The results of a study of the effect of wet ultrasonic lamb meat salting on the muscle tissue microstructure are presented, and the technical parameters of the ultrasonic device are justified. It has been established that significant destruction and swelling of muscle fibers, local destruction of the sarcolemma with its pronounced rugosity are observed at ultrasonic salting with a frequency of 35 kHz, the cross-striation is poorly expressed, the tissue structure is disturbed. An ultrasonic salting with a frequency of 26 kHz was accompanied an increase in the number of transverse microcracks and crevices, loosening of muscle fibers, the formation of cavities between them while retention of the tissue structure, which contributes to the appearance of a brine between muscle fibers and accelerates its penetration into the fiber. It allows us to recommend ultrasound at a frequency of 26 kHz for cavitation activation of the brine to intensify the technological process of lamb meat salting.

In the frame of a technological research and innovation network in water and environment technologies (RITEAU, Réseau de Recherche et d'Innovation Technologique Eau et Environnement), our research group, in collaboration with industrial partners and other research institutions, has been in charge of the development of a suitable flowmeter: an ultrasonic device measuring simultaneously the water flow and the concentration of size classes of suspended particles. Working on the pulsed ultrasound principle, our multi-frequency device (1 to 14 MHz) allows flow velocity and water height measurement and estimation of suspended solids concentration. Velocity measurements rely on the coherent Doppler principle. A self developed frequency estimator, so called Spectral Identification method, was used and compared to the classical Pulse-Pair method. Several measurements campaigns on one wastewater collector of the French city of Strasbourg gave very satisfactory results and showed smaller standard deviation values for the Doppler frequency extracted by the Spectral Identification method. A specific algorithm was also developed for the water height measurements. It relies on the water surface acoustic impedance rupture and its peak localisation and behaviour in the collected backscattering data. This algorithm was positively tested on long time measurements on the same wastewater collector. A large part of the article is devoted to the measurements of the suspended solids concentrations. Our data analysis consists in the adaptation of the well described acoustic behaviour of sand to the behaviour of wastewater particles. Both acoustic attenuation and acoustic backscattering data over multiple frequencies are analyzed for the extrapolation of size classes and respective concentrations. Under dry weather conditions, the massic backscattering coefficient and the overall size distribution showed similar evolution whatever the measurement site was and were suggesting a global wastewater particles behaviour. By comparison to sampling data, our data analysis lead to the characterization of two particle groups: the ones occurring during rain events and the ones typical of wastewater under dry weather conditions. Even with already encouraging results on the several weeks of data recorded on several wastewater collectors, the validation of our data inversion method is still under progress.

In this article a possibility of application of the ultrasonic non-contact method for assessing the quality of yogurt was researched. A prediction assessment was made by an ultrasound based on four parameters – pH, conductivity, fat content, and viscosity. An ultrasonic device was developed to determine the parameters of yoghurt by modified ultrasound sensor available commercially. In order to obtain data for post-processing, a software application was designed for recognizing the ultrasonic signal through the image processing and analysis techniques.<br>The developed algorithms and procedures were applied to determine the distance between the object and the sensor, whereby basic physico-chemical parameters of yogurt could be predicted with the lowest relative error. The working distance was 35 cm for the considered system. The survey results show that the parameters fat content, pH, conductivity, and viscosity of yogurt could be predicted by the proposed system for contactless measurement with accuracy of 94-97%.<br><br>

The article is devoted to possibilities of regular focusing of Omniscan device on phased arrays. Questions are raised about evaluation of testing results when using linear and sector scan-ning with different focus parameters. The question of size near-field for phased arrays and asso-ciated choice of focus mode is discussed. The article is based on experiments conducted on samples with artificial reflectors at the same size, but different in type: a non-directional reflector (a side-drill hole) and a directional reflector (a flat-bottomed reflector), located at the same depth. The study was conducted for transducers with different frequencies. Families of curves of the signal amplitude dependence are obtained: on depth reflector, on focus depth setting, and on type reflector. The results emphasize need for precise focusing with-in the near-field of the transducer for small thicknesses or shallow depth of occurrence of discontinuities, and large variability in choice of focusing for depths in far-field. The study notes a significant difference in values of depth reflector at different focusses at a fixed position of transducer. In this article, in addition to considering possibility of focusing a flaw detector with phased arrays, the focus is on interpretation of results and reliability of testing in the analysis and comparison data. An integral part of the technological testing protocol for phased array is the depth of focus and the type of scanning. The obtained data do not depend on the frequency of transducer, which means that conclusions are applicable to general range of flaw detectors on phased arrays.
