A new mandarin cultivar currently designated as selection LB8-9 [‘Clementine’ mandarin (Citrus reticulata) × ‘Minneola’ tangelo, Duncan grapefruit (Citrus paradisi) × Dancy tangerine (C. reticulata)], soon to be released by the University of Florida, Citrus Research and Education Center, Lake Alfred, has been evaluated for postharvest fruit quality and consumer acceptance. Comparisons were made with ‘Sunburst’ and ‘Minneola’ mandarins, which overlap the early and late LB8-9 maturity season, respectively. LB8-9 and ‘Sunburst’ fruit stored 2 weeks at 70 °F developed similar decay percentages (35% to 37%), while ‘Minneola’ showed only 16% decay. Postharvest pitting incidence was zero in LB8-9 and ‘Minneola’ and 3% in ‘Sunburst’ stored at 70 °F and 92% to 96% relative humidity (RH). At the same storage conditions, LB8-9 and ‘Sunburst’ developed better fruit peel color (hue = 60) in comparison with the ‘Minneola’ (hue = 65) mandarin. No differences were found in fruit external peel color (hue angle), chilling injury, or decay among three cultivars stored at 40 °F after 6 weeks. However, juice color was the best in ‘Sunburst’ as indicated by the highest color numbers (44), followed by LB8-9 (40) and ‘Minneola’ (38). Wax-formulation studies indicated that carnauba wax was the best formulation for coating LB8-9 because of low decay incidence, weight loss, and good color. No difference was found in fruit taste panels at day 6 after packing, while a better score of acceptance in the fruit taste panel was recorded for LB8-9 than ‘Minneola’ after 50 d of storage at 40 °F and 92% to 96% RH. LB8-9 fruit had a higher soluble solids concentration [SSC (14.0)] and acid (1.12) than ‘Minneola’ or ‘Sunburst’ mandarins, both having a SSC and acid lower than 11.5 and 0.86, respectively. Sucrose concentration was noticeably higher in the new cultivar (7.14 g/100 mL) than in ‘Minneola’ (5.27 g/100 mL) or ‘Sunburst’ (6.10 g/100 mL). Vitamin C concentration was 42.43 mg/100 mL for the new cultivar, which was considerably higher than ‘Minneola’ (23.27 mg/100 mL) or ‘Sunburst’ (26.25 mg/100 mL). Overall, LB8-9 has good potential as a new fresh fruit for the consumer, and no serious problems were noted with typical postharvest handling.

`Marsh' and `Ruby Red' grapefruit (Citrus paradisi Macf.) were harvested in Florida during Oct. and Nov. 1990, degreened in an ethylene chamber, exposed to vapor heat (VH) treatment (43.5 ± 0.1C for ≈240 min), and evaluated for deterioration in quality and development of injury after various storage regimes. Symptoms of aging averaged 6% and 8% of the surface on `Ruby Red' and `Marsh' fruit, respectively, and the VH treatment had reduced the incidence of aging by 45% after 5 weeks of storage (4 weeks at 16C plus 1 week at 21C). Total decay, mostly stem-end rots (Diplodia spp. and Phomopsis spp.), remained relatively low (≈5%) in both treated and nontreated fruit after 5 weeks of storage. The VH treatment had little effect on change in peel color during treatment or subsequent storage. After the final inspection, `Marsh' fruit was higher in total soluble solids and titratable acidity than `Ruby Red' fruit, but these quality indicators and pH were not affected by the VH treatment. VH treatment did not adversely affect the quality of `Marsh' or `Ruby Red' grapefruit harvested early in the season; hence, VH should be considered as a viable quarantine treatment for Florida grapefruit.

