Protein and fat composition and some manufacturing properties of milk from dairy cows fed on hay and concentrate in various ratios

Seven Friesian cows in each of four treatment groups consumed hay and a rolled barley concentrate in the ratios of 100:0, 80:20, 60:40 and 37:63 respectively. Cows fed on only hay consumed less dry matter than cows fed on barley and hay and produced less milk, fat, solids not fat, protein and casein. Solids not fat, protein, casein, β-lactoglobulin and α-lactalbumin percentages were generally higher when the ration contained a higher proportion of concentrate, although milk fat percentages were similar for all treatments. Casein, β-lactoglobulin and α-lactalbumin concentrations relative to the concentration of total protein were similar for all treatments. Milk fat from cows fed on hay only was generally lower in C10, C12, C18:2 fatty acids and higher in C18:1 and C18:3 fatty acids than milk fat from cows fed on hay and concentrate. The rennet curd firmness of the milk increased as the proportion of concentrate in the diet increased. The mean maximum heat stability of the skimmed milk from individual cows generally decreased as the proportion of concentrate in the diet increased.

To evaluate the effects of fat source on milk fat composition and milk conjugated linoleic acid (CLA) concentration, cows were fed diets that were high in either C18:2 or C18:0. Twenty-two Holstein cows were blocked by parity and milk production and randomly assigned within block to one of two dietary treatments containing either 3% pork fat (LARD) or 3% linola oil (OIL) on a dry matter (DM) basis. The diets were fed for 21 d. Feed intake and milk and milk component yields were unaffected by treatment, whereas milk fat percent was decreased with the linola oil treatment. The cis-9, trans-11 CLA concentration of milk from cows fed linola oil was significantly higher than from cows fed pork lard. Key words: CLA, fatty acids, linola oil, milk

Abstract. The investigations included total 515 milk samples which were collected from 309 cows of the main dairy cows’ breeds used in Poland, i.e. Polish Holstein-Friesian Black-White variety (n=150), Polish Holstein-Friesian Red-White variety (n=77) and Simmental (n=82). There was determined a content of fat, protein and dry matter, a share of fat globules ranging in size, i.e. <6 μm, 6-10 μm and >10 μm as well as a fatty acids profile. It was shown that milk gained from Holstein-Friesian cows was characterized with a higher level of fat dispersion (over 70 % globules of <6 μm diameter and a higher percentage of short- and long-chain fatty acids (ca. 19 %). The Simmentalers’ milk had a higher protein : fat ratio (about 0.89), a lower fat dispersion level (8.21 % globules of >10 μm diameter) and the highest share of the polyunsaturated fatty acids (3.28 %). Cows nutrition included pasture forage during summer (independently on the breed) had a significant influence (P≤0.01) on increased polyunsaturated fatty acids percentage (mean by 0.51 %). The winter milk, however, showed a significantly higher content of dry matter, fat and protein as well as a higher share of big-sized milk globules.

Of the cereals grown in the UK oats, and especially the recently developed naked oats, contain relatively large amounts of C18 fatty acids. Consistent with this, in a series of change-over type experiments substitution of oats or naked oats for barley in dairy cows’ rations reduced the proportion of saturated fatty acids and increased that of monounsaturated fatty acids in milk fat (Martin & Thomas, 1988a, b). These results indicated the inclusion of oats in cows’ diets to be a means of increasing the appeal of milk and milk products to the health-conscious consumer. The present experiment was conducted to assess the likely potential for dietary manipulation of milk fat composition using naked oats under commercial farming conditions.Thirty-two Friesian cows and heifers were used in a continuous design feeding trial which extended from week 3 to week 18 of lactation. The animals were paired on the basis of calving date, lactation number and pre-trial milk yield and, within pairs, were allocated at random to one of two diets.

ABSTRACTAn experiment was carried out to investigate the effects of compound composition and silage characteristics on silage intake, feeding behaviour and productive performance of dairy cows during the first 25 weeks of lactation. Over a period of 3 years, 36 lactating British Friesian cows (12 per year), in their third or later lactations, were divided into two groups. The cows in each group received either compound S, in which the principal energy source was cereal starch, or compound F containing a mixture of high quality digestible fibre. Cows given compound F ate 2·2 kg more silage dry matter per day (P < 0·05). The type of compound had no effect on the frequency of silage feeding and the time spent eating was significantly different only over weeks 10 to 25 of lactation (P < 0·05), with cows on compound F spending on average 20 min longer feeding per day. Cows on compound F produced 1·7 kg more milk per day than cows on compound S. Although there were no significant differences in the concentration of milk constituents, compound F was associated with higher yields of milk constituents. Significant differences were found between the years of experiment in the frequency of feeding (P < 0·05) and also in the concentration of milk protein and milk fat. There were no significant differences in the magnitude of live-weight change between treatments or year of experiment.

