Watermelon (Citrullus lanatus) juice is known for its refreshing flavor, but its high perishability limits its availability throughout the year. Watermelon juice concentrate has extended shelf-life and lower transportation and storage costs, but the conventional thermal evaporation process for concentrating juice degrades the nutritional components and sensory quality of the product. Thus, in this work, a large-scale, non-thermal forward osmosis (FO) process was used to concentrate fresh watermelon juice up to 65°Brix. The FO concentrate was compared to thermal concentrate and fresh juices, and to commercially available refrigerated watermelon juices, in terms of lycopene and citrulline content, total soluble phenolics, antioxidant activity, and sensory properties. The FO concentrate had statistically similar (p < 0.05) levels of all the nutrients of interest except antioxidant activity, when compared to the thermal concentrate. The reconstituted FO concentrate maintained the same antioxidant activity as the raw source juice, which was 45% higher than that of the reconstituted thermal concentrate. Sensory results showed that reconstituted FO concentrate resulted in highly liked juice, and it outperformed the reconstituted thermal concentrate in the sensory hedonic rating. This work demonstrates the possibility to produce a high-quality watermelon juice concentrate by forward osmosis.

Pomegranate juice is popular due to its unique health benefits, sensory characteristics and also a good source of bioactive compounds. Comparative study on processing effect of Not from Concentrate (NFC) and Reconstituted from concentrate (RFC) pomegranate juice on the nutritional and sensory characteristics of ‘Ganesh’ variant was conducted. Results showed that not much differences observed in parameters like pH, acidity, essential elements, protein, total sugars and polyphenol content between NFC and RFC. As per the study NFC had a better antioxidant activity with intracellular ROS inhibition of 11% higher with significant ( p < 0.05) than RFC in HepG2 cell lines. Total anthocyanin content was significantly different ( p < 0.05) in NFC (428.05 mg/l) compared to 326.74 mg/l in RFC expressed as cyanidin-3-glucoside. Iron uptake was 40 units (µg/mg protein) higher in NFC than RFC ( p < 0.05) in HepG2 cells. Sensory flavor profile showed NFC having significant differences with respect to characteristic pomegranate freshness, fruitiness, sweetness and astringency mouthfeel. RFC had higher sweetish and cooked flavor with additional vegetable like notes of beet and carrot. Based on the data better antioxidant activity, iron bioavailability, anthocyanin content and sensory attributes were captured in pomegranate NFC juices over RFC juices.

The phenol content of vegetable oil and its antioxidant activity are of primary interest for human health. Oilseed species are considered important sources of these compounds with medicinal effects on a large scale. Total phenol content (TPC) and antioxidant activity (AA) of safflower oil were previously studied. Nevertheless, there is no report on genotypic differences and antiaging activity of safflower oil. The aim of this study was to determine the TPC, diphenyl-picrylhydrazyl (DPPH), and antiaging activity on three respective accessions from Syria, France, and Algeria of seed oil of safflower grown under semi-arid conditions during 3 consecutive years (2015, 2016, and 2017). The results showed that phenol content as well as antioxidant and antiaging activity varied according to both genotype and years. In 2017, the mean value of TPC in oil seed was two times higher than in 2015 and 2016. Moreover, accessions presented different TPC values depending on the year. The highest antioxidant activity was observed among accessions in 2017 compared to 2015 and 2016. As expected, a positive correlation was found between TPC and antioxidant activity. The inhibition in the collagenase assay was between 47% and 72.1% compared to the positive control (83.1%), while inhibition in the elastase assay of TPC ranged from 32.2% to 70.3%, with the positive control being 75.8%. These results highlight the interest of safflower oil as a source of phenols with valuable antioxidant and antiaging activity, and uses for cosmetics.

Background: Pomegranate gained a widespread popularity as a functional food due to the high content of bioactive components of the whole fruit, as well as its juice and extracts. There is a large amount of research that assigns them very important functions for the human organism. Methods: The anthocyanins (ACNs) of pomegranate juice (PJ) from the Ermioni variety are quantitatively identified and their stability under a simulated digestion process (SDP) is investigated. ACNs, as well as phenolic compounds, were isolated through solid phase extraction and determined using high-performance liquid chromatography in every stage of the SDP. Total phenolics, total monomeric ACNs, polymeric color and antioxidant activity were also determined in pomegranate juice and during the digestion process. Results: The predominant anthocyanin was Cy-3-glucoside followed by the corresponding 3,5-diglucoside, which accounted for 40.8% and 27.4% of the total ACN content, respectively. About 65% of the total monomeric ACN content remained intact by the end of the simulated digestion process. Conclusions: The PJ of the Ermioni variety seems to retain a large amount of the bioactive compounds after the SDP. The antioxidant activity and total phenolic content (TPC) remain almost stable during the SDP, suggesting that the products formed during ACN degradation maintain the antioxidant activity of the parent molecule.

Fitoterápicos são medicamentos amplamente utilizados, constituindo segmento da indústria farmacêutica em larga expansão na atualidade, exigindo garantia na oferta de produtos eficazes e seguros. Nesse sentido, esse estudo objetiva aplicar e/ou desenvolver metodologia analítica para a padronização de extratos de Anacardium occidentale L. (família Anacardiaceae), conhecida como cajueiro, empregando ensaios químicos e biológicos de atividade giardicida. Folhas de Anacardium occidentale foram coletadas em habitat natural, submetidas à secagem e moagem, seguida da obtenção dos extratos hidroalcoólicos com emprego de planejamento fatorial dos fatores: operação de extração (maceração, percolação e aparelho Soxhlet) e hidromódulo (1:8, 1:10 e 1:12), submetidos a análise sensorial, análise química qualitativa e quantitativa, avaliação da atividade antioxidante e giardicida. Os resultados evidenciaram diferenças de cor entre os extratos obtidos por diferentes procedimentos, indicando presença de fenóis simples, flavononois, taninos catéquicos, alcaloides, catequinas, flavononas, cumarinas, esteroides e saponinas; com variação quantitativa entre as amostras analisadas, sendo evidenciada também diferenças na atividade antioxidante e atividade citotóxica contra Giardia lamblia, mostrando que as variáveis empregadas nesse estudo influenciam na obtenção dos extratos hidroalcoólicos das folhas de Anacardium occidentale e, consequentemente, nos rendimentos e atividades antioxidante e giardicida. Palavras-chave: Anacardium occidentale L. Anacardium occidentale L. leaves were collected in natural habitat, subjected to drying and grinding, followed by obtaining of extracts alcoholbased products with factorial planning of job factors: operation of extraction (maceration, percolation and Soxhlet apparatus) and hidromódulo (1: 8, 1:10 and 1:12); subjected to sensory and chemical analysis, determination of phenolic compounds and evaluation of antioxidant activity and giardicida effect. The results show differences in colour between the extracts obtained by different procedures; indicating the presence of simple phenols, flavononois, catéquicos, alkaloids, tannins, catechins, flavononas, coumarins and saponins, steroids; with quantitative variation among the examined extracts; show also differences in antioxidant activity and presence of cytotoxic activity against Giardia lamblia in one of extracts alcoholbased products, showing that the variables used in this study influence in getting the alcohol-based products extracts of leaves of Anacardium occidentale and consequently on their incomes and their giardicida effect and antioxidant activities.Keywords: Anacardium occidentale L.
