Reliability and validity of Arabic version of revised general nutrition knowledge questionnaire on university students

Abstract Objective: The current study evaluated the reliability and validity of the Arabic version of the revised general nutrition knowledge questionnaire (GNKQ-R) for adults. Design: The eighty-eight-item English GNKQ-R was adapted into an eighty-six-item Arabic version. Four validation studies were conducted for internal (n 805) and external (n 106) reliability, construct validity between participants with (n 84) and without (n 88) nutrition background, convergent validity for associations between nutrition knowledge and demographic characteristics (n 750) and responsiveness to online nutrition information (n 55). Setting: United Arab Emirates University in United Arab Emirates and Hashemite University in Jordan. Participants: Undergraduate students aged 18 years and above, enrolled in any programme at the two universities, were recruited. Results: Overall, internal reliability (Cronbach’s α = 0·91) and external reliability (P = 0·350; intra-class correlation coefficient = 0·84) were high. Significantly higher GNKQ-R scores of students with (66·0 (10·6)) v. without (38·0 (10·7), P < 0·001; d = 2·6) nutrition background indicated high construct validity. Significantly higher GNKQ-R scores among females v. males, older and senior students v. younger and junior students and students in health discipline v. non-health discipline reflected good convergent validity. Significant differences in GNKQ-R scores with nutrition information (time 1 = 37·8 (10·5) and time 2 = 47·7 (9·1), P < 0·001; d = 1·0) indicated high responsiveness to nutrition intervention. Conclusions: The Arabic GNKQ-R showed high reliability and validity in the young adult Arab population. Besides the reliability of the overall questionnaire, each section demonstrated adequate reliability. Further studies are warranted to establish the generalisability and applicability of the Arabic GNKQ-R in older adults and in different middle-eastern Arab countries.

Abstract Background Nutritional knowledge assessment is an important component in nutrition research, and a prerequisite for the implementation of many policies and programs aimed at improving eating behavior. In order to generate objective results, validated tools for a given population must be employed. The aim of this study was to determine the validity and reliability of a nutrition knowledge questionnaire for Romanian adults. Methods Kleimann’s version of a General Nutrition Knowledge Questionnaire, was translated and adapted to Romanian language, culture, and cuisine. The final format was developed in several steps and used four components: internal and external reliability were assessed in a general population sample (n1 = 412), respectively in a subgroup (n2 = 46) from Component 1; Component 3 assessed construct validity (n3 = 96) using the “known-groups” method; Component 4 (convergent validity, n4 = 508) tested the association between socio-demographic characteristics and nutrition knowledge. Results The overall internal reliability was 0.878 and the external reliability was >0.880 in all sections, and overall. Specialists had higher scores than nonspecialists, with a very large effect size. In the general population, females scored higher than males, and middle-aged and older adults scored higher than young adults. Higher scores were associated with higher levels of education. The characteristics of individuals prone to giving wrong answers were: males (beta = 0.170), high school or less (beta = 0.167), and no training in nutrition (beta = 0.154). Conclusions The Romanian version of the General Nutrition Knowledge Questionnaire is a reliable and valid tool for measuring nutrition knowledge in adults.

Purpose: To adapt and validate a survey instrument to assess the nutrition environment of grab-and-go establishments at a university campus. Methods: A version of the Nutrition Environment Measures Survey for grab-and-go establishments (NEMS-GG) was adapted from existing NEMS instruments and tested for reliability and validity through a cross-sectional assessment of the grab-and-go establishments at the University of Toronto. Product availability, price, and presence of nutrition information were evaluated. Cohen’s kappa coefficient and intra-class correlation coefficients (ICC) were assessed for inter-rater reliability, and construct validity was assessed using the known-groups comparison method (via store scores). Results: Fifteen grab-and-go establishments were assessed. Inter-rater reliability was high with an almost perfect agreement for availability (mean κ = 0.995) and store scores (ICC = 0.999). The tool demonstrated good face and construct validity. About half of the venues carried fruit and vegetables (46.7% and 53.3%, respectively). Regular and healthier entrée items were generally the same price. Healthier grains were cheaper than regular options. Six establishments displayed nutrition information. Establishments operated by the university’s Food Services consistently scored the highest across all food premise types for nutrition signage, availability, and cost of healthier options. Conclusions: Health promotion strategies are needed to address availability and variety of healthier grab-and-go options in university settings.