Peripartum is a critical period for dairy goats, as dry matter intake (DMI) is not enough to supply the energy requirement for foetal growth and subsequent lactation. The objective of this study was to evaluate the use of calcium salts of fatty acids (CSFA) to increase dietary energy level of peripartum dairy goats and its effects on nutritive value of diets and milk quality. Twenty multiparous Saanen goats (body weight 63.5±10.3 kg) were distributed in a completely randomised design in four treatments at the following dietary energy levels: 2.6 Mcal of metabolisable energy per kg of dry matter (Mcal ME/kg DM) - control diet; and 2.7, 2.8, and 2.9 Mcal/kg DM - with added CSFA. Goats were housed in individual stalls and evaluated in the peripartum period, by measuring body weight (BW), DMI, dry matter and nutrient digestibility of diets, blood composition, and milk quality and yield. Increasing dietary energy level to 2.9 Mcal ME/kg DM had no effect on BW and did not limit DMI. CSFA supplementation increased intake of total digestible nutrients and did not affect fibre digestion. Blood triglycerides and cholesterol concentration increased with CSFA addition. The treatments had no effect on milk yield and composition; however, CSFA supplementation changed the fatty acid concentration of milk fat, increasing levels of polyunsaturated and essential fatty acids. In conclusion, peripartum dairy goats supplemented with CSFA to increase dietary energy level up to 2.9 Mcal ME/kg DM had a greater supply of total digestible nutrients and showed altered fatty acid concentration of milk fat.

In May 2003 differences in milk fat composition in two main dairy breeds in the Czech Republic, Czech Pied cattle and Holstein cattle, were studied in two uniform groups, each containing eight cows. The groups were housed together and received the same daily diet. Fatty acids were determined in mean milk samples from the individual cows as their methyl esters using a gas chromatography procedure. The groups of the fatty acids, namely saturated (SAFA), monounsaturated (MUFA) and polyunsaturated (PUFA) ones, were examined together with the individual acids. The milk fat of Czech Pied cattle was found to contain significantly less SAFAs than the fat of Holstein cows (60.78 and 63.62% of total acids; P &lt; 0.05). Determined mean MUFA contents (27.64 and 25.76%) and total levels (34.31 and 32.11%) of all the unsaturated acids (MUFAs and PUFAs) were insignificantly elevated in the milk fat of Czech Pied cattle. The contents of the most of the individual fatty acids did not differ considerably between the breeds. In Holstein cows, significantly higher contents (P &lt; 0.05) of capric acid (C<sub>10:0</sub>) and stearic acid (C<sub>18:0</sub>) 3.30 and 4.45%, respectively, as compared with 2.69 and 2.61% for Czech Pied cows, were observed. The milk fat of Czech Pied cows had significantly higher contents of oleic acid (C<sub>18:1</sub>) 23.60% (P &lt; 0.05) and of an isomer of octadecatrienic acid (C<sub>18:3n4</sub>) 0.16% (P &lt; 0.001) as compared with 21.68 and 0.10%, respectively, in the fat ofHolstein cows. &nbsp;

Four groups of seven Friesian cows were offered 70% of their calculated metabolizable energy requirements as pasture hay and either 2.4, 4.8 or 7.2 kg/d of dry matter (DM) as wet brewers' grains or 3.9 kg DM/d as rolled barley. A further group of cows received no supplement. The quantities of brewers' grains offered were calculated from in vitro digestible DM content to provide lo%, 20% and 30%, respectively, of metabolizable energy requirements and the rolled barley 30% of metabolizable energy requirements. The cows consumed a mean of 2.2,4.3 and 6.1 kg DM/d, respectively, as brewers' grains and 3.9 kg DM/d as rolled barley. The daily yields of milk (litres), protein (kg) and solids not fat (kg), respectively, were greater (P < 0.05) for the cows offered brewers' grains at 4.8 kg DM/d (1 5.6,0.49, 1.36) and 7.2 kg DM/d (16.4, 0.54, 1.45) than for the cows offered rolled barley (13.3, 0.45, 1.21). Daily yields of milk fat from the cows offered either 4.8 or 7.2 kg DM/d of brewers' grains or rolled barley did not differ significantly. There were no significant differences between treatments in liveweight change. It was concluded that wet brewers' grains and rolled barley offered as supplements to dairy cows fed hay have similar nutritive values for milk production. It was calculated that for milk fat production the break even landed price ratio of brewers' grains to barley is 1:1.26.

