Recently, an increased interest in exploiting the functional and medicinal health attributes of herbs and spices has been observed worldwide among the health conscious consumers to preserve and promote the health and nutrition and immunity particularly during the Covid-19 pandemic era. Fortification of dairy products with these herbs and spices so as to exploit the functional and medicinal attributes have also gained momentum. Herbs and spices are rich source of bioactive compounds such as anti-oxidants, vitamins, micro- and macro-minerals, phytochemicals like flavonoids, alkaloids, glycosides, tannins, essential oils, coumarin, organic acids, phenols and saponins. Milk and other dairy products have been popular compatible vehicles for delivering functional, nutritional and other health benefits of phytochemicals of herbs and spices among the consumers. This chapter explores the quality and functional attributes of herbs and spices fortified dairy products such as herbal spiked milk, curd and yoghurts, paneer, cheese and ice creams and other dairy products.

Background: The use of essential oils is receiving increasing attention worldwide, as these oils are good sources of several bioactive compounds. Nowadays essential oils are preferred over synthetic preservatives thanks to their antioxidant and antimicrobial properties. Several studies highlight the beneficial effect of essential oils extracted from medicinal plants to cure human diseases such as hypertension, diabetes, or obesity. However, to preserve their bioactivity, the use of appropriate extraction technologies is required. Method: The present review aims to describe the studies published so far on the essential oils focusing on their sources and chemical composition, the technologies used for their recovery and their application as antioxidants in food products. Results: The review has been structured in three parts. In the first part, the main compounds present in essential oils extracted from medicinal plants have been listed and described. In the second part, the most important technologies used for extraction and distillation, have been presented. In detail, conventional methods have been described and compared with innovative and green technologies. Finally, in the last part, the studies related to the application of essential oils as antioxidants in food products have been reviewed and the main findings discussed in detail. Conclusions: In summary, an overview of the aforementioned subjects is presented by discussing the results of the most recent published studies.

: In the recent scenario, nanotechnology-based therapeutics intervention has gained tremendous impetus all across the globe. Nano-based pharmacological intervention of various bioactive compounds has been explored on an increasing scale. Sesquiterpenes are major constituents of essential oils (EOs) present in various plant species which possess intriguing therapeutic potentials. However, owing to their poor physicochemical properties; they have pharmacological limitations. Recent advances in nano-based therapeutic interventions offer various avenues to improve their therapeutic applicability. Reckoning with these, the present review collates various nano-based therapeutic intervention of sesquiterpenes with prospective potential against various debilitating diseases especially cancer. In our viewpoint, considering the burgeoning advancement in the field of nanomedicine; in the near future, the clinical applicability of these nano-formulated sesquiterpenes can be foreseen with great enthusiasm.

Background: Gastrointestinal nematodes are one of the major health and economic problem of sheep and goats in the world. The control of these nematodes is carried out conventionally with synthetic anthelminths, which favored the selection of gastrointestinal nematode (GIN) populations multiresistant to anthelmintics. The emergence of anthelmintic resistance has stimulated the search for new alternatives to control small ruminant GIN, standing out the use of plants and their bioactives compounds, such as essential oils (EO). The objective of this review was to present the main characteristics and anthelmintic activity of EO, their isolated compounds and drug delivery systems in the control of GIN.Review: Essential oils are a complex blend of bioactive compounds with volatile, lipophilic, usually odoriferous and liquid substances. EO are composed of terpenes, terpenoids, aromatic and aliphatic constituents. EO has various pharmacological activities of interest in preventive veterinary medicine such as antibacterials, antifungals, anticoccicids, insecticides and anthelmintics. In vitro and in vivo tests are used to validate the anthelmintic activity of EO on GIN. In vitro tests are low cost screening tests that allow the evaluation of the anthelmintic activity of a large amount of bioactive compounds on eggs, first (L1) and third stage larvae (L3), and adult nematodes. The antiparasitic effect of EO is related to its main compound or to the interaction of the compounds. These bioactive compounds penetrate the cuticle of the nematodes by transcuticular diffusion, altering the mechanisms of locomotion, besides causing cuticular lesions. Following in vitro evaluation, the acute and sub-chronic toxicity test should be performed to assess the toxicity of the bioactive compounds and to define the dose to be used in in vivo tests. In vivo tests are more reliable because the anthelmintic effectiveness of bioactive compounds is evaluated after the metabolization process. The metabolization process of the bioactive compounds can generate metabolites that exhibit or not anthelmintic effectiveness. The in vivo tests assessing the anthelmintic effectiveness of bioactive compounds in sheep and goats are the fecal egg count reduction test and the controlled test.  OE promoted reduction of egg elimination in faeces which may be related to cuticular and reproductive alterations in GIN, and reduction of parasite burden in in vivo tests. Due to the promising results obtained with OE in the in vivo tests, interest has been aroused in using nanotechnology as an alternative to increase the bioavailability of OE and consequently, potentializing its anthelmintic effect, reducing the dose and  toxicity of the biocompounds. In addition to nanotechnology, the isolation and chemical modification of compounds isolated from OE have been employed to obtain new molecules with anthelmintic action and understand the mechanism of action of EO on the small ruminant GIN.Conclusion: The use of EO and their compound bioactive in the control of resistant populations of GIN is a promising alternative. The adoption of strategies in which natural products can replace synthetic anthelmintics, such as in dry periods and use synthetic anthelmintics in the rainy season when the population in refugia in the pasture is high, thus reducing the dissemination of GIN resistant populations. As perspective, the evaluation of pharmacokinetics and pharmacodynamics of these natural products should be performed so that one defines treatment protocols that optimize the anthelmintic effect.