AbstractObjectiveTo validate the general nutrition knowledge questionnaire developed by Parmenter and Wardle (1999) in a Turkish student sample.DesignThe original questionnaire of Parmenter and Wardle (1999) was modified and translated into Turkish. The modified questionnaire was administered to second year undergraduate students. Some students completed the questionnaire twice for the measurement of test–retest reliability. Statistical analysis was performed on the responses to measure the internal reliability, test–retest reliability and construct validity.SettingStudents completed the questionnaire under supervision. The questionnaire was completed at the end of lectures. Retest was carried out two weeks after first administration of the test.SubjectsA total of 195 undergraduate students studying either nutrition and dietetics (n 90) or engineering (n 105) participated in the study. Of these, 125 students completed the questionnaire on two occasions.ResultsOverall internal reliability (Cronbach's α = 0·89) and test–retest reliability (0·86) were high. Significant differences between the scores of the two groups of students indicated that the questionnaire had satisfactory construct validity.ConclusionsThe modified version of the general nutrition knowledge questionnaire can be used as a tool to examine the nutrition knowledge of adults in Turkey. In the next stage of the study, some adjustments need to be made to the items that led to low reliability values so that these items will be more applicable to the eating habits and patterns of Turkish people.

This study presents the development and testing of the Overeating Tension Scale. Overeating tension was defined operationally as the total discrepancy score resulting from differences between subjects’ ratings of actual and desired feelings before overeating. The 32-item Overeating Tension Scale, derived from Apter’ s Reversal Theory, measures reported overall tension and motivation-specific tension. The scale initially included 48 items, six items for each of eight motivational states. After two instrument development studies (N = 373, N = 208), items were refined and reduced to a total of 32, or four for each of eight motivational states. The final version of the instrument was tested in two additional studies (N = 330, N = 130) that provided evidence to support the internal consistency reliability of the Overeating Tension Scale. There was support for construct validity using contrasted groups (overweight and normal weight subjects), convergent validity, and factor analysis.

AbstractObjectiveThe present study aimed to develop and validate a nutrition knowledge questionnaire in a sample of French Canadians from the province of Quebec, taking into account dietary guidelines.DesignA thirty-eight-item questionnaire was developed by the research team and evaluated for content validity by an expert panel, and then administered to respondents. Face validity and construct validity were measured in a pre-test. Exploratory factor analysis and covariance structure analysis were performed to verify the structure of the questionnaire and identify problematic items. Internal consistency and test–retest reliability were evaluated through a validation study.SettingOnline survey.SubjectsSix nutrition and psychology experts, fifteen registered dietitians (RD) and 180 lay people participated.ResultsContent validity evaluation resulted in the removal of two items and reformulation of one item. Following face validity, one item was reformulated. Construct validity was found to be adequate, with higher scores for RDv. non-RD (21·5 (sd2·1)v. 15·7 (sd3·0) out of 24,P<0·001). Exploratory factor analysis revealed that the questionnaire contained only one factor. Covariance structure analysis led to removal of sixteen items. Internal consistency for the overall questionnaire was adequate (Cronbach’sα=0·73). Assessment of test–retest reliability resulted in significant associations for the total knowledge score (r=0·59,P<0·001).ConclusionsThis nutrition knowledge questionnaire was found to be a suitable instrument which can be used to measure levels of nutrition knowledge in a Canadian population. It could also serve as a model for the development of similar instruments in other populations.

