Purpose – The purpose of this paper is to carry out structural analysis of potential supply chain risks and performance measures in fresh food retail by applying interpretive structural modeling (ISM). Design/methodology/approach – Inputs were taken from industry experts in identifying and understanding interdependencies among food retail supply chain risks on different levels (sourcing and logistics outside the retail stores; storage and customer interface at the stores). Interdependencies among risks and their impact on performance measures are structured into a hierarchy in order to derive subsystems of interdependent elements to derive useful insights for theory and practice. Findings – Using the ISM approach the risks and performance measures were clustered according to their driving power and dependence power. Change in/inadequate government regulations’ are at the bottom level of the hierarchy implying highest driving power and require higher attention and focussed mitigation strategies. Risks like lack of traceability, transport delays/breakdowns and temperature abuse, cross-contamination in transport and storage have medium driver and dependence powers. Research limitations/implications – The approach is focussed on food retail supply chains in the Indian context and thereby limits the ability to generalize the findings. The academics and experts were selected on convenience and availability. Practical implications – It gives managers a better understanding of the risks and performance measures that have most influence on others (driving performance measures) and those measures which are most influenced by others (dependent performance measures) in fresh food retail and also a tool to prioritize them. This kind of information is strategic for managers who can use it to identify which performance measures they should concentrate on managing the trade-offs between measures. The findings and the applicability for practical use have been validated by both experts and practicing managers in food retail supply chains. Originality/value – The work is perhaps the first to link supply chain risks with performance and explains the propagation of risks in food retail supply chains. It contributes to theory by addressing a few research gaps and provides relevant managerial insights for practitioners.

PurposeThis paper aims at providing an overview and synthesis of the existing body of knowledge about greenwashing. Special attention is paid to the articles directly linked with agriculture, food industry and food retail.Design/methodology/approachA bibliometric analysis was performed over 351 documents extracted from the WoS database, using SciMAT and VOSviewer software programs.FindingsThree periods in the academic literature about greenwashing can be distinguished: ground-setting (2003–2010), trail-blazing (2011–2015) and remarkable growth (2016–2020). Along this evolution, a body of knowledge which stemmed from the literature about CSR has achieved a major development, deploying different research lines such as stakeholders' management, marketing and communication and audit. A specific analysis of the academic literature about greenwashing in agriculture, food industry and food retail has been carried out, showing a need for further development.Social implicationsThe development of scientific knowledge about greenwashing puts this social claim on the spotlight of business management studies, helping to fight greenwashing and, this way, to reduce the environmental impact of corporate activities. Studying greenwashing will help to reduce its frequency and, therefore, heal the planet.Originality/valueSome previous studies have provided systematic reviews of the literature using different approaches, but they did not untangle the intellectual structure and the evolution of the body of research about greenwashing. This article originally provides a thorough analysis of these aspects, as well as a closer look at the impact of greenwashing practices in the academic literature regarding agriculture, food industry and food retail.

PurposeTraditionally, urban informality has been discussed in terms of housing and markets, usually along the periphery of urban areas where there is disinvestment and decline. This article looks at urban informality through the lens of informal fresh food retail throughout the city of Mumbai, India. In India, fresh produce has traditionally been sold in informal street markets comprising vendors that operate through carts and make-shift stalls set-up on the streets. This article aims to assess the conditions surrounding fresh produce retail that fuel its informality.Design/methodology/approachThis study uses a mixed methods approach by spatially analyzing the location of informal fresh food vendors in ArcGIS, developing a qualitative analysis of the level of proliferation of this network through interviews conducted with vendors and conducting surveys of residents' access patterns and purchasing habits for fresh produce in the city.FindingsResults from this study indicate that the role of density, transportation systems, domestic/household structure, cultural traditions and a bureaucratic system rife with its own challenges have resulted in a distinct infrastructure of food retail networks that has harvested forms of inequalities and injustices that inherently fuel this informal economy.Originality/valueThere is no published study to date that has been done to spatially assess the informal food network in any dense city in India, let alone Mumbai to date. Urban informality, by its nature, is hard to capture, and yet this study takes a holistic view of the food systems in Mumbai, by addressing the location, supply (through vendor interviews) and demand factors (through resident surveys).

Purpose Despite the large interest in urban food markets, there are, however still relatively few good studies that have empirically documented the functioning of retail markets in developing countries, especially in Africa. The purpose of this paper is to look in particular at the case of Addis Ababa, a city of more than four million people and the capital of Ethiopia, one of the most populous countries in Sub-Saharan Africa. To better understand urban food retail, the authors rely on a large primary survey. Design/methodology/approach To better understand urban food retail, the authors rely on a large primary survey. Based on a stratified sampling scheme representative for the city as a whole, 1,226 urban food retail outlets were interviewed in March and April 2012. Findings The authors find increasing differentiation in food retail markets in recent years. Despite the prohibition of foreign direct investment in food retail, a domestic modern private retail sector is quickly emerging. However, its share is still very small and, in contrast to roll-outs of modern retail in other countries, it has not yet entered the cereal sector, which remains in the hands of local flour mills, cereal shops, and cooperative retail outlets. The importance of cooperative retail is growing even more rapidly. It is especially important for those products where supply chains are controlled by the government. On the high-end, domestic private modern retail outlets deliver high-quality products at significantly higher prices, ceteris paribus. At the other side, the authors see cooperative retail that delivers food at significantly lower – and subsidized – prices. However, the latter shops are characterized by typical price control problems, reflected in regular lack of supplies and queuing. Research limitations/implications The study is limited to the city of Addis Ababa and it seems useful if similar studies could be conducted in other cities in Africa. Originality/value Despite the large interest in urban food markets, there are still relatively few good studies that have empirically documented the functioning of retail markets in developing countries, especially in Africa. The paper therefore contributes to fill this lacuna by studying urban food retail markets using new and unique data for Africa.

