Nondestructive evaluation of the biogenic amine in crayfish (Prokaryophyllus clarkii) by nearinfrared spectroscopy

Biogenic amines are a group of nitrogen substances and widely adopted to assess the food safety, especially for the aquatic products. In China, crayfish ( Prokaryophyllus clarkii) have become one of the most famous aquatic products and form a complete industrial value chain. To ensure the safety of the crayfish industrial chain, a rapid and nondestructive method for determining the biogenic amines of crayfish by nearinfrared spectroscopy coupled with chemometrics was proposed in this study. The quantitative models of histamine, tyramine, cadaverine, and putrescine were built by using the partial least squares (PLS) regression. The spectral preprocessing and the wavelength selection methods were adopted to optimize the models. For histamine, cadaverine, and putrescine in peeled or whole tails, reasonable quantitative results can be obtained by using the optimized models; the coefficient of determination (r2) are 0.88 and 0.90, 0.88 and 0.91, 0.89, and 0.84, respectively. As for tyramine in peeled or whole tails, the results are acceptable and the coefficient of determination (r2) is 0.83 and 0.74, respectively.

As the resource advantage is gradually weakened, business situation of small and medium-sized enterprises (SMEs) engaged in medium and low-tech traditional industries is becoming more seriously. Industrial innovation and upgrading shall be conducted in order to achieve the sustainable development of traditional industries. Given the characteristic that medium and low-tech traditional enterprises rely on progressive innovation from the external organizations including the government, other enterprises and research institutes, etc., the enterprises should improve their strategic position in the industrial value chain, and change the business mode and growth pattern jointly from the aspects of technical innovation, system innovation, management innovation and cultural innovation, etc., to achieve the transformation from resource advantage to innovation advantage.

The creative industry is currently growing very rapidly in developing countries. This is indicated by various government policies to increase the competitiveness of this industry. Value chains are needed to gain the competitive advantage within this industry at every additional step of the chain. However, there is no comprehensive research on the creative industry value chain in developing countries, such as Indonesia, especially in small and medium enterprises (SMEs). This study attempts to explore the concept of industrial chain values to narrow the gaps that exists in the literature. The research method used is a qualitative approach through semi-structured interviews and observations of 11 SMEs consisting of 5 creative business sub-sectors, namely the culinary, fashion, craft, photography, and visual communication design sectors. The results of this study indicate that, in creative industries, co- creation is the differentiator on the value chain activities, especially those that offer customization. Meanwhile, the use of social media is also considered as an important value chain activities that must be used to effectively communicate the value of the business. The results of this study can be used by stakeholders in Indonesian SMEs as a reference for formulating competitiveness strategies for this creative industry.

Abstract Controlling the content of biogenic amines (BAs) is critical to guarantee the safety of fermented aquatic products. The degradation characteristics and application potential of amine-negative starter cultures (Virgibacillus halodenitrificans CGMCC 1.18601: G25, Virgibacillus pantothenticus CGMCC 1.18602: G38) screened from grasshopper sub shrimp paste (Gssp) were studied. The enzymes of the two strains G25 and G38 that degrade BAs were amine oxidases (AOs) located on their respective cell membranes. The conditions that promoted the AO activity of Virgibacillus spp. were NaCl concentrations 5–10%, temperature 37°C, pH 7.0 and ethanol concentrations 0–2%. Safety assessments (antibiotic susceptibility, biofilm activity and hemolytic activity) indicated that Virgibacillus spp. do not present a risk to human health, and this isolate can be confidently recommended as safe starter cultures for the food industry. Then, the two strains were cultured separately as starters and applied to the Gssp to analyze their influence on the flavor and quality of the product. As far as the bad flavors in Gssp such as sulfur-organic and sulf-chlor were concerned, the response values in the starter groups by G25 and G38 were significantly reduced by 39% and 65%, respectively. For the ability of strains to degrade BAs in Gssp, G25 degraded 11.1% of histamine, 11.3% of tyramine, 15.5% of putrescine and 4.1% of cadaverine; G38 significantly degraded 10.1% of histamine, 21.8% of tyramine, 18.1% of putrescine and 5.0% of cadaverine. These results indicated that the selected species could be used as starter cultures for the control of BA accumulation and degradation in Gssp.

This study proposes a conceptual framework that aims to gain insight into the integration of the sustainable development goals (SDG) within the Norwegian salmon value chain (NSVC). The proposed framework was developed by applying the systems engineering six-step method and validated through empirical findings from the NSVC. The framework’s application highlighted and analyzed the presence of the SDGs in corporate sustainability reports, academic curriculum, research, and governmental policies. This study uncovered the complexity-reduction elements within the system that drive SDG integration and assure their progress. The SDGs provide a global context for sustainability endeavors in the NSVC. A globally expanded value chain has an organic relationship with global sustainability terms and schemes. The existing practice of corporate sustainability annual reporting was found to be a significant channel for SDG communication. The novelty of this study was that it proposed a mind-map to understand SDG integration within an industrial value chain abstracted into three concepts: commitment, communication, and performance measurability.
