The aim of this study was to compare Bacillus cereus growth rates and diarrhoeal enterotoxin production in raw and pasteurized goat, sheep, and cow milk in terms of storage conditions. Milk samples were inoculated with B. cereus (CCM 2010), which produces diarrhoeal enterotoxins. Enterotoxin production was tested by ELISA (Enzyme-Linked Immunosorbent Assay), and the count of B. cereus was determined by the plate method. With raw cow milk, B. cereus growth and enterotoxin production can be completely suppressed; in raw goat and sheep milk, enterotoxin was produced at 22 °C. In pasteurized cow, goat, and sheep milk, the B. cereus count increased under all storage conditions, with more rapid growth being observed at 15 °C (sheep milk) and 22 °C (cow and goat milk). Enterotoxin presence was detected at 15 °C and 22 °C, and with pasteurized cow milk also at 8 °C. Our model experiments have determined that B. cereus multiplication and subsequent enterotoxin production depend on storage temperature and milk type.

Growth, germination and toxigenic activity of Bacillus cereus in pasteurized milk, fruit-flavored reconstituted milk and fermented milk at 30°C were studied. Vegetative cells of B. cereus rapidly increased to 108 CFU/ml in 8 h and 106 CFU/ml in 12 h in pasteurized milk and fruit-flavored reconstituted milk respectively. In fermented milk, vegetative cells of B. cereus were killed or inactivated in 40 min; while about 31% of spores survived the 7 d test period. Spore germination of B. cereus was inhibited by fruit-flavored reconstituted milk and fermented milk. Chinese hamster ovary cells were transformed and/or lysed by pasteurized milk and sterilized milk with B. cereus cultured for 8 h and also by laboratory-prepared fermented milk with B. cereus introduced at the beginning of fermentation an incubated for 12 or 72 h.

ABSTRACT Bacteriocin AS-48 showed high bactericidal activity for mesophilic and psychrotrophic strains of Bacillus cereus over a broad pH range. AS-48 inhibition of the enterotoxin-producing strain LWL1 was enhanced by sodium nitrite, sodium lactate, and sodium chloride. The latter also enhanced AS-48 activity against strain CECT 131. Bacterial growth and enterotoxin production by strain LWL1 were completely inhibited at bacteriocin concentrations of 7.5 μg/ml. At subinhibitory bacteriocin concentrations, enterotoxin production decreased markedly and sporulation was delayed. Intact spores were resistant to AS-48 but became gradually sensitive to AS-48 during the course of germination.