Quality of `Cripps Pink' apples (Malu × domestica) harvested at a starch index of 2 and 4 was evaluated over three crop seasons. Apple quality was evaluated after harvest and after regular atmosphere (RA) and controlled-atmosphere (CA) storage at 1% O2 and 1% CO2, 1% O2 and 3% CO2, and 1% O2 and 5% CO2 (1 year only) at 1 ºC (33 to 34 ºF). Over three seasons, commercially acceptable fruit quality was achieved on either harvest date following both long-term RA and CA storage. Fruit size was not different between apples harvested at a starch index of 2 or 4. Firmness and acids remained at acceptable levels [62 N (14 lb) and ≥0.50%, respectively] in `Cripps Pink' apples regardless of maturity, storage time or storage conditions. Delaying harvest after a starch index of 2 was achieved increased soluble solids concentration (SSC), SSC to TA (titratable acidity) ratio, peel color, malic acid and citric acid concentrations but decreased fructose content. `Cripps Pink' apples responded well to CA storage conditions of 1% O2 with 1% or 3% CO2, but displayed significant firmness loss and greatly increased internal breakdown at 1% O2 and 5% CO2 at 1 ºC.

Immersion of guavas (Psidium guajava L.) for 35 min in water at 46.1 ± 0.2 °C slowed softening, sweetening, and color development of fruit and delayed ripening by 2 days. Heat treatment also increased susceptibility to chilling injury, decay, and weight loss in storage, but overall loss of quality was minimal. Waxing fruit within 90 min of heat treatment exacerbated chilling injury, further delayed ripening with a concomitant increase in the percentage of fruit not ripening, and caused fruit to remain greener. Waxed fruit had a lower acidity and soluble solids concentration and did not appear to ripen normally. Although heating did not appreciably affect the percentage of fruit that failed to ripen, the combination of heating and nearly immediate waxing increased the proportion not ripening to 45%. Heat and wax treatments, alone or in combination, caused CO2 levels to increase significantly before the initiation of ripening, but waxing also reduced the O2 content of fruit at this time. Before ripening, O2 levels were inversely correlated (r ≤ – 0.950) with injury, firmness, date and percentage of fruit ripening, and pH and directly correlated (r ≥ 0.950) with peel color and the concentration of acids and sugars in the pulp. Delaying the waxing of heat-treated guavas or reconditioning them for 24 h at 20 °C before cold storage promoted normal ripening and helped to maintain the quality of heat-treated fruit.

Mango fruits (Mangifera indica L.) were harvested at the preclimacteric stage. Fruits were immersed in 38, 42, 46, 50, and 54°C heated water for 30, 60, and 45 min prior to storage at 5°C for 2, 4, or 6 weeks in carton boxes. After storage, they were kept at 20°C. Fruits were evaluated for pulp color, total soluble solids, titrable acidity, ß-carotene content, reducing sugars and visible symptoms of chilling injury. Heated water had no significant effect on pulp color parameters (lightness, hue, and chroma). Soluble solids concentration, ß-carotene content and reducing sugars were higher in heated than in nonheated fruit after ripening. The chilling index was three-fold lower in treated than nontreated fruit. During storage and after removal at 20°C, hot-water-treated fruits ripened faster than nontreated fruits. Results of this study indicate that mango tolerance to chilling temperatures may increase after prestorage heat treatments.

Experimental vapor heat (VH) tests [43.5C for 5 hours, 1009” relative humidity (RH)] were conducted to determine treatment effects to freshly harvested Florida grapefruit (Citrus paradisi Macf.). VH treatment reduced peel pitting 5-fold compared to control fruit after 5 weeks of storage (4 weeks at 10C + 1 week at 21C) and did not cause peel discoloration or rind breakdown. There was no difference in volume between treated and nontreated fruit after 1 week of storage or in weight loss after 5 weeks. Also, peel color, total soluble solids concentration, acidity, and pH were not affected by VH treatment. Fruit were slightly less firm after VH treatment and remained less firm throughout storage, compared with control fruit. The VH treatment tested is a potentially viable alternative quarantine treatment for control of the Caribbean fruit fly [Anastrepha suspensa (Loew)] because it is not phytotoxic to grapefruit and has been reported effective for disinfestation of this pest in grapefruit.

