Although several new southern highbush blueberry cultivars have been introduced, little is known about their shelflife quality. Five southern highbush cultivars and three advanced selections were harvested from plantings at Clarksville, Ark. and held at 5C, 95% RH for 21 days followed by 1 day at 20C. `Gulf Coast' fruit had the most and `A109' the least weight loss after storage (12% and 6%). `Gulf Coast' fruit were rated softest after storage, Anthocyanin content was highest in `Cape Fear' and lowest in `MS108' (142 and 57 abs. units/g FW, respectively). After storage, total anthocyanin content increased 60% in `Cape Fear' and `O'Neal' fruit. Fruit pH was higher in stored fruit but titratable acidity decreased only in `ONeal', `Sierra', and `G616' fruit. Results indicate that southern highbush blueberries cultivars show great variability in shelflife quality.

Three southern highbush blueberry cultivars (Vaccinium corymbosum hybrids) were mechanically harvested (MH) or hand-harvested (HH) and commercially packed before storage for 14 days at 1 °C in two successive years. MH fruit were softer, had lower ratings for overall appearance, and lost up to 20% more fresh weight than HH fruit after 14 days storage. MH ‘Meadowlark’ had fewer soft fruit (<35%) during storage than either ‘Sweetcrisp’ or ‘Farthing’; however, the latter two cultivars had lower incidences of shrivel and weight loss. Fruit in the 2010 season were more susceptible to bruising than those from the 2009 season; however, soluble solids content (SSC), total titratable acidity (TTA), and ascorbic acid concentration remained constant during storage and between seasons. ‘Meadowlark’ had the highest sugar to acid ratio (25.0). Successful implementation of MH of southern highbush blueberries for fresh market will only be commercially feasible if harvest impacts are further reduced.

The objective of this study was to apply a HPLC methodology for qualitative and quantitative analysis of the six anthocyanidins present in fruits and to analyze the anthocyanin and anthocyanidin content of blueberries cultivated in Southern Brazil. The samples used belong to highbush blueberries (Vaccinium corymbosum) cultivars. Total anthocyanin content was determined by the pH differential method and an HPLC gradient elution system with C18 column and UV-Vis detection at 520 nm were used for separation and quantification of the anthocyanidins. Total anthocyanin content was of 128 ± 3 mg per 100 g of fresh pulp. Blueberry pulp presented 55 % of delphinidin, 8 % of cyanidin, 3 % of peonidin and 34 % of malvidin. Pelargonidin was not identified in the sample and petunidin was below the limits of quantification. The results were similar to those reported in studies using North American and European blueberries.

The southern highbush blueberry (Vaccinium spp.) `Blueridge', `Cape Fear', `Cooper', `Georgiagem', `Gulf Coast', and `O'Neal'; the rabbiteye (V. ashei Reade) `Climax'; and the highbush (V. corymbosum L.) `Bluecrop' were evaluated for ovary damage following exposure of flower buds to 0 to 30C in a programmable freezer in Dec. 1993 and Jan. and Feb. 1994. The plants sampled were growing at the Univ. of Arkansas Fruit Substation, Clarksville. Damage was based on oxidative browning of the ovaries following an incubation period after removal from the freezer. With the exception of `Climax', a minimum temperature of –15C was required before bud damage was sufficient enough to differentiate among cultivars. All southern highbush cultivars and `Bluecrop' had superior hardiness compared to `Climax' at –15C in December, –20C in January, and –15C in February. Maximum hardiness of all cultivars was found in January. The hardier southern highbush cultivars were `Cape Fear' and `Blue Ridge'. Less hardy cultivars were `Gulf Coast, `Cooper', `Georgiagem', and `O'Neal', although the date of sampling affected the ranking of these clones for hardiness, especially for the February sample date. `Bluecrop' was not consistently hardier than the hardier southern highbush cultivars, except at the February sample date.

