Sufficient dietary protein intake is vital to maintaining muscle health with aging. Yet protein intake among adults is often inadequate. This study’s main objective was to examine the impact of nutrition education (NE) and a per-meal protein prescription (PRx) with versus without diet coaching on protein intake. A secondary objective examined its effects on muscle health. Participants included 53 women, age 45–64 years. All participants received NE and PRx; those randomized to coached-group received 10-weeks of diet coaching. Assessments included: protein intake at baseline, weeks 4 and 12 and muscle health (muscle mass, grip strength, five-chair rise test, 4 mgait speed test). The Chi-square test examined percentages of participants meeting PRx between groups. Repeated measures analysis of variance assessed within group and intervention effects on protein intake and muscle health parameters. Protein intake (g/kg body weight) increased (p < 0.001): not-coached (n = 28) 0.8 ± 0.2 to 1.2 ± 0.3 and coached (n = 25) 1.0 ± 0.2 to 1.4 ± 0.3 with no significant difference between groups. A greater percentage of coached-group participants met (p = 0.04) breakfast (72%) and met (p < 0.001) three-meal (76%) PRx versus not-coached participants (25% and 53%, respectively). Participants in both groups exhibited significantly (p < 0.001) improved times for the five-chair rise test and 4 mgait speed test. Diet coaching in conjunction with a PRx and NE should be considered to assist individuals in improving protein intake through self-selection of protein-rich foods.

Introduction. Whole grain products can prevent some chronic diseases. Oats and oat-based foods are rich in beta-glucan, which makes them a perfect ingredient for functional foods. The present research objective was to introduce oat-based ingredients into the formulation of sugar cookies and study the quality of the finished product. Study objects and methods. The study involved various formulations of sugar cookies with different proportions of oat meal and composite flour. Sensory, physicochemical, rheological, structural, and mechanical properties were determined according to standard methods. Results and discussion. The mass shares of protein, fat, and dietary fiber increased together with the share of oat meal: protein – 11.9–12.5%, fat – 2.3–3.7%, dietary fiber – 4.1–4.5%. The swelling rates were 3.41–4.60, which was higher than in the wheat flour sample (2.94). Oat meal increased the viscosity of the model suspensions from 50 to 500 Pa·s The sample with the biggest share of oat meal had the greatest strength (1700 g). The water absorption also increased (193%): it was 220 when the share of oat meal was 20% and 221% when it was 30%. Oat meal decreased the water activity from 0.360 to 0.290 as its concentration grew. Conclusion. The optimal amount of oat meal was 30% and that of oatmeal flakes – 10% of the flour amount. The research also defined the effect of oat meal and oat flakes on the composite flour blend, model dough, and sugar cookes. The article introduces a new commercial formulation of sugar biscuits.

Fish is used as a great source of food and the quality of its meat can be indicated by fat and protein contents as well as low quantity of water in fish meat. Therefore, the present study was performed for improvement in weight, feed-conversion ratio, protein-efficiency ratio, and growth. The experiment was performed at commercial level in field (pond) and the influence of fish meal protein on growth of Labeo rohita was investigated in 60 days culture trials. 90 fingerlings (Size: 4.97 to 6.04; Weight: 4.15 to 4.20) were maintained in well aerated 280 L three glass tanks in triplicate. These glass tanks were named as T1, T2 and T3. T1 was consisted of 30% crude protein with control diet containing proteins, fats vitamins and fibres, T2 consisted of 35% protein with control diet, while T3 consisted of only control diet (rice polish). The fish were fed 4% percent of their body weight twice a day at twelve hours interval for 60 days. There was a significant increase (p<0.05) in body weight, feed-conversion ratio, protein-efficiency ratio, and gross fish production of fish having 35% fish meal protein with control diet (T2) when compared with 30% fish meal protein with control diet T1 and control diet T3. These findings suggest that 35% fishmeal protein appear to be sufficient for obtaining optimum growth in fish.

The goal of this study was to evaluate different levels of crambe meal (0, 330, 670 and 1,000 g kg-1 dry matter [DM]) as a replacement for soybean meal in diets supplied to feedlot lambs, and their effects on performance, carcass traits and non-carcass components. Twenty-four castrated lambs weighing 18.2 kg at the beginning of the experiment were allocated in a completely randomized design. Diets were formulated to meet the requirements of the lamb for an average daily gain of 0.200 kg. The roughage:concentrate ratio was 60:40, using Brachiaria dyctioneura hay as roughage. Dry matter intake, feed conversion, average daily gain, carcass traits and non-carcass components were evaluated. There was no effect of different levels of crambe meal replacing soybean meal on performance, carcass traits and non-carcass components, except heart weight. Replacement 1,000 g kg-1 DM of soybean meal protein by crambe meal protein does not affect the performance, carcass traits, or non-carcass components.

Low seed and meal protein concentration in modern high-yielding soybean [Glycine max L. (Merr.)] cultivars is a major concern but there is limited information on effective cultural practices to address this issue. In the objective of dealing with this problem, this study conducted field experiments in 2019 and 2020 to evaluate the response of seed and meal protein concentrations to the interactive effects of late-season inputs [control, a liquid Bradyrhizobium japonicum inoculation at R3, and 202 kg ha−1 nitrogen (N) fertilizer applied after R5], previous cover crop (fallow or cereal cover crop with residue removed), and short- and full-season maturity group cultivars at three U.S. locations (Fayetteville, Arkansas; Lexington, Kentucky; and St. Paul, Minnesota). The results showed that cover crops had a negative effect on yield in two out of six site-years and decreased seed protein concentration by 8.2 mg g−1 on average in Minnesota. Inoculant applications at R3 did not affect seed protein concentration or yield. The applications of N fertilizer after R5 increased seed protein concentration by 6 to 15 mg g−1, and increased yield in Arkansas by 13% and in Minnesota by 11% relative to the unfertilized control. This study showed that late-season N applications can be an effective cultural practice to increase soybean meal protein concentration in modern high-yielding cultivars above the minimum threshold required by the industry. New research is necessary to investigate sustainable management practices that increase N availability to soybeans late in the season.

In this study, phenolic compounds from an aqueous protein by-product from rapeseed meal (RSM) were identified by HPLC-DAD and HPLC-ESI-MS, including sinapine, sinapic acid, sinapoyl glucose, and 1,2-di-sinapoyl gentibiose. The main phenolic compound in this by-product was sinapine. We also performed acid hydrolysis to convert sinapine, and sinapic acid derivatives present in the permeate, to sinapic acid. The adsorption of phenolic compounds was investigated using five macroporous resins, including XAD4, XAD7, XAD16, XAD1180, and HP20. Among them, XAD16 showed the highest total phenolic contents adsorption capacities. The adsorption behavior of phenolic compounds was described by pseudo-second-order and Langmuir models. Moreover, thermodynamics tests demonstrated that the adsorption process of phenolic compounds was exothermic and spontaneous. The highest desorption ratio was obtained with 30% (v/v) and 70% (v/v) ethanol for sinapine and sinapic acid, respectively, with a desorption ratio of 63.19 ± 0.03% and 94.68 ± 0.013%. DPPH and ABTS tests revealed that the antioxidant activity of the hydrolyzed fraction was higher than the non-hydrolyzed fraction and higher than the one of vitamin C. Antioxidant tests demonstrated that these phenolic compounds could be used as natural antioxidants, which can be applied in the food industry.