Commercially grown honey dew fruit [Cucumis melo (Inodorus group)] typically are harvested before abscission because fruit cut unripe have a longer storage life than fully ripe fruit. However, because fully ripe fruit contain higher concentrations of soluble solids (predominantly as sugars), an attribute that increases their preference among consumers, methods are being explored to extend the storage life of fully ripe fruit. In this study, fully abscised honey dew fruit were evaluated for tissue attributes and consumer preference following postharvest dipping in either chelated or nonchelated calcium (Ca) solutions. Calcium sources were an amino acid-chelated Ca, ethylene-diamine tetraacetic acid (EDTA)-chelated Ca, or calcium chloride (CaCl2), with each provided at three different rates. Fruit were evaluated at harvest, and after 14 or 22 days commercial storage. Evaluations were peel surface changes (color and disorders), hypodermal-mesocarp tissue Ca concentration, flesh firmness, soluble solids concentration, and consumer preference of the edible flesh. Peel color became yellowed and lighter during storage for all fruit, with higher Ca rates resulting in more intensely yellowed fruit. Hypodermal-mesocarp tissue Ca concentration was 0.90 mg·g-1 of fresh weight (900 ppm) at harvest, and declined in all fruit by 22 days storage. Peel disorders (disease and spotting) were none to slight for all fruit by 14 days storage, but by 22 days storage disease incidence ranged from none to severe, depending on the Ca source and rate. Fruit firmness declined in all fruit throughout storage, with the smallest declines measured in fruit treated with the amino acid-chelated Ca. Soluble solids concentration of fully ripe fruit was 12.3% at harvest, and showed either no decline or slight declines with storage among the treatments. Consumer preference was highest for freshly harvested fruit, but fruit were desirable even after 22 days storage across all treatments. Postharvest application of Ca at ≤0.16 m Ca in an amino acid-chelated form, versus EDTA-chelated Ca or CaCl2, slowed honey dew melon senescence so that after 22 days of commercial and retail storage the fruit were of high marketable quality, and there was no detrimental effect on consumer preference for the edible flesh.

Abstract Background The outer peels of pomegranate (Punica granatum L.) possess two groups of polyphenols that have health beneficial properties: anthocyanins (ATs, which also affect peel color); and hydrolysable tannins (HTs). Their biosynthesis intersects at 3-dehydroshikimate (3-DHS) in the shikimate pathway by the activity of shikimate dehydrogenase (SDH), which converts 3-DHS to shikimate (providing the precursor for AT biosynthesis) or to gallic acid (the precursor for HTs biosynthesis) using NADPH or NADP+ as a cofactor. The aim of this study is to gain more knowledge about the factors that regulate the levels of HTs and ATs, and the role of SDH. Results The results have shown that the levels of ATs and HTs are negatively correlated in the outer fruit peels of 33 pomegranate accessions, in the outer peels of two fruits exposed to sunlight, and in those covered by paper bags. When calli obtained from the outer fruit peel were subjected to light/dark treatment and osmotic stresses (imposed by different sucrose concentrations), it was shown that light with high sucrose promotes the synthesis of ATs, while dark at the same sucrose concentration promotes the synthesis of HTs. To verify the role of SDH, six PgSDHs (PgSDH1, PgSDH3–1,2, PgSDH3a-1,2 and PgSDH4) were identified in pomegranate. The expression of PgSDH1, which presumably contributes to shikimate biosynthesis, was relatively constant at different sucrose concentrations. However, the transcript levels of PgSDH3s and PgSDH4 increased with the accumulation of gallic acid and HTs under osmotic stress, which apparently accumulates to protect the cells from the stress. Conclusions The results strongly suggest that the biosynthesis of HTs and ATs competes for the same substrate, 3-DHS, and that SDH activity is regulated not only by the NADPH/NADP+ ratio, but also by the expression of the PgSDHs. Since the outer peel affects the customer’s decision regarding fruit consumption, such knowledge could be utilized for the development of new genetic markers for breeding pomegranates having higher levels of both ATs and HTs.

