Abstract. The thesis focuses on how to get the mathematical model of mass transfer under some certain simplified conditions and how to gain the moisture content of materials under drying. In this process, authors utilized phenomenological equations of heat and moisture transfer and analyzed the relationship and cross effects between force and flow, which were about various kinds of heat and mass transfer. In addition, the authors also used computer simulation in drying process. The result of the study is that drying rate depends on the speed of the internal moisture migration. The conclusions of this thesis have great significance for selecting the dryer and in the actual production.

The mathematical model of wood drying based on detailed transport phenomena considering both heat and moisture transfer have been offered in article. The adjustment of this model to the drying process of papermaking is carried out for the range of moisture content corresponding to the period of drying in which vapour movement and bound water diffusion in the web are possible. By averaging as the desired models are obtained sequence of the initial value problems for systems of two nonlinear first order ordinary differential equations.

Abstract The influence of drying on the color, porosity, shrinkage and moisture of persimmon fruit during convective drying was determined by computer vision. The experiments were performed with persimmon fruit that were cut into slab 20 × 20 mm, which were arranged into a bigger slab, 60 × 60 mm. Drying process was carried out at 60 °C. Noticeable changes in quality parameters (color, porosity and shrinkage) could be observed during the drying process, where the central region of the sample evidenced less changes. Persimmon’s physical properties were experimentally obtained as the temperature function and heat and mass convective coefficients were adjusted as a time function. A numerical simulation using the Finite Volume Method allowed to describe the evolution of temperature and moisture content distributions during drying. The numerical and experimental results of temperature and moisture during persimmon drying were found to be in a good agreement.

Abstract The objective of this work was to evaluate the partial replacement of gum arabic by modified starches on the spray-drying microencapsulation of lemongrass (Cymbopogon flexuosus) essential oil. The ultrasound-assisted emulsions were prepared with 30% (w/w) of wall material, 7.5% (w/w) of oil load, and 1:1 (w/w) replacement ratio for all treatments. After 16 hours, the incompatibility observed between gum arabic and octenyl succinic anhydride (OSA) starch did not affect the obtained microparticles, since the treatment with OSA starch, partially replacing gum arabic, showed the best results for the process yield and for the oil charge retention after spray-drying process, and the treatment showed Newtonian viscosity close to that of the treatment prepared with gum arabic. Maltodextrin dextrose equivalent 10 (10DE) shows an oil load similar to that of the treatment with gum arabic, while the presence of maize maltodextrin DE20 reduces the content of encapsulated oil and the efficiency of the drying process due to the adherence of particles to the chamber. Therefore, the partial substitution of gum arabic is an alternative for the formation of emulsions, for the spray-drying microencapsulation of lemongrass essential oil.

The work is devoted to the issue of the rational use of the solar energy in the technological process of fruit drying based on the use of solar drying devices, which are applied in various sections of the agro-industrial centers of Ukraine. The aim of this research was intensification of the fruits drying process using the solar energy by combining an air collector and drying chamber into a single power unit. To achieve the aim the heat exchange diagnostic techniques with alternative potentials of diffusion and moisture transfer was developed. This technique differs from those existing for the heat exchange research in that it allows the intensity of the moisture evaporation from a unit of the material surface to be calculated, based on the synthesis of the moisture content and the irreversible major laws of processes of the heat exchange characteristics of the fruits drying using the solar dryer. The above model makes it possible to diagnose the heat exchange processes and analyze the mathematical model of the heat exchange processes. It also allows modeling the changeable diffusion and moisture transfer potentials based on the dependences obtained and for the purpose of a further application in the methods and devices development to control the strain-deformed state of the fruits during the drying process. The method is offered for the calculation of diffusion and moisture transfer during drying fruits in the solar dryer.