Aims of the study were to evaluate the reliability and validity of the Italian version of the Majeed and Iowa questionnaires and to investigate the long-term surgical outcomes following sacroiliac joint arthrodesis. Twenty one patients who underwent a sacroiliac joint arthrodesis and 21 healthy subjects were evaluated. The experimental procedure consisted of gait analysis and a physical activity assessment (in both groups) and of administration of outcome questionnaires and pain assessment (in the patient group). The Majeed and Iowa questionnaires showed excellent reliability, excellent (for the Majeed questionnaire) and good (for the Iowa questionnaire) construct validity, and poor convergent validity (for both questionnaires) relative to walking speed. Most of the patients reported no pain and minimum pain-related disability and their physical activity profile was comparable to healthy controls. Patients showed an impaired walking performance (i.e., they walked slower and using shorter steps) compared with healthy controls. Long-term walking pattern abnormalities following sacroiliac joint arthrodesis may occur despite excellent clinical results. Given their excellent reliability and construct validity, the Majeed and Iowa questionnaires can be used in combination with the assessment of spatiotemporal gait parameters for the prognostic assessment and/or follow-up of surgical patients.

Nutrition knowledge refers to understanding concepts and processes related to nutrition and health, proven to be an essential determinant of healthy eating. However, partially due to the lack of nutrition knowledge and unhealthy eating patterns, more and more Chinese people face overweight, obesity, and a high risk of suffering from various chronic diseases. This study aimed to develop a general nutritional knowledge questionnaire (GNKQ) in a Chinese context to diagnose and improve nutrition knowledge education for Chinese people. The newly adapted questionnaire was based on the Turkey version of GNKQ, and absorbed dietary recommendations in a Chinese context. It was first validated by four nutrition experts, then tested by eleven volunteers (one public nutritionist, one preventive medicine graduate student, and nine psychology graduate students). Finally, the questionnaire was tested by 278 participants, including 175 adults, to determine internal consistency, content validity, and convergent validity. Moreover, the construct validity was evaluated by comparing the differences between 50 students in nutrition-related majors and 53 students in nutrition-unrelated majors. The final Chinese version of GNKQ kept 32 questions with 68 items after deleting some questions based on item difficulty and discrimination. The data showed that the overall internal consistency coefficient was 0.885, and the test-retest reliability was 0.769, p < 0.001. Students majoring in nutrition had larger scores than in nutrition-unrelated majors. The convergent validity for each demographic variable was consistent with previous studies, such as larger nutrition knowledge scores for females and those with a higher education. Therefore, the revised Chinese version of GNKQ showed good reliability and validity, indicating that it could be an effective tool to assess the nutrition knowledge of Chinese adults.

Abstract Objectives To assess validity and reliability of a nutrition knowledge questionnaire originally developed for adults when used with high-school aged adolescents. Methods The nutrition knowledge questionnaire utilized in this study was originally developed for adults and was shown to have content and construct validity as well as internal consistency and test-retest reliability. Two sections of the adult questionnaire, 50 questions total, were administered to adolescents at four high schools: three in California and one in Hawaii. Participants were convenience samples selected by teachers at each school based on known previous nutrition education (n = 174) or no known previous nutrition education (n = 136). Adolescents self-reported their current age and received a $10 gift card for completing the questionnaire. Questionnaire data were assessed for item difficulty, item discrimination with item-total correlation, and construct validity using an independent samples t-test. The overall questionnaire and individual sections were assessed for internal consistency reliability with Cronbach's alpha. Given the difference in nutrition education offered at each site, a post-hoc regression analysis was conducted to assess % correct by group when controlling for school. Results Assessment of item difficulty showed that one question exceeded the suggested 80% threshold, however this question was retained due to acceptable item discrimination. One question was found to negatively correlate with total score and was removed from the questionnaire resulting in 49 questions. The overall questionnaire was shown to have internal consistency reliability (Cronbach's α = 0.83) as were the individual sections (Cronbach's α &gt; 0.70). The questionnaire also demonstrated construct validity with the adolescents that had known previous nutrition education having a significantly higher mean % correct compared to the adolescents without known nutrition education (P &lt; 0.0001). The significant association between groups and % correct remained when controlling for school (P &lt; 0.0001). Conclusions Results suggests that the questionnaire was shown to reliably assess general nutrition knowledge in high school-aged adolescents with validity.
