The nutritional components of different parts (meat, head, shell and tail) of Litopenaeus vannamei (L.v), Macrobrachium rosenbergii (M.r), Penaeus monodon (P.m), Fenneropenaeus chinensis (F.c), and Penaeus japonicus (P.j) were analyzed and their nutritional values were evaluated. For the five species of shrimp, the meat yield was 37.47–55.94%, and the byproduct yield was 44.06–62.53%. The meat yields of L.v and F.c were the highest (55.94 and 55.92%, respectively), and the meat yield of M.r was the lowest (37.47%). The shrimp contain high amounts of crude protein, and the values of the amino acid score (AAS), chemical score (CS), and essential amino index (EAAI) were greater than or close to 1.00, indicating that shrimp protein had higher nutritional value. The shrimp head was rich in polyunsaturated fatty acids and the ratio of n-6 to n-3 PUFAs was from 0.37 to 1.68, indicating that the shrimp head is rich in n-3 PUFAs and is a good source of n-3 PUFAs. The five species of shrimp were rich in macro- and micro-minerals, especially in shrimp byproducts. The shrimp byproducts were also rich in other bioactive ingredients (astaxanthin), which are also very valuable for developing biological resources. Therefore, shrimp have many nutritional benefits, and their byproducts can also be used to develop natural nutraceuticals, which are considered to be one of the healthiest foods.

Lipids are key factors in nutrition, structural function, metabolic features, and other biological functions. In this study, the lipids from the heads of four species of shrimp (Fenneropenaeus chinensis (FC), Penaeus japonicus (PJ), Penaeus vannamei (PV), and Procambarus clarkia (PCC)) were compared and characterized based on UPLC–Q–Exactive Orbitrap/MS. We compared the differences in lipid composition of four kinds of shrimp head using multivariate analysis. In addition, a zebrafish model was used to evaluate pro-angiogenic, anti-inflammatory, anti-thrombotic, and cardioprotective activities of the shrimp head lipids. The lipids from the four kinds of shrimp head had different degrees of pro-angiogenic activities, and the activities of PCC and PJ shrimp lipids were more significant than those of the other two species. Four lipid groups displayed strong anti-inflammatory activities. For antithrombotic activity, only PCC (25 μg/mL) and PV (100 μg/mL) groups showed obvious activity. In terms of cardioprotective activity, the four kinds of lipid groups significantly increased the zebrafish heart rhythms. The heart distances were shortened, except for those of the FC (100 μg/mL) and PJ (25 μg/mL) groups. Our comprehensive lipidomics analysis and bioactivity study of lipids from different sources could provide a basis for the better utilization of shrimp.

The purpose of this experiment is to evaluate the nutritional value of amino acids and its commercial value in the fish processing sector in Antarctic krill with cross-referenced in the white shrimp. For determination of the composition of 17 amino acids in the two shrimp muscle, free amino acids were measured using sulfosalicylic acid method, hydrolysed amino acid using hydrochloric acid hydrolysis.17 kinds of hydrolysed amino acids are measured in the muscle of Antarctic krill and White shrimp, which total content is 513.59±18.56mg/g and 537.61±16.8mg/g respectively.16 kinds of free amino acids are measured, which total content is 616.88±44.61mg/100g and 1276±75.67mg/100g respectively, while cysteine is not found. According to amino acid score (AAS), chemical score (CS), the limiting amino acid of Antarctic krill and White shrimp is valine and methionine + cysteine. The umani amino acids accounted for 27.76% of free amino acids and 35.69% of hydrolysed amino acids in Antarctic krill, while White shrimp is 41.08% and 31.52% respectively. The amino acids in Antarctic krill, TAV of which is greater than 1, include glutamic acid, alanine, lysine and arginine.

Abstract Fry collection of tiger shrimp (Penaeus monodon) and giant freshwater prawn (Macrobrachium rosenbergii) fry from wild aquatic resources is a regular practice among the poorer section of the coastal communities in Bangladesh. In the early stages of aquaculture development, shrimp culture was limited to a few areas but the growing demand for shrimp on the international market has opened an avenue for many new entrepreneurs. Until recently, shrimp farmers stocked only wild fry on their farms. Fry collectors found this emerging sector a good additional source of income and successively made it their major livelihood. Concerns over the effect of this practice on biodiversity prompted the Government to ban fry collection, thus threatening the livelihood of fry collectors.

Abstract Shrimp plays a significant role in the development of the national economy of Bangladesh. Farmers in Bangladesh have chosen bagda (Penaeus monodon) for coastal aquaculture due to its high export value in the international market. Therefore, coastal poor people have collected wild bagda post-larvae (PLs) for the last two decades. It is estimated that about 12,890 children are permanently and/or temporarily engaged in shrimp seed collection in greater Barisal and Khulna districts, of whom 76% (9,750) are girls and 24% (3,140) are boys. In Cox's Bazar and greater Noakhali districts, 1,590 children are engaged in this job, with 21% (340) girls and 79% (1,250) boys. Another 10,000 children are involved in shrimp and fish catching, sorting and drying in Dublarchar island, located 170 km south of Khulna city. It is also located 180 km from the Mongla port in Bagerhat district which is used as a fish landing centre. In addition, more than 1,500 children are also engaged in collecting snails and clams, which are used as a popular feed, particularly for galda chingri (Macrobrachium rosenbergii).

Penaeus japonicus is an important marine shrimps resource in China. In order to evaluate the nutritional value, the contents of general nutritional compositions, amino acids and fatty acids in muscle were compared between wild and farmed P. japonicus. The contents of muscle moisture and crude protein, fat and ash in wild P. japonicus were 77.16%, 17.74%, 2.08% and 1.79%, and those in farmed P. japonicus were 78.02%, 17.26%, 2.04% and 1.63%, respectively. The essential amino acids (EAA) in wild and farmed P. japonicus were 23.25% and 22.43%, respectively. The amino acid score of essential amino acids were higher than 100 except Leu and Trp, so the protein of P. japonicus has a well-balanced amino acid composition. Wild P. japonicus has more unsaturated fatty acids (64.05%) than farmed group (60.34%). Higher n-3 polyunsaturated fatty acids (PUFAs), eicosapentainoic acids (EPA, 20:5 n-3), docosahexaenoic acids (DHA, 22:6 n-3) contents and lower C16:0, C20:0, C18:1, C18:2, C18:3 levels were detected in the wild group. Values of n-6/n-3 in muscle of farmed and wild P. japonicus were 0.30 and 0.23 respectively, which were both significantly lower than the maximum value (4.0) recommended by UK Department of Health (HMSO, 1994), while Values of the PUFA/SFA ratio of two groups were 0.60 and 0.74 higher than the minimum value (0.45) recommended by HMSO. Thus the muscle of farmed and wild P. japonicus are both healthy and safe, and the the muscle of wild P. japonicus is more beneficial to human health.
