The antagonistic activities of native Debaryomyces hansenii strains isolated from Danish cheese brines were evaluated against contaminating molds in the dairy industry. Determination of chromosome polymorphism by use of pulsed-field gel electrophoresis (PFGE) revealed a huge genetic heterogeneity among the D. hansenii strains, which was reflected in intra-species variation at the phenotypic level. 11 D. hansenii strains were tested for their ability to inhibit germination and growth of contaminating molds, frequently occurring at Danish dairies, i.e., Cladosporium inversicolor, Cladosporium sinuosum, Fusarium avenaceum, Mucor racemosus, and Penicillium roqueforti. Especially the germination of C. inversicolor and P. roqueforti was significantly inhibited by cell-free supernatants of all D. hansenii strains. The underlying factors behind the inhibitory effects of the D. hansenii cell-free supernatants were investigated. Based on dynamic headspace sampling followed by gas chromatography-mass spectrometry (DHS-GC-MS), 71 volatile compounds (VOCs) produced by the D. hansenii strains were identified, including 6 acids, 22 alcohols, 15 aldehydes, 3 benzene derivatives, 8 esters, 3 heterocyclic compounds, 12 ketones, and 2 phenols. Among the 71 identified VOCs, inhibition of germination of C. inversicolor correlated strongly with three VOCs, i.e., 3-methylbutanoic acid, 2-pentanone as well as acetic acid. For P. roqueforti, two VOCs correlated with inhibition of germination, i.e., acetone and 2-phenylethanol, of which the latter also correlated strongly with inhibition of mycelium growth. Low half-maximal inhibitory concentrations (IC50) were especially observed for 3-methylbutanoic acid, i.e., 6.32–9.53 × 10–5 and 2.00–2.67 × 10–4 mol/L for C. inversicolor and P. roqueforti, respectively. For 2-phenylethanol, a well-known quorum sensing molecule, the IC50 was 1.99–7.49 × 10–3 and 1.73–3.45 × 10–3 mol/L for C. inversicolor and P. roqueforti, respectively. For acetic acid, the IC50 was 1.35–2.47 × 10–3 and 1.19–2.80 × 10–3 mol/L for C. inversicolor and P. roqueforti, respectively. Finally, relative weak inhibition was observed for 2-pentanone and acetone. The current study shows that native strains of D. hansenii isolated from Danish brines have antagonistic effects against specific contaminating molds and points to the development of D. hansenii strains as bioprotective cultures, targeting cheese brines and cheese surfaces.

Panax ginseng C.A. Meyer is recognized as one of the most important crude drugs in ancient Chinese medicine. Numerous pharmacological studies investigated P. ginseng; however, these studies were limited to ginsenosides, which are typical constituents in P. ginseng. We focused on the essential oil (EO) from P. ginseng as it has a typical aroma. Herein, we report the inhibitory activities of EO against β-secretase, acetylcholinesterase (AChE), and butyrylcholinesterase (BChE), which were investigated in order to demonstrate the potential of EO as a preventative and therapeutic agent against Alzheimer’s disease (AD). Essential oil (250 µg/mL) showed 41.4% inhibition against β-secretase, 77.4% inhibition against AChE, and 94.1% inhibition against BChE. In addition, spathulenol (8.82%, content % in EO), bicyclogermacrene (6.23%), β-elemene (3.94%), and α-humulene (3.69%) were identified as high content by Gas chromatography mass spectrometry (GC/MS) analysis. Furthermore, β-elemene and α-humulene showed high activity among 3 compounds with 50% inhibitory concentration (IC50) values of 77.2 and 137.3 µM for AChE, and 298.2 and >2000 µM for BChE, respectively. In this report, we showed the inhibitory activity of EO from P. ginseng against β-secretase, AChE, and BChE, and demonstrated that EO could be a candidate to treat AD. This is the first research to report the anti-AD effect of EO and determination of its volatile components. Especially, β-elemene and α-humulene are expected to be highly bio-available compounds due to their small molecular size and lipophilicity. From these results, EO from P. ginseng may be a promising candidate for AD treatment.

Abstract A procedure is described for the separation and determination of the following compounds which are found as congeners in alcoholic products: acetaldehyde, ethyl acetate, methanol, ethanol, n-propanol, isobutanol, n-butanol, acetic acid, and the amyl alcohols (2-methyl-l-butanol and 3-methyl-l-butanol). These compounds were separated by gas-liquid chromatography (GLC) using 5% Carbowax 20M on Carbopack B as the column packing. The results obtained by using this method were compared with those obtained using the present AOAC methods for these compounds. GLC chromatograms show better resolution by the method presented.