Compounds useful for drugs, cosmetics, and food have been obtained directly or indirectly from living organisms over the years. However, there has been a renewed interest in getting useful compounds from living organisms, especially plants. Essential oils, interchangeably called volatile oils, are bioactive compounds found in minute quantities in some plants. Essential or volatile oils have been known for years to find usefulness in foods, drugs (antimicrobial, antifungal), and cosmetics. This review attempts to summarize information on the essential oil from Ficus species concerning their morphology, pharmacology, bioactivity, and application. This was achieved by gathering information on essential oils from different Ficus species. Essential oils from Ficus species are a good source of bioactive compounds for use in drug, food, and cosmetic industries. It is worthy to note that Nigerian Figs were characterized by the high presence of phytol and 6,10,14-trimethyl-2-pentadecanone, and these compounds are, therefore, seen as markers. Furthermore, this review presents numerous insights on how to best harness the different potentials of the essential oils and possibilities to be examined.

Pineapple (Ananas comosus (L.) Merril), one of the major fruit crops, is mainly used for raw consumption and for industrial juice production, which creates large amounts of residues. The United Nations Food and Agriculture Organization (FAO) has estimated that pineapple waste accounts for between 50 to 65 % of the total weight of the fruit. Industrial pineapple waste is a major source of pollution as important quantities of primary residues are not further processed. Pineapple waste contains bioactive compounds such as carotenoids, polyphenols, fibers, vitamins, enzymes, and essential oils. These phytochemicals can be used in the food industry, medicine and pharmacy, textile, and others. This review highlights essential oil and other bioactive compounds extracted from pineapple waste and the composition of pineapple essential oil. Pineapple peels are the potential raw material for essential oil extraction through various methods. Modern spectrometric methods have shown that essential oil extracted from pineapple waste comprises esters, alcohols, aldehydes, and ketones. From this overview, it can be concluded that there is an important need for further research into pineapple waste as a potential source of valuable byproducts, as well as new techniques to studying industrial organic residuals to achieve higher recovery rates of valuable bioactive compounds used in pharmaceuticals, cosmetic and chemical industries as well as for developing new functional foods.

Food waste is the most challenging issue humankind is facing worldwide. Food waste, which consists of carbohydrates, proteins, lipids, and inorganic compounds, is a biodegradable waste discharged from food processing industries, households, and hospitality sectors. The management of food waste is very important. The food waste generated is usually incinerated or dumped in open areas which may cause severe health and environmental issues. The management of food waste can be done by conversion to different value-added products, for example, phytochemicals, bioactive compounds, food supplements, livestock feed, dietary fibers, biopigments and colorants, emulsifiers, edible and essential oils, biopreservatives, biofertilizers, biofuels, and single cell proteins. The value-added products from food waste will be very eco-friendly. The chapter will focus on different value-added products from food waste.
