Cold-pressed hempseed oil (HSO) is known to have many health benefits due to many phytochemicals and high polyunsaturated fatty acids content. In this study, HSO oleogels were prepared with 3, 5, and 7% natural waxes including sunflower wax (SW), rice bran wax (RBW), beeswax, and candelilla wax to evaluate their potential as solid fat replacements in margarines and spreads. Firmness, crystal structures, and melting properties of these oleogels were evaluated. In general, wax-based HSO oleogels except for RBW-HSO oleogels had lower firmness and weaker crystal network than the corresponding soybean oil (SBO) oleogels. In contrast, RBW-HSO oleogels had similar firmness, comparable or stronger crystal network, and higher melting and crystallization enthalpies compared to those of SBO oleogels. After removing polar compounds from HSO, waxes except for RBW provided oleogels with greater firmness, higher melting and crystallization enthalpies, and stronger crystal network. Therefore, it was concluded that polar compounds negatively affected the physical properties of wax-HSO oleogels but not those of RBW-HSO oleogels. Margarine samples were prepared with SW- and RBW-HSO oleogels, and their firmness and melting properties were examined. The firmness of these margarines indicated that wax-HSO oleogels may achieve the firmness of commercial spreads with less than 3% wax while the firmness of stick margarines cannot be achieved even with 7% wax. Although the properties of wax-HSO oleogels should be further improved, they showed potential as solid fat replacements in margarines and spreads.

Abstract In the present work, supercritical fluid extraction (SFE) of hemp (Cannabis sativa) seed oil at various ranges of SFE parameters is performed. These parameters and respective ranges are temperature (40–80) °C, pressure (200–350) bar, solvent (CO2) flow rate (5–15) g/min, particle size (0.43–1.02) mm and amount of co-solvent (ethanol) (0–10) % of solvent flow rate. Central composite design (CCD) suggests 32 experimental runs to perform through SFE. The obtained oil is analysed through gas chromatography to identify its fatty acids concentrations. The ratio of ω-6 linoleic and ω-3 α-linolenic fatty acids (ω-6/ω-3) is optimized through CCD to obtain the desired amount of 3:1 as this ratio is highly preferred for various health benefits. Ratio of ω-6/ω-3 is obtained in the range from 2.11 to 3.06:1 for all experimental runs. The effect of SFE parameters on this ratio is investigated. Further, cross-validation is peformed on the experimental data obtained for the concentrations of both fatty acids by jackknife and bootstrap resampling to authenticate the obtained data. Small value of standard deviation (~1), less standard error of the mean (SEM) (<0.8) and less variance coefficient (<0.11) confirms the validity of the obtained data. All the estimators’ values such as standard deviation, variance coefficients and SEM are observed in 95 % of confidence intervals.

Cold-pressed seed oil from twelve commercially produced cactus pear cultivars was assessed for oil yield, fatty acid composition, physicochemical properties, quality and stability. Large differences in oil content, fatty acid composition and physicochemical properties (IV, PV, RI, tocopherols, ORAC, % FFA, OSI and induction time) were observed. Oil content ranged between 2.51% and 5.96% (Meyers and American Giant). The important fatty acids detected were C16:0, C18:0, C18:1c9 and C18:2c9,12, with C18:2c9,12, the dominating fatty acid, ranging from 58.56-65.73%, followed by C18:1c9, ranging between 13.18-16.07%, C16:0, which ranged between 10.97 - 15.07% and C18:0, which ranged between 2.62-3.18%. Other fatty acids such as C14:0, C16:1c9, C17:0, C17:1c10, C20:0, C18:3c9,12,15 and C20:3c8,11,14 were detected in small amounts. The quality parameters of the oils were strongly influenced by oil content, fatty acid composition and physicochemical properties. Oil content, PV, % FFA, RI, IV, tocopherols, ORAC and ρ-anisidine value were negatively correlated with OSI. C18:0; C18:1c9; C18:2c9,12; MUFA; PUFA; n-6 and PUFA/SFA were also negatively correlated with OSI. Among all the cultivars, American Giant was identified as the paramount cultivar with good quality traits (oil content and oxidative stability).