It is well established that the proportion of saturated fatty acids in cows milk fat can be reduced by dietary inclusion of fats containing a large proportion of C18 fatty acids. Regardless of the individual C18 acids added to the diet, because unsaturated C18 fatty acids are biohydrogenated in the rumen it is principally the amount of 18:0 absorbed by the animal which is increased. This leads to increased mammary uptake and desaturation of 18:0 and to the secretion in milk of greater amounts of 18:0 and 18:1 fatty acids. Intramammary synthesis of 6:0-16:0 fatty acids is concurrently reduced. Of the cereals grown in the UK, oats contain relatively large amounts of C18 fatty acids. For this reason we have examined the potential of dietary inclusion of oats as a simple and inexpensive means of manipulating milk fat composition. In a previous experiment in which hay-based diets were given replacement of barley with oats reduced the saturated (6:0-18:0) fatty acids in milk fat from 753 to 619 g/kg and increased the monounsaturated fatty acids from 211 to 344 g/kg milk fat.

In 2003, 2004 and 2005 milk fat composition was determined three times in 55 dairy cows of Czech Pied cattle housed in a byre with stanchions and fed under conditions usual on Czech production farms. Fatty acids were determined by a gas chromatographic method, 26 acids out of the total 37 acids observed in chromatograms were identified. The highest proportions were observed for palmitic acid (29.25 &plusmn; 2.98%), oleic acid (24.47 &plusmn; 3.27%), myristic acid (12.14 &plusmn; 1.80%) and stearic acid (8.91 &plusmn; 2.44%). The proportions of saturated, unsaturated and monounsaturated fatty acids were 64.71 &plusmn; 4.18, 31.96 &plusmn; 4.20 and 27.45 &plusmn; 3.42% of total acids, respectively. The total proportion of nutritionally undesirable lauric, myristic and palmitic acid was 45.26 &plusmn; 4.77%, while that of the desirable group of polyunsaturated fatty acids was 4.51 &plusmn; 1.09%. The observed relatively wide ranges of the individual groups of fatty acids indicate that it is possible to improve the milk fat composition in Czech Pied cows. &nbsp;

The transfer of ingested α-linolenic acid (ALA) and linoleic acid (LA) determines the nutritional quality of milk, but the factors determining this transfer are unclear. The present experiment investigated the influence of roughage to concentrate proportions and the effect of concentrate types on milk fat composition. Respectively, six lactating dairy cows were fed one of three isoenergetic (5·4±0·05 MJ net energy for lactation/kg dry matter; DM) and isonitrogenous (215±3·5 g crude protein/kg DM) diets, consisting of ryegrass hay only (33 g fatty acids/kg DM; ALA-rich, no concentrate), maize (straw, whole maize pellets and gluten; 36 g fatty acids/kg DM; LA-rich; 560 g concentrate/kg DM), or barley (straw and grain plus soybean meal; 19 g fatty acids/kg DM; LA-rich; 540 g concentrate/kg DM). The fatty acid composition of feeds and resulting milk fat were determined by gas chromatography. The ALA concentration in milk fat was highest (P<0·001) with the hay-diet, but the proportionate transfer of ALA from diet to milk was lower (P<0·001) than with the maize- or barley-diets. The LA concentration in milk fat was highest with the maize-diet (P<0·05, compared with hay) but relative transfer rate was lower (P=0·01). The transfer rates of ALA and LA were reciprocal to the intake of individual fatty acids which thus contributed more to milk fat composition than did roughage to concentrate proportions. The amount of trans-11 18:1 in milk fat was lowest with the barley-diet (P<0·001) and depended on the sum of ALA and LA consumed. The milk fat concentration of cis-9, trans-11 18:2 (rumenic acid) was more effectively promoted by increasing dietary LA (maize) than ALA (hay). Amounts of 18:0 secreted in milk were four (maize) to seven (hay) times higher than the amounts ingested. This was suggestive of a partial inhibition of biohydrogenation in the maize-diet, possibly caused by the high dietary LA level.
