PurposeThe COVID-19 has had a diversified and dynamic impact on the food and agricultural sector, particularly in the agri-food value chain. Although a good number of articles were published in various countries and continents covering various aspects of the impact of COVID-19 on the agri-food value chain, no significant studies were found related to the mapping of published literature to know about the scenario and current trend research. The study aims to perform a systematic review and bibliographic mapping in the agri-food value chain to provide insights into the same.Design/methodology/approachArticles included in the Scopus database from January 1, 2020 to July 10, 2021 are considered. After initial screening and inclusion criteria, 41 articles have been selected to perform a systematic review which is published in the agri-food value chain. In addition to this, by considering the growth of the online food market, systematic mapping with the application of bibliometric analysis is performed to know the trend of the publications. Co-occurrence analysis with VOS viewer software version 1.6.16 is used for making network maps and supports the visualization of these maps.FindingsThe synthesis of the findings reveals that four broad themes recur in the articles: namely, food security and crisis during the pandemic, food price fluctuations, the impact of COVID-19 and disruption in the agri-food value chain and resilience strategies to strengthen the value chain. Alongside, the synthesis of the findings, this study describes the geographical coverage, methodologies used, sector/industry-specific context of the articles and scope of future research. In co-occurrence analysis with keywords, four clusters are identified related to the online food market and are categorized as “COVID-19 and Online food delivery services,” “Consumer satisfaction to online food delivery services,” “Food delivery system” and “Demographic impact on online food market.”Research limitations/implicationsThe study considers only the article from the Scopus database and article published between January 1, 2020 and July 10, 2021. Future studies are encouraged related to impact analysis studies of resilient strategies suggested by various authors by considering multiple databases.Originality/valueThis study will be beneficial for scholars and policymakers to know what is trending in the agri-food value chain and policymakers can implement various resilience strategies as discussed to mitigate the impact. The future research scope highlighted in this paper will encourage scholars and academicians to explore this area and will provide in-depth understanding.

PurposeThis paper reviews the literature, foundational works and current trends related to the adoption of open innovation (OI) practices in the food industry, with a particular focus on the food value chain, using a bibliometric and content analysis approach.Design/methodology/approachThis study is based on 84 published documents in the field of food OI obtained using the Scopus database. First, a bibliometric analysis was conducted using a bibliographic coupling and co-citation analysis approach to understand the common themes and key clusters of food OI research. It further highlighted authors, countries, journals, years of publication and subject areas to comprehend the scope of the established literature. Second, a content analysis was undertaken to examine the titles and abstracts of the documents to explore the intersection of OI and the food value chain.FindingsThis study provides an integrated framework of the intersection of OI and the food value chain, including information about under-researched and emerging areas in the field of food innovation. It also highlights the critical challenges associated with OI food research and practices.Practical implicationsPractitioners can use the findings to uncover areas with limited open innovation adoption in the food value chain. They can identify extended research areas to explore the food value chain using an open innovation perspective, in different contexts within the food and beverage (F&B) industry. The framework can also be used for conducting comparative studies of current food innovation trends across different contexts within the F&B industry.Originality/valueBy adopting a multi-step approach involving a computer-assisted bibliometric examination complemented by a manual review undertaken through the lens of the food value chain, this literature review provides fresh and unique insights into past and present research on OI in the food industry and paves the way for future studies by laying out specific research avenues.

Lamb’s lettuce (Valerianella locusta L. Laterr.) is a leafy green vegetable that is rich in various biological active compounds and is widely used in ready-to-eat salads. The cultivation conditions and growth stage could affect the secondary metabolism in plants and thereby modify their food value. In the present study, the effect of selenium (Se) application in various concentrations (5.0, 10.0, and 20.0 µM) on the contents of Se, phenolic compounds, vitamin C, carotenoids, chlorophylls, and antioxidant activity of hydrophilic and lipophilic extracts of lamb’s lettuce harvested at three growth stages (38, 52, and 66 days after sowing (DAS)) was studied. Se application significantly increased the Se concentration in the shoots (up to 124.4 μg g−1 dry weight), as well as the contents of chlorogenic acid, total flavonoids, total phenolics, ascorbic acid, chlorophyll b, and the antioxidant activity of hydrophilic and lipophilic extracts. A higher content of phenolic compounds and higher antioxidant activity of hydrophilic extracts was observed at the first growth stage (38 DAS). On the contrary, higher contents of lipophilic compounds (chlorophyll a, chlorophyll b, lutein, β-carotene) and higher antioxidant activity of lipophilic extracts were found for shoots harvested at later stages (52 and 66 DAS).
