Dairy products are one of the indispensable foods in people's life. However, reports about the quality and safety of dairy products often appear. In this paper, a dairy product quality and safety traceability system based on consortium blockchain is proposed by using block chain technology. In addition, the traceability link in the dairy supply chain is defined, and the basic framework and traceability bar code of the traceability system are designed. The system guarantees the integrity and security of the traceability information from the technical level, and provides the dairy traceability service for the government, enterprises and consumers.

Traceability is a useful approach to reduce information asymmetry and control food safety risks in agri-food supply chain. However at the present stage where development of traceability system in China is not mature, food processors have to take high investment of traceability and benefits into consideration in economic aspect. The paper builds a game-theoretic model to analyze the economic value and feasibility of traceability in agri-food supply chain. It is found that there may be different situations in which the game equilibrium outcomes between two processors are different. However, if the government intervenes, it is shown that government can take action to guide the game equilibrium to the result that both the processors will implement traceability voluntarily.

Establishment of the mature vegetable products safety traceability system to ensure the quality and safety of vegetable products is conducive to the relevant departments to supervise the vegetable products safety, improve production enterprises operating integrity, enhance consumer confidence and loyalty, promote the process of China's Three rural construction, and expand overseas markets. This article based on analysis of influencing factors of product quality and safety constraints of vegetables, and puts forward vegetable quality and safety traceability mode. Starting from the vegetables production processes, vegetable agriculture & supermarket interfacing traceability model, vegetables agriculture & wholesale interfacing and traceability model and vegetables spending traceability subsystem was analyzed from the critical control points of view.

Topicality. In Ukrainian society there is concern about the quality of dairy products produced by domestic producers. Dairy production is the most necessary in the diet of a human, especially at the child�s age. We cannot image the child diet without milk and dairy products. As the infant�s body is much more fragile and vulnerable to the quality and safety of the food, which he consumes, so the requirements to the quality and safety of dairy products need to be tightened, and the requirements must be increased. And it is precisely such the requirements that should apply to the development of economic entities that have the direct relation to the production, , maintenance and processes of milk processing. Aim and tasks. The purpose of the article is to analyze and estimate the condition of the commodity market in the link of the dairy product chain, the sanitary state of milk being milked, volumes of milk supply to the processing enterprises, production and distribution of the dairy products by sales channel, problems and possibilities of providing rational needs and the level of consumption of milk and dairy products by the population. Research results. Carried out complex analysis of the state of dairy industry and the raw material market in the link of the dairy logistics chain, the sanitary state of fresh milk, the volumes of milk supply to the extra grade processing enterprises, production and distribution of dairy products by sales channels. Conclusion. The condition of dairy market and enterprises shows, that adopting legislative and regulatory measures and norms synchronized with European ones will not produce the expected results, unless supported them by real investment projects, aimed at developing the market sectors, and, first of all, the raw milk sector, which produces milk. The strategy for the development of the milk market should be based on the development of large-scale milk commodity farms, equipped with all the necessary infrastructure: feed-storage shops, veterinary services, milking machines and cooling, and most importantly quality laboratories.

In recent years, people pay increasing attention to food safety. Chicken, as the second largest meat consumer goods in China, requires high level quality traceability. However, due to the small monomer and large quantity of live poultry, it is difficult to duplicate the whole chain tracing mode of pig industry. In this paper we use HACCP (Hazard Analysis and Critical Control Points) to analyze the key control points in the chicken supply chain, and design the traceability code for each chicken product. The traceability system applies the consortium blockchains technology to realize the secure and trusted up-chaining of traceability data, which ensures the quality and safety of chicken in the market.

The article discusses the organizational and economic relations between the participants in the supply chain of milk and dairy products. Generally, organizational and economic relations are a set of relations between the participants of the dairy products chain, which are formed in the process of production, distribution and sale to consumers, as a result of which the economic interests of all its participants are realized. The peculiarities of dairy products of the chain are systematized and the basic principles, conditions for their balanced development are determined, contributes to the coordination of the economic interests of all its participants. It has been proved that economic interest is an important component of organizational and economic relations in the supply chain of milk and dairy products, and its main elements are: prices for raw materials and fnished products, costs of production, processing of raw materials, transportation, terms of mutual settlements, material interest of personnel, norms of fulfllment of contractual obligations, risks and the like. Review of the negative factors of organizational and economic relations in the dairy product chain and their impact on the effectiveness of each of its participants. As a tool to increase the production of raw milk, it is proposed to optimize the raw material zones of dairy processing enterprises, develop strategic programs for the development of the industry and stimulate consumer demand, as well as create industry clusters. The calculations for the distribution of costs and income between participants in the supply chain of milk and milk products prove the need to ensure the equivalence of exchange. In order to improve the efciency of the researcher, it was proposed to increase the volume of milk production and processing, as well as to establish mutually benefcial relations between its participants, connected by a single production cycle. The directions of innovation and investment development of the participants in the dairy products chain, especially the link of dairy cattle breeding, are highlighted. It is highlighted that the innovative renewal of the activities of the chain participants is a process of cyclical activities focused on the production of competitive dairy products of a new generation, which will contribute to an increase in turnover in order to obtain the highest proft of the chain participants and satisfy the demand of consumers with different income levels. As China’s agricultural output has improved, the national and local monitoring system of agricultural product safety has become much better, and monitoring standards have become increasingly strict. Despite this, there are agricultural product safety incidents which have caused consumer panic. One way to address this is by properly establishing tracking systems so that agricultural product logistics in China can be tracked and monitored. We explored this research objective with agricultural traceability and security in mind. One option that could be considered is the blockchain technology. Blockchain could also be used to ascertain the provenance of agricultural products to increase the quality and safety of the Chinese agricultural supply chain. In this context, this research converged on big data and technology, platforms and other means for product quality and safety of agricultural products traceability. In order to verify the accuracy of these three convergence, regression analysis were used to construct five models for verification of three hypothesis. The results show that based on “Internet+”, using big data, big technology and big platform can significantly increase the accuracy of agricultural products traceability system hence improve consumer acceptance of the safety of agricultural products.

This article attempts to make an empirical analysis on the food quality and safety information sharing degree between retailers and partners of supply chain and its influencing factors. In the paper, the degree of EDI, Bar Code and POS technologies used by retailers represent the degree of food information sharing. The results showed that the general situation of food quality and safety information sharing among partners in supply chain is more optimistic; factors of the publicity frequency, demand scale and sharing willingness of food information influence significantly on the degree of information sharing between retailers and other partners. Different factors affect the ways of information transfer. Finally, in order to ensure retailers offer safety food to consumers, government should take proper measures to ensure food information transfer effectively in supply chain.
