Measuring Factors Associated with Fruit and Vegetable Consumption in Rural 4th Grade Students

Objective: Rural youth are more likely to be obese and have poor diets compared to their nonrural peers; therefore, our objective was to understand factors related to healthy eating habits in this population. Methods: We used survey data from 4th graders (N = 995) in a Midwestern state’s rural areas to explore nutrition knowledge, fruit or vegetable (F/V) attitudes, beliefs, preferences, and previous day’s consumption. We produced descriptive statistics, compared attitudes, beliefs, preferences, and consumption for fruits versus vegetables using multilevel linear regression, and used multilevel logistic regression to assess predictors of F/V consumption controlling for sociodemographic factors. Results: Fruit and vegetable consumption was low, with over 10% reporting no fruit consumption and over 20% reporting no vegetable consumption. Students rated fruits higher than vegetables on each variable of interest. Knowledge (OR = 1.2) and liking fruits (OR = 2.2) were associated with fruit consumption. Knowledge (OR = 1.2), liking vegetables (OR = 2.4), and vegetable preferences (OR = 1.4) were associated with vegetable consumption. Conclusions: Schools should implement interventions that increase access and exposure to healthy foods and target knowledge, attitudes around liking F/V, and vegetable preferences for rural youth, such as nutrition education, school gardens, and farm-to-school programs.

Background and Objectives: Eating habits acquired or changed during childhood are likely to track into adulthood. Due to the fact that nutritional behaviours are not so strongly formed among children, it is easier to change and develop them in children than in adults. The aim of this study was to assess the impact of selected sociodemographic factors affecting fruit and vegetable consumption (i.e., age, parents’ body mass index, parents’ level education, duration of breastfeeding, child’s time spent in front of computer/television) among children in school canteens. Materials and Methods: The sample consisted of 106 participants (52 girls, 54 boys) aged 6–12. The frequency of consuming fruits and vegetables at a school canteen was assessed using bar code cards for two weeks. Body composition estimates were obtained using a foot-to-foot bioelectrical impedance analysis, body height was measured using a stadiometer Seca 213. The questionnaire contained questions about selected factors which can have an influence on fruit and vegetable consumption. In the study group, 13.2% of participants were overweight and 17.9% were obese. Results: Our results showed a statistically significant relationship between age and fruit and vegetable consumption, and it increased with age in both sexes. Conclusions: Bearing in mind the various conditions discussed when shaping the eating habits of pre-school- and early-school-aged children, the importance of proper nutritional education should be stressed both among children and parents.

AbstractObjectiveTo examine the fruit and vegetable consumption in Thailand, the percentage of Thais meeting recommended intakes and the association with sociodemographic factors.DesignCross-sectional survey with a stratified, three-stage, cluster probability sampling design.SettingCommunity-dwelling men and women participating in the Thailand National Health Examination Survey III.SubjectsA total of 39 290 individuals aged ≥15 years were interviewed using a questionnaire to obtain information on sociodemographic characteristics and fruit and vegetable consumption. Daily fruit and vegetable consumption was estimated through the use of a short semi-qualitative FFQ.ResultsOverall, participants had average frequencies of fruit and vegetable consumption equal to 4·56 and 5·97 d/week, respectively. Average daily number of servings of fruit, vegetables and fruit plus vegetables were 1·46, 1·78 and 3·24, respectively. Intake amounts of fruit, vegetables and fruit plus vegetables varied by marital status and region, and were lower among males (except for vegetable intake), those of older age, those with low educational attainment, those with low monthly household income and those living in a rural area. Only 1/3, 1/4 and 1/4 of the population consumed the recommended ≥2, ≥3 and ≥5 servings/d for fruit, vegetables and fruit plus vegetables. Sociodemographic factors related to meeting the recommended intake of ≥5 servings/d for fruit plus vegetables included being female (OR = 1·13) and household income ≥50 000 Baht/month (OR = 1·66).ConclusionsThe amounts of fruit and vegetables consumed by Thai participants were far below the level of current recommendations. Public education and campaigns on adequate consumption of fruits and vegetables should be targeted more towards low socio-economic groups.

This study investigated fruit and vegetable consumption and psychosocial variables among rural and semi-urban Black adults in South Africa. The sample consisted of 200 adults, 100 from a semi-urban and 100 from a rural area chosen by two-stage cluster sampling. Only seven (7%) of the villagers and none of the semi-urban dwellers reported the recommended 5 or more fruit or vegetable servings per day. The majority (63% rural and 58% semi-urban dwellers) indicated that they had 2–4 servings a day. Fruit and vegetable intake was not associated with perceived barriers, perceived health benefits, or diet knowledge, but there was a significant correlation between good perceived eating habits and fruit and vegetable consumption. Villagers perceived more barriers to fruit and vegetable consumption regarding expense, confusing recommendations, and time and effort than semi-urban dwellers. Insensitivity to high exposure was seen in responses to the question about positively regarded nutrients: for vitamins, 54% and 37% and for protein 63% and 53% of semi-urban and rural dwellers, respectively, believed that one cannot consume too much. The majority recognized the essential values of salt and fat. More semi-urban participants did not recognize that salt and fat are dietary essentials and that too much salt or fat is better than none at all.

Abstract Objective: The main objective of this study was to evaluate the impact of the Market to MyPlate (M2MP) program on fruit and vegetable consumption and cooking behaviours. Secondary objectives were to examine factors that affected participant retention and program completion, and analyse program feedback provided by participants. Design: This study conducted a mixed methods evaluation embedded within a cluster randomised controlled trial of the M2MP intervention. Adult participants completed a pre- and post-program survey reporting on their fruit and vegetable consumption and cooking behaviours. A subsample participated in structured interviews, providing feedback about M2MP and the impact of the program. Setting: Seven weekly classes took place in community centres and extension offices in central Illinois. Participants: 120 adults and their families participated. Class cohorts were randomly assigned to one of three treatment groups: (1) nutrition education and cooking classes with produce allocations (PAE, n 39); (2) nutrition education and cooking classes only (EO, n 36) or (3) control group (n 45). Results: Compared to control, PAE participants reported larger increases from pre- to post-intervention in fruit (P = 0·001) and vegetable consumption (P = 0·002), with no differences in cooking frequency. Interview analyses identified key themes in behaviour changes due to M2MP, including reported increases in dietary variety, cooking self-efficacy and children’s participation in cooking. Conclusions: PAE participants who received an intervention that directly increased their access to fresh produce (via produce allocations) increased their reported fruit and vegetable consumption. Though participants’ cooking frequency did not change, interviewees reported increased variety, cooking confidence and family participation in cooking.

Introduction: Regular fruit and vegetable consumption is one of the preventative indicators for the development of obesity, disorders, and diseases. This study aimed to identify the determinants of fruit and vegetable consumption based on social cognitive theory (SCT) among first-grade high school female students. Results: The mean (SD) score daily fruit and vegetable intakes were 3.43 () and 2.30 () units per day, respectively. The results of multiple linear regression analysis showed that environmental factors (β= 0.165, p= 0.009) and behavioral skills (β= 0.152, p= 0.025) have a significant effect on fruit consumption score. Behavioral skills (β= 0.151, p= 0.022) and social support (β= 0.143, p= 0.049) have significant effect on vegetables consumption score, the constructs of SCT explained 71% of the variances in fruit consumption and 9.8% of the variances in vegetable consumption. Mother's job (p= 0.032) and family income (p= 0.024) have a significant effect on fruit and vegetables consumption. Conclusion: Fruit and vegetable intakes were less than the WHO recommended level. Therefore, attention to environmental factors, behavioral skills, and social support is suggested.