The effects of 1-methylcyclopropene (1-MCP), an inhibitor of ethylene action, on the ripening and quality of Fantasia nectarines were examined. Fruit were harvested from two commercial orchards and subsequently exposed to 1 μL L-1 of 1-MCP for 24 h at 0°C. Following treatment, fruit were held at 0°C for 0, 2, or 4 wk, and then assessed for quality during a ripening period at 23°C. 1-MCP treatment improved postharvest firmness retention in nectarines after 0 and 2 wk at 0°C plus 4 days at 23°C. Soluble solids concentration (SSC) was lower in nectarines treated with 1 MCP and held for 0 or 4 wk at 0°C, compared with similar non-treated fruit. The peel ground color change from green to yellow was also delayed by 1-MCP. Nectarines treated with 1-MCP exhibited less CO2 and hydrophobic volatile production during 14 days at 23°C, compared with non-treated fruit. The overall inhibition of fruit ripening by 1-MCP appears transitory in Fantasia nectarines. Chilling injury was observed after 4 wk of storage at 0°C and 1-MCP-treated fruit had less visual chilling-related injury but greater chilling-induced flesh hardening. Further research is needed to determine the effects of 1-MCP on different chilling injury symptoms in nectarines. Key words: 1-MCP, fruit quality, ripening, storage, shelf-life, Prunus persica

The effects of harvest maturity of mangos (Mangifera indica L.) on storage tinder various low-temperature regimes and the influence of storage on quality development during subsequent ripening at higher temperatures were investigated. The capacity for storage of mango fruit depended on harvest maturity, storage temperature, and the time of harvest within the season. Development of peel and pulp color, soluble solids concentration, pH, and softening in `Amelie', `Tommy Atkins', and `Keitt' mangos occurred progressively during storage for up to 21 days at 12C. Based on the level of ripening change that occurred during 12C storage, immature fruit showed superior storage capacity than fruit harvested at more-advanced stages of physiological maturity. On transfer to ripening temperatures (25C); however, immature fruit failed to develop full ripeness characteristics. Mature and half-mature fruit underwent limited ripening during storage at 12C, the extent of which increased with progressive harvests during the season. Ripening changes during storage for 21 days were less at 8 and 10C than at 12C. Chilling injury, as indicated by inhibition of ripening, was found at all harvest stored at 8C, and in early season harvests stored at 10C. Fruit from mid- and late-season harvests stored better at 10 than at 12C, with no apparent signs of chilling injury. Flavor of mangos ripened after low-temperature storage was less acceptable than of those ripened immediately after harvest. Suggestions are made for maximizing storage potential by controlling harvest maturity and storage temperature for progressive harvests throughout the season.

Postharvest quality of `Climax' rabbiteye blueberries (Vaccinium ashei Read) was evaluated after exposure to dosages of 0, 0.75, 1.5, 2.25, or 3.0 kGy gamma irradiation (0.118 kGy·min-1) and after subsequent storage. Irradiation did not affect weight loss, but irradiated berries were softer than nontreated berries. There was also a trend toward increased decay as dose increased. Irradiation had no effect on powdery bloom or surface color; total soluble solids concentration, acidity, and pH were affected slightly. Flavor preference was highest for nonirradiated berries and generally declined as dosage increased. Irradiation at 2.25 and 3.0 kGy resulted in increased levels of xylosyl residues in cell walls, and xylosyl residues were the most abundant cell-wall neutral sugar detected in blueberries. There was no evidence of cell wall pectin loss in irradiated berries. Irradiation at 21.5 kGy lowered the quality of fresh-market `Climax' blueberries.