PurposeThe purpose of this paper is to explore and typify the characteristics and diverse features of urban speciality stores selling rural provenance food, taking the case of three cities in Portugal.Design/methodology/approachThe study was based on hierarchical cluster analysis, performed upon data collected from a survey to 113 shops, located in Aveiro (n = 15), Lisbon (n = 56) and Porto (n = 42).FindingsThe study identified three clusters of shops according to the type of rural provenance products sold, services provided and clientele characteristics: the wine focused, the rural provenance focused and the generalist. The study confirms that in Portugal, small food retail outlets, with different rural provenance patterns and degrees of specialization have considerably grown in large cities over the last decade.Research limitations/implicationsThe study contributes to typifying urban speciality food stores selling rural provenance products and to addressing critical research gaps on this topic. The study highlights the dynamism of small food retail outlets and their significance, mediating and responding to changing patterns of food consumption in urban spaces.Originality/valueThis study contributes to a better understanding and characterization of food speciality shops in urban settings and their links with rural territories of provenance, an under-researched topic on the food retail literature.

Purpose The purpose of this paper is to investigate food retailers food waste reduction practices in Germany. The focus is on selling and redistributing agricultural produce with visual impairments and other surplus food items. In addition, drivers and barriers regarding the implementation of both waste reduction practices are explored. Design/methodology/approach In total, 12 in-depth interviews with managerial actors in the food retail sector and a food bank spokesperson were recorded, transcribed and analyzed through a qualitative content analysis. Findings In contrast to organic retailers, conventional retailers were reluctant to include agricultural produce with visual impairments in their product assortments, due to fears of negative consumer reactions. Another obstacle was EU marketing standards for specific produce. All retailers interviewed engaged in redistribution of surplus food. Logistics and the regulatory framework were the main barriers to food redistribution. Originality/value The present study adds to the existing body of literature on food waste reduction practices as it explores selling produce with visual impairments and elaborates on the legal background of food redistribution in German retail. The results are the foundation for providing recommendations to policy makers and charitable food organizations.

Purpose The purpose of this paper is to look at perceptions of young Japanese consumers towards the convenience store, or konbini, with a view to understanding what attracts them to this retail format and exploring well-being in a new way that is more relevant the retail experience. Design/methodology/approach The study looks at the emergence of the konbini as part of the Japanese food retail environment and reports on an online survey (n=453) of young Japanese consumer’s (>18 years old) attitudes towards this retail format. Findings The preliminary analysis of the data finds the konbini is a popular choice for young consumers for specific types of everyday goods. The main appeal lies in the ease of access, location of the stores and the ambience of the space that appeal to young consumer’s sense of well-being. Research limitations/implications This is a purposeful sample of young Japanese consumers surveyed across several academic institutions. Practical implications Konbini must continue to innovate to attract young consumer while acknowledging the implications of their stocking policy on consumer well-being. Originality/value This offers a unique insight into the ways in which young Japanese consumers avail themselves of the food retail provision and provides a broader perspective on well-being in a retail environment that resonates with consumer practice.

Purpose – The purpose of this paper is to describe the state of the retail sector in Sub-Saharan Africa, to point out the lack of information on some critical issues and to raise some questions about relevant topics for researchers and practitioners in the retail area for the African market. Design/methodology/approach – This paper is comprised of a comprehensive review of the literature and integrates the fragmented body of knowledge on the area of retail internationalisation and food marketing. The gaps in the literature identified here may help to understand the sector better and develop academic research agendas on both the growth of the modern food retail sector and the agribusiness sector in Africa. Findings – Four major topics were identified in the urban agri-food retail business in the African continent: large global retailers in Africa’s food sector; the internationalisation of African food retailers; the procurement practices of international retailers; and, the food-buying behaviour of Africa’s middle class. Originality/value – This research paper relied heavily on grey literature such as newspapers and unpublished masters’ dissertations and PhD theses. With this material as a context, this paper provides guidance as to how scholars can advance the study of retail internationalisation in Africa, not only through further empirical and conceptual research but also by developing usable prescriptions for agribusiness value-chain actors on the continent.

Purpose The purpose of this paper is to gain a general holistic view of implications of the growing and highly relevant customer segment of elder consumers for the food demand chain (food retail, production, logistics, and business informatics) in Germany. Design/methodology/approach This paper takes a holistic demand-chain approach that is based on interviews with 36 German food consumers aged 65-87 and with 50 experts from manufacturing, trade, logistics, and business informatics as well as a survey with 1,288 consumers above 64 years of age and 682 consumers below 65 years of age. Findings Physical, statistical, psychological, social, and behavioural characteristics of elder German consumers may influence location, services, and layout of food retail, food variety, sizes, packaging, and labelling, food production, transportation, and storage volumes and capacities, as well as facility location, route, and inventory planning. The social function of grocery shopping especially for single consumers, intergenerational products and services, home-delivery services especially to rural areas, as well as decentralisation and regionalisation are expected to gain importance. Logistics and industry 4.0 can facilitate the efficient and effective supply of food. Originality/value This research is the first to investigate the needs and wants of elder German food consumers and their implications for the German food demand chain in a more holistic demand-chain approach.
