Decreased quality and off-flavour compound accumulation of 3–10 kDa fraction of pine nut (Pinus koraiensis) peptide during storage

The memory function of pine nut (Pinus koraiensis) meal protein peptides (PNMPP) on mice was analysed through latent time and error times by water maze test. Meanwhile, the impacts of PNMPP on the mice organ coefficients were also measured. The results showed that after 35 d, the latent time of mice decreased with the increasing of the gastric perfusion days. And for error times, PNMPP groups were significantly less than blank group (P < 0.05) at 50 d. Compared with the blank group, there were no significant effects of PNMPP on organ coefficients of mice (P < 0.05).

One hundred and ten mice, weight in the range of 15 ± 2 g, were divided into eleven treatment groups. The groups were negative control, low, moderate and high dose of more than 30 kDa, 3-10 kDa, 1-3 kDa and the moderate dose of less than 1 kDa. The effects of pine nut (Pinus koraiensis) meal protein peptides (PNMPP) on thymus coefficient, transformation of the splenic lymphocyte and weight changes of mice were studied. The results indicated the thymus coefficient was enhanced by the moderate dose and high dose of more than 30 kDa and the moderate dose of 3-10 kDa and ability of lymphocyte transformation of splenic was enhanced by the low and moderate dose of 3-10 kDa and low dose of 1-3 kDa of PNMPP. No effect of PNMPP on weight changes. And the immunity of mice was enhanced by the moderate dose of 3-10 kDa.