Palm shell liquid smoke obtained by pyrolysis and redestilasi still produce a pungent smoke flavor and color of yellow to brownish yellow so that the necessary research purification of smoke that can be used as ingredients other than preservatives, such as antiseptic hand wash. The research objective is to reduce the stinging liquid smoke aroma, color is tawny and to identify the characterization of the active components of liquid smoke shell oil refining results in Gas Chromatography Mass Spectrometry (GC-MS). The purification process of liquid smoke with redistilled at a temperature of 2000C and by adding 4.5% zeolite adsorbent made three (3) times the resulting liquid smoke of distillate and residue. Liquid smoke produced from distillate and residue are added activated charcoal as much as 9%, 10.5% and 12%, then stirred with a shaker subsequently allowed to stand for 6 days and 10 days The results of the study showed that liquid smoke purification results of the residue by the addition of activated charcoal as 12% and the time saved for 10 days (A2B2C3) gives flavor and color by 1.94 of 1.84 is odorless, yellowish white color and clarity. While the characteristics of the active components of purification results are predominantly acetic acid and phenol compounds of residues that serve as preservatives, antibacterial and antioxidant compounds while PAH (Polycyclic Aromatic Hydrocarbon), namely tar, benzoperen, gualakol and siringoll (aroma causes) undetectedABSTRAKAsap cair cangkang sawit yang diperoleh melalui proses pirolisis dan redestilasi masih menghasilkan aroma asap menyengat dan warna kuning hingga kuning kecoklatan sehingga diperlukan penelitian pemurnian asap yang dapat digunakan sebagai bahan lain selain pengawet, seperti antiseptik pencuci tangan. Tujuan penelitian adalah  untuk mengurangi aroma asap cair yang menyengat, warna yang masih kuning kecoklatan dan untuk  mengidentifikasi karakterisasi komponen aktif asap cair cangkang sawit hasil pemurnian secara Kromatografi Gas Spektrometri Massa (GC-MS). Proses  pemurnian asap cair dengan  redistilasi pada suhu 2000C dan dengan menambahkan adsorben zeolit 4,5% yang dilakukan sebanyak 3 (tiga) kali  dihasilkan asap cair dari Destilat dan Residu . Asap cair  yang dihasilkan dari destilat dan residu ditambahkan arang aktif sebanyak 9%,10,5% dan 12%  kemudian diaduk dengan shaker selanjutnya didiamkan selama 6 hari dan 10 hari .Hasil penelitian menunjukkan bahwa asap cair hasil pemurnian dari residu dengan penambahan arang aktif sebanyak 12% dan waktu simpan selama 10 hari ( A2B2C3 ) memberikan aroma sebesar 1,94 dan warna sebesar 1,84 adalah tidak berbau ,  warna putih kekuningan dan jernih . Sedangkan  karakteristik  komponen aktif hasil pemurnian yang paling dominan  adalah  senyawa acetic acid dan phenol  dari residu yang berfungsi sebagai bahan pengawet, antibakteri dan antioksidan sedangkan senyawa PAH (Polycyclic Aromatic Hydrocarbon) yaitu tar, benzoperen,  gualakol  dan siringoll ( penyebab aroma ) tidak terdeteksi . Kata kunci : asap cair, cangkang sawit, komponen aktif, pemurnian, redestilasi

Sultones are cyclic esters of hydroxysulfonic acids, which are formed in the process of sulfonation of α-olefins with sulfur trioxide gas. More stable sultones may be present in the final product — an anionic surfactant — sodium α-olefin sulfonate (AOC-Na). AOC-Na is widely used in the production of household chemicals and cosmetic products, including liquid dishwashing detergents. Sultones are strong skin sensitizers, their level in AOC-Na should be strictly controlled and not exceed 5 ppm. Operational and strict control of the sultone content upon AOC-Na production allows timely adjustment at the stage of hydrolysis, which leads to a more complete disclosure of the sultone cycle with the formation of the corresponding olefin sulfonates and hydroxyalkanesulfonates. We propose a method for determining δ-hexadecansultone in liquid dishwashing detergents and sodium α-olefinsulfonates obtained on the basis of α-olefins of C14 – C16 fractions using GC/MS, which provides shortening of sample preparation and keeps the sensitivity with a detection limit of 0.02 mg/kg. The effect of various weakly polar and non-polar organic solvents used for Sultone extraction from AOC-Na and liquid detergent on liquid extraction based on the dispersion of the extractant in an alcohol/water phase is studied. When selecting the solvent we have shown that the use of diethyl ether provided the best extraction of the analyte. Determination of the analyte extraction recovery was performed using the reaction of hydrolysis of the extracted mixture. We specified the operating mode of the device which provided complete separation of the components of the analyzed compounds including the samples of liquid detergent for dishes being a multicomponent mixture of complex composition.
