The objective of this study was to know the existing buffalo milk trade and dairy products production status along with scope for buffalo milk product branding. Hence, a face-to-face interview with eighteen milk traders and processors were performed through simple random sampling method. Milk traders and processors were above 25 years old (94%) and above 5 years (89%) experienced in dairy business. The findings exposed that 11% of the participants were involved in milk collection and selling, 39% were directly involved in product manufacturing, and 50% were engaged in milk collection and processing. Among the manufactured dairy products, traditionally made fermented doi was the best - selling dairy product in the Bhola district. About 47% participants desired to incorporate fat-rich dairy products into their production processes. In general, milk traders sold the maximum amount of milk monthly to doi manufacturers (1453 L), followed by local customers (1175 L), sweetmeat manufacturers (1000 L), restaurants (257 L), and household consumers (250 L). Results showed that buffalo milk prices varied significantly (P<0.001) over the year. The peak buffalo milk price (122 BDT/L) was recorded between November and December, and the off-peak price (82 BDT/L) was between March to May. Data indicated that about 43-50 BDT profit derived through per kg doi and sweetmeat selling. Milk traders and processors mentioned that studied areas had greater shortage of milk preservation facilities. Overall, the findings of this study may give some context for developing sustainable buffalo milk and dairy products value chain in Bangladesh. Res. Agric., Livest. ABSTRACT: Bacillus cereus is an aerobic and facultatively anaerobic, spore-forming bacterium, and it is found naturally in soil and poses a risk factor for the contamination of food and foodstuffs including cereals, vegetables, spices, ready-to-eat (RTE) foods, meats, milk, and dairy products. This study determined the prevalence of B. cereus in raw poultry meat, raw cow’s milk, cheese, spices, and RTE foods in Hatay province. The study also analysed the psychrotrophic properties, toxigenic characteristics, and pulsed-field gel electrophoresis (PFGE) profiles of the isolates. The levels of contamination with B. cereus determined for cheese, raw milk, RTE foods, spices, and raw poultry meat were 16.6%, 34.2%, 42.8%, 49%, and 55.5%, respectively. B. cereus was isolated from 84 (42%) of the 200 samples analysed and the 84 isolates were verified by PCR analysis targeting the haemolysin gene specific for B. cereus. Of the total isolates, 64 (76.1%) were psychrotrophic. The toxin gene profiling of B. cereus isolates was determined by amplifying the four genes nhe, hbl, cytK, and ces. The nhe and cytK genes were most frequently detected in the isolates, while the hbl and ces genes were not found. In addition, a high genetic relationship between the isolates was detected at a 92% similarity level by PFGE analysis. In conclusion, the occurrence of both psychrotrophic and toxigenic B. cereus strains in this study indicated a potential risk for food spoilage and food poisoning.

There are special nutritional requirements in pregnancy, in which the intake of nutrients exerts its action both on the woman and the conception product. Therefore, the balance and diversity are the key of a proper nutrition during the pregnancy. Combining food categories is the best way to ensure nutritional balance during pregnancy period. A market research was performed on a representative sample at national level of 120 persons, in order to identify the nutritional status of pregnant women in this group. The market research highlighted the diet structure of the studied group, the categories of foods consumed weekly by the group members, as well as their frequency of consumption. The results of the study indicated a varied diet of pregnant women, but the frequency of consumption should be reviewed for certain food categories, thus: increased for: milk and dairy products, fish, oily fruits; lower, in fatty foods and salt.

Regarding milk producing, it is well known that processing and packaging are the two equally important operational phases. Packaging is the last, but definetly not the less important phase. Various automation strategies are constantly being utilized in every phase of processing, packaging and production/use of new packaging materials. The most suitable packaging will provide adequate properties to pack liquid milk and dairy products which have an important role to prolonged product shelf life. Temperature and moisture are important parameters which affect the shelf life of packaged milk and dairy products, due to their effect on the bacterial growth especially in fermented milk products. The aim of this review article is to introduce advantages and disadvantages and principles of packaging methods and materials correlated to shelflife of dairy products.

The paper is focused on dairy sector with the emphasis on the development of consumption of milk and dairy products, including cheese, curd and other dairy products, in the last 15 years in the Slovak Republic and in the Czech Republic. The aim of the paper is to identify the level of milk and dairy products consumption, as well as to identify the main determinants affecting the consumption. Paper is also aimed at milk production with emphasis on the main problems that may affect future development on the dairy market. The primary data are obtained by consumer survey and survey aimed focused on producers of milk and dairy products. Based on the results we have identified that the milk and dairy products consumption by Slovak consumers is lower compared to the Czech Republic and the quality and price are considered as the main determinants influencing the consumption. We also found out that milk and dairy products producers are adapting their production to demand, but it is important to point out the barriers related in particular to the introduction of new technologies into production, rising input prices or growing consumer disinterest in the consumption of milk and dairy products.

