Dragon fruit skin, waste material (dragon fruit waste), will have a profitable sale value if it can be used as a food raw material. Dragon fruit skin waste contains relatively high dietary fiber so it can be used as a food raw material. This study aims to utilize dragon fruit skin waste for the manufacture of dragon fruit skin flour as an alternative food source. Some tests are made on white-meat dragon fruit skin, red-meat dragon fruit skin and super red dragon fruit skin. The preliminary study is the soaking of the three types of dragon fruit skin in two solutions, namely 0.1% sodium citrate and 0.1% sodium metabisulfite to prevent the browning effect on flour. Dragon fruit skin flour from the soaking with both solutions is then characterized physically, including its texture, color, flavor and rendement. The best physical characterization is followed by chemical characterization, including the contents of water, ash, protein, fat, carbohydrate, dietary fiber, minerals (Fe, Na, K, Ca and P), and also microbiological characterization of Escherichia coli, molds and Bacillus cereus. The chemical and microbiological characterization shows that the red-meat dragon fruit skin flour has better results than the white-meat and super red dragon fruit skin flour does. The red-meat dragon fruit skin flour contains 8.80% water, 0.20% ash, 2.35% fat, 7.69%, protein, 68,29% carbohydrate and 28,72% dietary fiber as well as 4.40 mg K, 8.76 mg Na , 0.65 mg Fe , 10.20 mg Ca and 32.58 mg P. This study is one of Turkey at the sea coast in Izmir and Ankara in other inland fisheries are conducted to determine consumer preferences. 306 people in Izmir and 405 people in Ankara were directly interviewed and the orginal data for the research was gathered. Survey data were anlyzed with using SPSS and Microsoft Excel software packages. According to the survey data; it is determined that individuals consumed mostly white meat at the rate of 81%, and consumed white meat at the rate of 19%. At least 46% of these individuals consume fish once a week at a minimum. It is determined that 83% of the individuals in Ankara consumed white meat, 17% consumed red meat. It is found out that at least 30% of these indiviudals consumed fish once a week at a minimum. Aquaculture products are highly important for the nutrition due to its being animal protein resource. In spite of the fast growing population and big problems seen in balanced diets, aquaculture products are not efficiently benefited. As a result of our country to increase fish consumption habits and consumption of fishery products on human health in the short and long term benefits should be explained. To this end, local governments and other regional organizations and institutions of the people in the area where the handle will be of interest to fisheries and should be in promoting.

Meretrix meretrix was one of gastropods seawater has been used by people as a food. These shells are still categorized of bycatch and have not explored the benefits. This study aimed to characterize and analyze the content of bioactive Meretrix meretrix. This research was conducted morphological characterization shellfish sensory, measurement of yield, the content of the proximate analysis, heavy metals and analysis of bioactive compounds from the extracts of water and methanol. Observation found that the Meretrix meretrix has a yellowish white color with black bars at the end of the shell and the white meat and chewy with a yield of meat and shells of 11.09% and 69.85%. Analysis of water content, ash, fat, protein, and carbohydrates respectively by 79.99%, 1.50%, 0.22%, 9.42%, and 8.81%. Heavy metal obtained 8x10-4 ppm Hg content, 13x10-4 ppm Pb, Cd, and Cu 45x10-4 and 88x10-4 ppm. Bioactive compounds in water and methanol extract of shellfish Lamis including alkaloids, steroids, and saponins.