The postharvest performance of early ripening southern highbush blueberries `Sharpblue' and `Gulfcoast' was evaluated under storage and simulated retail conditions. In general, `Gulfcoast' fruit were 28% heavier than those of `Sharpblue', which had a higher percent soluble solids concentration (SSC) and lower titratable acidity (TA). Quality loss, as indexed by fresh weight, percent decayed fruit, or changes in SSC, pH, or TA, was insignificant in first-harvest fruit of either cultivar when kept in storage (2C) for up to 7 days. Transfer of fruit stored at 2C for 3 days to simulated retail conditions at 21C for 4 days significantly increased fresh weight loss and decay, but not beyond levels deemed unmarketable. Second-harvest fruit were smaller than first-harvest fruit, and those of `Sharpblue' fruit were more prone to decay. However, storage quality of both cultivars was acceptable through 11 days at 2C. Retail quality, as influenced by decay incidence, was acceptable after 3 days at 2C plus 4 days at 21C, but not after 3 days at 2C plus 8 days at 21C. Overall, fruits of these early ripening southern highbush blueberry cultivars performed well under postharvest conditions and are suitable for expanding production of premium fresh blueberries by growers in the Gulf coastal plains.

The aim of the study was to determine the effect of modified atmosphere (MA) packages on the external quality of organically grown lowbush blueberry and half-highbush blueberry (’Northblue’) and the nutritional value of the fruits. Fruits were divided into plastic punnets and stored as follows: regular atmosphere (RA), punnets without packing; punnets sealed in a low-density polyethylene (LDPE, Estiko) bag; punnets sealed in an Xtend® blueberry bag (Stepac). Fruits were stored at 3 ± 1 °C. Compared to RA conditions, the Xtend® package prolonged the postharvest life for 15 days for lowbush and 9 days for half-highbush blueberries. Fruit dry matter (DM) and titratable acidity (TA) were higher in the Xtend® package. Fruit SSC decreased in the LDPE packages and increased in the Xtend® packages during storage. Based on the decreased soluble solids content (SSC) and titratable acidity (TA) ratio (SSC:TA) values during storage, it can be concluded that the taste of the fruits became sourer in all packages. Anthocyanin biosynthesis of lowbush blueberries was suppressed in MA, but this effect was not noticed for ‘Northblue’. Regarding fruit firmness, shrivelling, and decay, there were significant differences between the MA packages, but the genetic differences were more important: half-highbush blueberry fruits were firmer and less shrivelled.

Methyl anthranilate, soluble solids, titratable acidity, pH, and total anthocyanin content of Concord grapes was followed during ripening in the 1970 season. Methyl anthranilate content increased from 0.04 ppm on 27 August to 6.44 ppm on 26 October and declined thereafter. The maximum values for the other components examined were: total anthocyanins, 114 mg/100 g (30 Oct.); soluble solids, 16.4% (13 Oct.); titratable acidity (minimum), 9.45‰ (16 Oct.); and sugar/acid, 16.93 (16 Oct.).

Anthocyanins in ripe fruit of four Vaccinium species and genotypes within these species were compared, revealing substantial inter- and intra-species variability among these commercial and non-commercial blueberries. The highest total anthocyanin content occurred in the bilberry (V. myrtillus L.). Commercial lowbush blueberry clonal mixtures and wild velvet leaf blueberries (V. myrtilloides L.) had about 43% of the anthocyanin content of bilberries (fresh weight basis). Three commercial highbush cultivars (V. corymbosum L.) had about 30% of the bilberry level, while wild genotypes of highbush blueberries had almost 60% of the bilberry level. Acetylation of anthocyanins occurred widely among all species, except bilberries. Although the proportions of the five blueberry anthocyanidins varied substantially among the commercial blueberries, these differences probably do not contribute substantially to differences in their relative antioxidant capacity. Abstract. The goals of this study were to determine and evaluate the bioaccessibility of total anthocyanin and procyanidin in apple (Amasya, Malus communis), red grape (Papazkarası, Vitis vinifera) and cinnamon (Cassia, Cinnamomum) using an in vitro static digestion system based on human gastrointestinal physiologically relevant conditions. Also, in vitro inhibitory effects of these foods on lipid (lipase) and carbohydrate digestive enzymes (α-amylase and α-glucosidase) were performed with before and after digested samples using acarbose and methylumbelliferyl oleate (4MUO) as the positive control. While the highest total anthocyanin content was found in red grape (164 ± 2.51 mg/100 g), the highest procyanidin content was found in cinnamon (6432 ± 177.31 mg/100 g) (p < 0.05). The anthocyanin bioaccessibilities were found as 10.2 ± 1%, 8.23 ± 0.64%, and 8.73 ± 0.70% in apple, red grape, and cinnamon, respectively. The procyanidin bioaccessibilities of apple, red grape, and cinnamon were found as 17.57 ± 0.71%, 14.08 ± 0.74% and 18.75 ± 1.49%, respectively. The analyzed apple, red grape and cinnamon showed the inhibitory activity against α-glucosidase (IC50 544 ± 21.94, 445 ± 15.67, 1592 ± 17.58 μg/mL, respectively), α-amylase (IC50 38.4 ± 7.26, 56.1 ± 3.60, 3.54 ± 0.86 μg/mL, respectively), and lipase (IC50 52.7 ± 2.05, 581 ± 54.14, 49.6 ± 2.72 μg/mL), respectively. According to our results apple, red grape and cinnamon have potential to inhibit of lipase, α-amylase and α-glucosidase digestive enzymes.

