Relevance. Biofortification of agricultural crops with selenium is considered to be the most promising method for the human selenium status optimization.Methods. Effect of foliar biofortification of cauliflower, Polyarnaya Zvezda cv, with sodium selenate of different concentrations on yield, selenium content and biochemical characteristics of plants were investigated.Results. Enrichment of plants with selenium increased yield by 1.23-1.31 times, sugar content – 1.6 times, ascorbic acid concentration – 1.52-2 times. On the contrary, the treatment did not affect pholyphenol content and antioxidant activity of ethanolic extracts of plants. Selenium accumulation levels decreased according to inflorescences > leaves > roots. Sodium selenate solution at 75 mg/L concentration increased mass of cauliflower leaves 1.9 times and roots – 1.5 times. Consumption of 100 g of cauliflower fortified with 50 mg/L sodium selenate solution provided 100% of the daily adequate selenium consumption level. Utilization of higher sodium selenate concentrations ensured 127% and 418% of the daily adequate consumption level in case of 75 mg/L and 100 mg/L concentrations respectively. Taking into account insignificant differences between sugar content and antioxidants in cauliflower inflorescences fortified with different doses of selenium the most suitable concentration to be used was 50 mg/L.

Introduction. Considering the essential biological role of selenium, including its role in preventing cardiovascular diseases and its widespread deficit in soils, assessing selenium status for Crimean region inhabitants is an actual task. Material and methods. Determination of selenium content in hair as index the of long-term element’s intake into the human body by all pathways were determined by the fluorometric method in 46 inhabitants (18-20 years old) from city Simferopol. Additionally, the selenium was determined in water and food products in Simferopol and nearby residential territories. Results. Selenium content in most residents’ hair varied from 210 to 309 mcg/kg and 12-40% less than the normal range’s lower limit. These results show the selenium deficiency in urban residents from the Crimean region, mainly due to the low content of this element in cereal products and, to a less degree, - in water. However, most food products, which are the primary source of selenium in Crimean inhabitants’ diet, are delivered from other Russian regions. So it’s possible to assess the selenium supply of inhabitants, but it is not possible to make a total conclusion about the selenium status of the region. Conclusion. The revealed deficiency of selenium in Crimean region inhabitants and the literature data about the positive and close relationship between hyposelenosis and the quality of public health requires the extensive monitoring of the selenium content in soils and crop production the Crimean peninsula territory.

1. Iodothyronine 5′-deiodinase, which is mainly responsible for peripheral triiodothyronine (T3) production, has recently been demonstrated to be a selenium-containing enzyme. In the elderly, reduced peripheral conversion of thyroxine (T4) to T3 and overt hypothyroidism are frequently observed. 2. We measured serum selenium and erythrocyte glutathione peroxidase (as indices of selenium status), thyroid hormones and thyroid-stimulating hormone in 109 healthy euthyroid subjects (52 women, 57 men), carefully selected to exclude abnormally low thyroid hormone levels induced by acute or chronic diseases or calorie restriction. The subjects were subdivided into three age groups. To avoid conditions of undernutrition or malnutrition, dietary records were obtained for a sample of 24 subjects, randomly selected and representative of the whole population for age and sex. 3. In order to properly assess the influence of selenium status on iodothyronine 5′-deiodinase type I activity, a double-blind placebo-controlled trial was also carried out on 36 elderly subjects, resident at a privately owned nursing home. 4. In the free-living population, a progressive reduction of the T3/T4 ratio (due to increased T4 levels) and of selenium and erythrocyte glutathione peroxidase activity was observed with advancing age. A highly significant linear correlation between T4, T3/T4 and selenium was observed in the population as a whole (for T4, R = −0.312, P < 0.002; for T3/T4 ratio, R = 0.32, P < 0.01) and in older subjects (for T4, R = −0.40, P < 0.05; for T3/T4 ratio, R = 0.54, P < 0.002). 5. The main result of the double-blind placebo-controlled trial was a significant improvement of selenium indices and a decrease in the T4 level in selenium-treated subjects; serum selenium, erythrocyte glutathione peroxidase activity and thyroid hormones did not change in placebo-treated subjects. 6. We concluded that selenium status influences thyroid hormones in the elderly, mainly modulating T4 levels.

Modified natural zeolites (MNZ) are widely used in pollutant removal, but how to address these MNZ that have adsorbed pollutants must be considered. Selenium is an essential trace element for metabolism and is also a water pollutant. Selenium is adsorbed in the water by MNZ in this study first. Then the Brassica chinensis L. was planted in the soil which contains the MNZ loaded with selenium (MNZ-Se) to explore selenium uptake. MNZ-Se release tests in water and soil were also considered. The results showed the following: (1) The maximum adsorption capacity of MNZ for selenium is 46.90 mg/g. (2) Water release experiments of MNZ-Se showed that regardless of how the pH of the aqueous solution changes, the trend of the release of selenium from MNZ-Se in aqueous solution is not affected and first decreases before stabilizing. (3) Soil release experiments of MNZ-Se showed that the selenium content in the soil increased and reached the concentration in the standard of selenium-rich soil. Addition amount and soil pH value will affect the release ratio. The release ratio of MNZ-Se in the water was higher than that in the soil. (4) With an increase in the soil MNZ-Se content, the selenium content in the soil and B. c increases. Above all, MZN can be a good medium for water pollutant removal and soil improvement.

The intent of this review is to summarize the knowledge about selenium and its function in a dog’s body. For this purpose, systematic literature search was conducted. For mammals, including dogs, a balanced diet and sufficient intake of selenium are important for correct function of metabolism. As for selenium poisoning, there are no naturally occurring cases known. Nowadays, we do not encounter clinical signs of its deficiency either, but it can be subclinical. For now, the most reliable method of assessing selenium status of a dog is measuring serum or plasma levels. Levels in full blood can be measured too, but there are no reference values. The use of glutathione peroxidase as an indirect assay is questionable in canines. Commercial dog food manufactures follow recommendations for minimal and maximal selenium levels and so dogs fed commercial diets should have balanced intake of selenium. For dogs fed home-made diets, complex data are missing. However, subclinical deficiency seems to affect, for example, male fertility or recovery from parasitical diseases. Very interesting is the role of selenium in prevention and treatment of cancer.