In an array of identifying safe antimicrobial compounds, bacteriocin producing Lactobacillus strain have been investigated in this study from the daily consuming food resources of humans. Till now, the best studied bacteriocins are nisin A produced by Lactobacillus lactis and pedocin PA-1 synthesized by Pediococcus acidilactici which have been accredited as a preservative in the food industries by the World Health Organization (WHO). For this study, four different milk and dairy products viz., curd, cheese, yoghurt and butter were collected from the local markets of Karaikal region, Puducherry, India and were used for the isolation of Lactobacillus species using MRS agar. Totally, five morphologically distinct strains were collected and were initially named as MPD 1 to MPD 5. During the screening process of bacteriocin production, the strain MPD 5 showed maximum antimicrobial activity against Vibrio cholerae MTCC 3906 with 900AU/ml. This strain was molecular identified as Lactiplantibacillus plantarum MDP 5 based on 16S rRNA partial sequence method. This 16S rRNA partial sequence was submitted to the NCBI nucleotide GenBank and provided with the accession number, MW301154.1. Further, this strain revealed an enhanced production of bacteriocin using the standardized physicochemical factors such as pH 7, 35°C, 2% fructose and 1% peptone. Furthermore, these optimal conditions revealed more than 2-fold increase in the bacteriocin production. All the above information suggesting the possibilities of bacteriocin for the bioindustrial production using the L. plantarum MDP 5 of this study and its future prospects for the investigation of biocidal activities against many highly infectious pathogens of human and veterinary.

Detailed information on the resistance patterns of Staphylococcus aureus (S. aureus) in milk and cheese is strongly required to facilitate risk assessment analysis in case of food poisoning context and to improve therapeutic approaches used in dairy farms. The present study aimed to perform phenotypic and genotypic antimicrobial characterizations of methicillin, vancomycin, and erythromycin-resistant S. aureus isolated from milk and dairy products through screening mecA, vanA, and ermC using molecular PCR amplification technology. Moreover, the association between each genotypic and its related antibiotic resistance phenotypic features within the isolated S. aureus strains were analyzed. Moreover, the current study aimed to study MRSA's ability to form biofilms. Out of 226 milk and dairy product samples collected from different retailers in Giza Governorate, 69.5% of the samples were positive for the presence of S. aureus. The isolation rate of S. aureus strains from cattle milk, sheep milk, white cheese, flamenco, and mesh samples were 79.7%, 76.5%, 56.0%, 40.0%, and 94.7%, respectively. Multidrug-resistant S. aureus (MDR) was detected in 51% of all isolated S. aureus strains. All tested S. aureus strains were sensitive to trimethoprim-sulfamethoxazole, linezolid, ciprofloxacin, and gentamycin. However, their resistance rates against penicillin, oxacillin, vancomycin, erythromycin, tetracycline, clindamycin and chloramphenicol were 62.4%, 65.0%, 44.6%, 45.9%, 21.0%, 14.0%, and 2.5%, respectively. Of the isolated S. aureus strains, 72.6%, 40.1%, and 48.4% were carriers for mecA, vanA, and ermC genes and the amplified products were at 310, 1030, and 295 bp, respectively. Methicillin-resistant S. aureus isolates were detected in 47.1% of all isolated S. aureus strains. The results indicated that 35.0% of the tested S. aureus strains were genotypic vanA gene carriers and phenotypic resistant to vancomycin representing vancomycin-resistant S. aureus strains. Moreover, 42.7% of all isolated S. aureus strains were carriers for ermC gene and were phenotypic resistant to erythromycin representing erythromycin-resistant S. aureus. The presence of mecA, vanA, and ermC genes in S. aureus was statistically associated with their related phenotypic resistance patterns against both penicillin and oxacillin, vancomycin, and erythromycin, respectively. Moreover, along with an increase in the frequency of mecA, vanA, and ermC genes, their phenotypic antibiotic resistance patterns sharply increased with an odd ratio >1. Of MRSA isolates, 6.8% indicated weak biofilm-formation ability, while 93.2% exhibit no biofilm-forming ability.

الأنماط الاستهلاكية للألبان و منتجاتها في ولاية الخرطوم This research aimed at identifying the different consumption trends of the Sudanese individual in regard to fresh milk and dairy products. It also aimed at making use of studying the behavioral consumption in the marketing field and to set a future prospectus to accomplish development and quality in dairy marketing in Sudan. To achieve such aims a number of hypothesis were tested through analysis of data collected from families in Khartoum state different statistical methods were implemented. Several results were concluded, of which are: 1 .Fresh milk has high acceptance among Sudanese consumers. 2. The consumer has low trust in the quality of fresh milk sold by roaming sellers. 3. The Sudanese consumer has low nutritional and health awareness about the value of dairy products (other than white cheese & yogurt). The study was concluded with several recommendations, of which are: 1. Adapting modem marketing concepts by giving more attention to consumer needs and demands and benefiting from Sudanese consumers' general food culture in the marketing procedure. 2 . Performing marketing research on consumption patterns and habits of the Sudanese individual to benefit out of them in dairy marketing