Biochemical juice attributes and color-related traits of muscadine grape genotypes have been investigated. For this study, 90 muscadine genotypes, including 21 standard cultivars, 60 breeding lines, and 9 Vitis x Muscadinia hybrids (VM), were evaluated. The biochemical properties of total soluble solids (TSS), titratable acidity, and TSS/Acid (T/A) ratio showed modest diversity among genotypes with a range of 10.3 °Brix, 2.1 mg tartaric acid/L, and 4.6, respectively. Nonetheless, the pH trait exhibited a tight range of 0.74 among the population with a minimum and maximum pH of 3.11 ± 0.12 and 3.85 ± 0.12. Color-related traits showed more deviation between individuals. Total anthocyanin content (TAC), luminosity index (L*), hue angle (h°), and chroma index (C*) displayed a range of 398 µg/g DW, 33.2, 352.1, and 24, respectively. The hierarchical clustering map classified the population into two large groups of colored and non-colored grapes based on L* and h°, suggesting the predominance of these two characters among the population. The colored berries genotypes clade was further divided into several sub-clades depending on C*, TAC, and TSS levels. The principal component analysis (PCA) separated the four-color characteristics into two groups with a negative correlation between them, L* and C* versus TAC and h°. Further, PCA suggested the positive influence of acidity in enhancing the different nutraceutical components. Despite the nature of anthocyanins as a member of phenolic compounds, a lack of significant correlation between TAC and nutraceutical-related traits was detected. The dissimilatory matrix analysis highlighted the muscadine individuals C11-2-2, E16-9-1, O21-13-1, and Noble as particular genotypes among the population due to enhanced color characteristics.

This work studied the effects of centrifugal block freeze crystallization (CBFC) on physicochemical parameters, total phenolic compound content (TPCC), antioxidant activity (AA), and process parameters applied to fresh murta and arrayan juices. In the last cycle, for fresh murta and arrayan juices, the total soluble solids (TSS) showed values close to 48 and 54 Brix, and TPCC exhibited values of approximately 20 and 66 mg gallic acid equivalents/100 grams dry matter (d.m.) for total polyphenol content, 13 and 25 mg cyanidin-3-glucoside equivalents/100 grams d.m. for total anthocyanin content, and 9 and 17 mg quercetin equivalents/100 grams d.m. for total flavonoid content, respectively. Moreover, the TPCC retention indicated values over 78% for murta juice, and 82% for arrayan juice. Similarly, the AA presented an increase over 2.1 times in relation to the correspondent initial AA value. Thus, the process parameters values were between 69% and 85% for efficiency, 70% and 88% for percentage of concentrate, and 0.72% and 0.88 (kg solutes/kg initial solutes) for solute yield. Therefore, this work provides insight about CBFC on valuable properties in fresh Patagonian berries juices, for future applications in health and industrial scale.
