The genus Leuconostoc belongs to a group of lactic acid bacteria usually isolated from fermented vegetables, which includes species involved in the production of exopolysaccharides (EPS). These biopolymers possess considerable commercial potential. Because of the wide variety of industrial applications of EPS, this study aimed to produce and characterize the native exopolysaccharide strain Leuconostoc pseudomesenteroides R2, which was isolated from cabbage collected in a semi-arid region of Bahia. We employed the following conditions for the production of EPS: 10.7% sucrose, pH 8.2, without agitation and incubation at 28ºC for 30 hours. The fermentation broth was treated with ethanol and generated two types of polysaccharide substances (EPS I and EPS II). The identification of EPS I and EPS II was conducted using FT-IR, ¹H, 13C and DEPT-135 NMR spectra. The two substances were identified as linear dextran α polysaccharides (1 → 6) which indicated different characteristics with respect to thermal analysis and density of free packaging, viscosity and time of solubilization. Both dextrans are of low density, possess high thermal stability and exhibited the behavior characteristic of pseudoplastic polymers.

Invertase (β-fructofuranosidase, EC 3.2.1.26) catalyzes sucrose hydrolysis into glucose and fructose and it is one of the simplest carbohydrases. These enzymes occur widely in nature and their presence has been reported in microorganisms and plants. Since yeasts are the main industrial source, most researches concerning this enzyme have focused on invertase extracted from such source. This study extracted and characterized inverted intracellular (Inv-I) and extracellular (Inv-E) of Kluyveromyces marxianus CCMB 322 isolated in the baiano semi-arid region. Kluyveromyces marxianus CCMB 322 produces intracellular and extracellular invertase with different characteristics. The optimum activity was achieved at approximately pH 3.9 and 45ºC, in Inv-I and Inv-E. The invertases produced by K. marxianus CCMB 322 showed thermal stability similar to that found in other studies. The Km and Vmax values of the Inv-I enzyme were 61.12mM and 5.56 µmol/mL.min-1, but the Km and Vmax values of the Inv-E enzyme were 76.5mM and 0.364 µmol/mL.min-1. Inverted from K. marxianus is a higher affinity for sucrose compared to enzymes from other sources.

A thermal analysis has been applied to characterization of food and food products. Taking into account the problems of desertification and agricultural practices able to provide income to the population at the semi-arid region of Northeastern Brazil, this work presents the results of the chemical, thermal and kinetic characterization by thermogravimetry and differential scanning calorimetry of the seed derivatives of favelone (cnidoscolus quercifolius), aiming at the application of these materials as an alternative of food source for animals and for the human population at this brazilian region.

Alginate hydrogels are suitable for the encapsulation of a great variety of biomolecules. Several alternatives to the conventional alginate formulation are being studied for a broad range of biotechnological applications; among them the addition of sugars and biopolymers arises as a good and economic strategy. Sugars (trehalose and β-cyclodextrin), a cationic biopolymer (chitosan), an anionic biopolymer (pectin), and neutral gums (Arabic, guar, espina corona, and vinal gums) provided different characteristics to the beads. Here we discuss the influence of beads composition on several physicochemical properties, such as size and shape, analyzed through digital image analysis besides both water content and activity. The results showed that the addition of a second biopolymer, β-CD, or trehalose provoked more compact beads, but the fact that they were compact not necessarily implies a concomitant increase in their circularity. Espina corona beads showed the highest circularity value, being useful for applications which require a controlled and high circularity, assuring quality control. Beads with trehalose showed lower water content than the rest of the system, followed by those containing galactomannans (espina corona, vinal, and guar gums), revealing polymer structure effects. A complete characterization of the beads was performed by FT-IR, assigning the characteristics bands to each individual component.

In this paper, the intercalation of methyl-red (MR) into Mg/Al (ratio=2:1) layered double hydroxide (LDH) was carried out using reconstruction method to obtain MRLDH nanocomposite material. Its chemical composition, crystal structure and appearance were characterized by XRD, FT-IR, TEM, TG-DTA and element analysis. It has been found that the MRLDH still keeps the typical lamellar structure, and the guest MR has inserted into the layers of the host LDH. The MRLDH’s disassembly temperature is higher more than 70°C than that of guest molecule MR, so it can be used as a new dye with high thermal stability.
