Usaha kecil menengah berperan penting dalam mendukung ekonomi Nasional, terutama pada bidang pangan olahan hasil laut. Olahan hasil laut dalam bentuk abon ikan merupakan usaha home industry UD. XYZ. Kondisi usaha abon ikan akan terhambat dengan adanya kejadian-kejadian yang tidak diharapkan atau risiko negatif yang dapat menimbulkan kerugian. Hal ini berkaitan dengan proses sanitasi yang belum maksimal dalam hal sanitasi pekerja, sanitasi alat dan wadah, dan sanitasi bangunan. Penelitian ini bertujuan untuk mengiplementasikan SSOP pada proses produksi Abon Ikan dan menghasilkan produk Abon Ikan yang bermutu dan aman dikonsumsi. Untuk meningkatkan kualitas dan mutu produk, juga sebagai pedoman tatacara memproduksi bahan pangan dengan baik dan benar pada seluruh mata rantai produksi, dimulai dari pengadaan bahan baku hingga akhir dan menekankan higien pada setiap tahapan menggunakan metode Good Manufacturing Pratice (GMP). Hasil penelitian menunjukkan bahwa penerapan SSOP pada Home Industry XYZ telah dilaksanakan secara baik dengan mengusulkan Sanitation Standard Operating Prosedure (SSOP) yang sesuai dengan standar operasi yang berlaku untuk mengurangi atau menghilangkan kontaminasi terhadap produk akhir abon ikan. Penerapan Good Manufacturing Practice, terdapat 12 sub kriteria yang tidak sesuai dengan peraturan. Dari tingkat penyimpangan yang ditemukan dapat disimpulkan bahwa pengolahan abon ikan berada pada level III dengan total skor 172 yaitu cukup memuaskan. Untuk itu perusahan perlu melengkapi penerapan GMP sesuai peraturan Menteri Perindustrian Republik Indonesia No.75/M-IND/PER/7/2010.

IKM Tahu Sari Murni Mojosongo adalah industri tahu yang sedang berkembang di Surakarta. Proses produksi di IKM Tahu ini belum menerapkan standar Good Manufacturing Practices (GMP) yang dikeluarkan oleh BPOM (Badan Pengawas Obat dan Makanan) dan belum memperhatikan keselamatan kerja karyawan seperti dalam pedoman Work Improvement In Small Enterprise (WISE). Hal ini dibuktikan dengan hasil evaluasi kondisi aktual dengan pedoman GMP dan WISE masih banyak ditemukan penyimpangan. Penelitian ini bertujuan untuk melakukan perbaikan proses produksi di IKM yang dievaluasi menggunakan daftar periksa GMP-WISE. Daftar periksa GMP-WISE yang diperoleh memiliki 6 kriteria yaitu penyimpanan dan penanganan material/peralatan, desain tempat kerja, fasilitas kesejahteraan, organisasi pekerjaan, pengendalian proses produksi, dan program higiene dan sanitasi. Penilaian daftar periksa tersebut diperkuat dengan menggunakan metode Analytical Hierarchy Process (AHP) untuk mendapatkan keputusan terbaik dari sejumlah kriteria pada daftar periksa GMP-WISE. Hasil dari penilaian menunjukkan bahwa kriteria program higiene dan sanitasi di IKM merupakan prioritas perbaikan proses produksi. Usulan yang diberikan untuk perbaikan proses produksi di IKM adalah perancangan peraturan rutin karyawan produksi dan perancangan Standard Operating Procedure (SOP) kebersihan area kerja.

Microbial contamination in chicken meat is caused by unsanitary practices during slaughtering in poultry slaughtering house. Poultry slaughtering house need to apply Good Manufacturing Practice (GMP) and Sanitation Standard Operating Procedure (SSOP) system to produce the standard microbial requirements of meat. This study was aimed to evaluate the implementation of GMP and SSOP and categorize 30 slaughtering houses located in Bogor. Observation was carried out in 4 modern slaughtering houses (RPH-U) and 26 traditional slaughtering houses (TPH-U). Parameter evaluation was determined based on the Indonesian national standard SNI 01-6160-1999 and the veterinary control certificates which consisted of eight aspects of GMP and six aspects of SSOP. The categorization was clustered in five levels. The results showed that modern slaughtering houses were categorized into 1st and 2nd level, whilst traditional slaughtering houses were categorized into 2nd and 3rd  level. The highest incompliance of GMP in modern slaughtering house was the waste treatment aspect (31%) and in traditional slaughtering house was the cold storage presence aspect (95%).  The highest incompliance of SSOP in modern slaughtering house was the sanitation facilities and avoiding cross-contamination aspect (21%) and in traditional slaughtering house was the cleanliness of food contact surface aspect (97%). There are some recommendations for improvement the fulfillment of GMP and SSOP aspects based on the critical parameters.   Keywords: chicken meat, Good Manufacturing Practice, modern slaughteringhouse, Sanitation Standard Operating Procedure, standard slaughteringhouses

Anchovy is very abundant in Indonesian waters and become economically potential export commodity. The value of anchovy production in Indonesia increased from Rp 1.222 billion in 2006 to Rp 3.095 billion in 2014. The anchovy processing industries in East Java are mainly found in Madura and Tuban. This study was aimed to identify the implementation levels of the GMP (Good Manufacturing Practice) and SSOP (Sanitation Standard Operating Procedures) of three semi-dried anchovy fish processing units<br />(UPI) in Tuban. The application of GMP and SSOP in these three fish processing units was assessed using observation and interview. The research shows that the application of the GMP and SSOP at UPI A and<br />UPI B did not fulfill the regulation of the Minister of Industry of the Republic of Indonesia in 2010. Many components such as the building condition and layout, solid waste management, environmental<br />management and personal management are still not fulfilled the standard. Meanwhile, UPI C in general have fulfilled the Regulation of the Minister of Industry of the Republic of Indonesia in 2010.<br /><br />

The aim of this article is to analyze internal control in service company. The analyze used the components of internal control according to COSO: control environment, risk assessment, control activities, information and communication, monitoring. Analysis of internal control used the data obtained through observation, questionnaires, interview, and documentary. Based on this analysis results can be concluded, that the dual positions refer with company SOP (Standard Operating Procedure). Separation of task does not work because that the dual positions. Therefore, the component of control activities applied at company is not in accordance with the component of control activities according to COSO. Nonconformity components still results in very effective internal control because the purpose of the internal control still remains to be achieved even though there are components that are not in accordance with the internal control components according to COSO.

The application of somatic stem cells has been shown to support the recovery of the myocardium in end-stage heart failure. A novel method for the intraoperative isolation and labeling of bone marrow-derived stem cells was established. After induction of general anesthesia, up to 400 mL of bone marrow were harvested from the posterior iliac crest and processed in the operating room under good manufacturing practice conditions by means of the automated cell-selection device Clini-MACS (Miltenyi Biotec). We subsequently injected autologous CD133<sup>+</sup> and CD34<sup>+</sup> stem cells in a predefined pattern around the laser channels in patients undergoing coronary artery bypass surgery and transmyocardial laser procedures. Intraoperative isolation and labeling is an effective cell-separation tool for the future, considering that novel cell markers can be promising new candidates for cell therapy.
