Herbal products are now considered among the most important sources of phenolic compounds: the FINNOVER project aimed at the creation and development of sustainable supply chains to extract and use natural biologically active agents. Vitis vinifera is one of the most utilised herbal products derived from buds and sprouts as polyphenolic food supplements for its homeostatic and astringent properties. This research was aimed to describe the antioxidant capacity and the phytochemical composition of V. vinifera herbal products by the application of spectroscopic and chromatographic fingerprints considering phenolics as potential markers to significantly differentiate traditional preparations (macerates) from innovative extracts obtained by an ultrasound extraction from V. vinifera buds. Two different commercial products were also considered. Flavonols were the most abundant class in ultrasound extracts (45%), while phenolic acids were the most important class in traditional macerates (49%) and commercial bud-preparations (about 50%). This study may support the potential use of V. vinifera bud-products (starting from pruning byproducts) as food supplements to integrate human diet with good amounts of phenolics. Finally, the use of different extraction methods on the same plant material could be an important development to produce innovative herbal products with a phytochemical composition similar to traditional preparations.

Os tratamentos aplicados foram: irrigação plena - irrigação realizada durante todo o ciclo de produção; irrigação com déficit controlado - onde a irrigação foi interrompida aos 49 dias após a poda, sendo realizadas eventuais irrigações após a interrupção, de acordo com o monitoramento da água no solo; e a irrigação com déficit, onde a aplicação de água foi interrompida desde os 49 dapp até a colheita. O potencial hídrico foliar foi medido utilizando a bomba de Scholander. Os índices de clorofila a, b e total foram mensurados utilizando o dispositivo portátil (ClorofiLOG - CFL 1030). As coletas de dados referentes a atividade fotossintética foram determinadas a partir do analisador portátil de gás por infravermelho (Modelo Li-6400). Os ácidos orgânicos e os compostos fenólicos foram quantificados utilizando a cromatografia líquida de alta eficiência. O déficit de irrigação reduziu o potencial hídrico, a fotossíntese, a produtividade, o ácido tartárico e aumentou a concentração de compostos fenólicos. Vinhos obtidos de uvas de plantas dos tratamentos com déficit podem ser destinados a elaboração de vinhos de guarda. Palavras-chave: Vitis vinifera L., Syrah, semiárido, clorofila, ácidos orgânicos.  NASCIMENTO, R. The treatments were: full irrigation – applying water throughout the whole crop season, regulated deficit irrigation – interrupting the irrigation at 49 days after pruning and applying water according to soil water monitoring, and deficit irrigation – interrupting the watering 49 days after pruning to harvest. The leaf water potential was measured with a Scholander pressure chamber. The chlorophyll a, b and total indexes were measured using a portable device (ClorofiLOG - CFL 1030). The photosynthetic activity data were determined with the portable infrared gas analyzer (LI-6400 Model). The organic acids and phenolic compounds were quantified using high-performance liquid chromatography. Deficit irrigation reduced the water potential, photosynthesis, productivity, tartaric acid and increased the concentration of phenolic compounds. The main object of the present study was to analyze the phenolic composition of vine leaves infusions prepared from 8 different Portuguese (Fernão Pires, Touriga Franca, Tinta Roriz, Encruzado, Touriga Nacional, Rufete, Baga, and Siria) and Spanish (Pardina, Cayetana, Garnacha, Cigüente, Eva, Tempranillo, Macabeo and Verdelho) Vitis vinifera L. varieties. In general, a wide range of phenolic content were obtained from the vine leaves infusions according to the vine variety used. Thus, for total phenolic content the values ranged from 18 to 37 mg/L for the infusions produced from Portuguese varieties, while for Spanish varieties the values ranged from 14 to 37 mg/L. Vine leaves infusions obtained from Touriga Franca and Pardina varieties showed the highest total phenolic content. As a consequence of phenolic composition, chromatic characteristics (L*, a* and b*) of vine leaves infusions were also analyzed. Finally, it was also detected different individual phenolic compounds, such as, coutaric acid, trans-caftaric acid, quercetin-3-O-glucoside, rutin and 3 different anthocyanins from the different vine leaves infusions. All of the results obtained in this work show that vine leaves infusion may be an interesting alternative source of phenolic compounds for human diet.
