unacceptable level (= 4) at the end of the storage period.Originality/valueIn accordance with the various parameters adopted during the study, choris could be characterized as “naturally fermented dry smoked” sausages, which were shelf-stable at room temperature for 180 days. The product characterization of choris is essential to guarantee the genuineness, safety and consumer's acceptability. This study will also rebound in an augmented uniformity of the product, which will favor the geographical indication certification and the entrepreneurship prospects of this traditional product.

The effects of deep-frying and oven-baking on chemical, physical, and microbiological, properties of cassava croaker (Pseudotolithus senegalensis) nuggets during frozen storage were investigated. The moisture, protein, fat, ash, and carbohydrate contents varied among the cooking methods and frozen storage times. The deep-fried nugget had a higher fat content, which resulted in a higher energy value (p < 0.05). The free fatty acid content and peroxide value (PV) of the oven-baked nuggets were higher than the deep-fried ones (p < 0.05). The PV tended to increase with increasing storage time, but it was still within the recommended range for consumption. The deep-fried nugget showed a vivid orange–yellow color, with higher L*, a*, and b* values, while oven-baked nuggets showed a pale-yellow color. The baked nuggets had relatively lower total expressible fluid than the deep-fried nuggets at all time points (p < 0.05). The hardness, springiness, and chewiness of deep-fried nuggets were higher than baked nuggets throughout the storage period (p < 0.05). The total plate count and yeast and mold counts produced by the two cooking methods were within the acceptable range throughout the storage.
